PEANUT SOUP WITH RICE AND SCALLIONS

Number Of Ingredients 14

2 tablespoons roasted peanut or vegetable oil
2 large onions, diced
2 large bell peppers, 1 red and 1 green, diced into 1/2-inch chunks
2 teaspoons chopped ginger
2 sweet potatoes, peeled and cut into 1-inch chunks
3 large garlic cloves, finely chopped
Salt and freshly ground black pepper
1/4 teaspoon cayenne pepper or red pepper flakes, or more to taste
2 cups crushed tomatoes in sauce
5 cups water, or chicken stock, or vegetable stock
3/4 cup peanut butter
1 box or 1/2 carton tofu, preferably soft
2 cups cooked rice
1 cup sliced scallions, including the firm greens

Steps:

  • 1. Warm the oil in a wide soup pot set over high heat. Add the onions, bell peppers, ginger, and sweet potatoes, and saute, stirring frequently until the onions have begun to color, 8 to 10 minutes, adding the garlic after the first 5 minutes. Add 1 teaspoon salt, several good twists of the pepper mill, and the cayenne to taste, and cook a few minutes longer.
  • 2. Add the tomatoes and scrape the pot to lift up any brown bits from the bottom. Add the water or stock, bring to a boil, then lower the heat and simmer, covered, for 25 minutes.
  • 3. Add the peanut butter and cook, stirring, until it has dissolved
  • 4. Remove 2 cups of the soup and purée with the tofu until perfectly smooth. Return this mixture to the soup. (If you wish, purée the entire soup.) Taste for salt and for the heat level, adding more cayenne if desired.
  • 5. Serve with 1/3 cup rice mounded in each bowl and plenty of scallions scattered over the top.

SPICY PEANUT AND SCALLION PILAF

Number Of Ingredients 8

1 small garlic clove, minced
1/8 teaspoon dried hot red pepper flakes, or to taste
2 teaspoons olive oil
1/2 cup converted rice
1/4 teaspoon salt
1/4 cup salted roasted peanuts, chopped
1/4 cup thinly sliced scallion
1 teaspoon fresh lime juice

Steps:

  • In a small heavy saucepan cook the garlic and the red pepper flakes in the oil over moderately low heat for 1 minute, add the rice, and cook the mixture over moderate heat, stirring, for 1 minute. Stir in 1 cup water and the salt, bring the liquid to a boil, and cook the rice, covered, over low heat for 18 to 20 minutes, or until the liquid is absorbed. Fluff the rice with a fork, let it stand, covered, off the heat for 5 minutes, and stir in the peanuts, the scallion, and the lime juice.

2 cups water
1 cup reduced-sodium chicken broth
1/2 cup dry roasted salted peanut, finely chopped (2 1/2 ounces)
2/3 cup thinly sliced scallion top

Steps:

  • Wash rice in several changes of cold water in a bowl until water is almost clear, then drain rice well in a sieve.
  • Bring rice, water, and broth to a boil in a 3- to 4-quart heavy saucepan, then reduce heat to low and cook, uncovered, until rice is tender and water is absorbed, 12 to 15 minutes.
  • Remove from heat and let stand, covered, 5 minutes.
  • Fluff with a fork, then stir in peanuts and scallion greens.

1 tablespoon peanut oil
1 medium onion, halved, sliced
3 garlic cloves, minced
3 tablespoons curry powder
4 cups (or more) chicken stock or canned broth
1/3 cup rice
3 medium carrots, peeled, sliced
1/2 cup creamy peanut butter (do not use old-fashioned style or freshly ground)
1 1/2 teaspoons sugar
Finely chopped green onions
Chopped fresh cilantro

Steps:

  • Heat oil in heavy large saucepan over medium-high heat. Add onion, garlic and curry powder and sauté until onion is translucent, about 6 minutes. Add 4 cups stock and bring to boil. Stir in rice and carrots. Reduce heat and simmer until rice is very tender, stirring occasionally, about 20 minutes.
  • Puree half of soup in blender or processor with peanut butter. Return puree to saucepan. (Can be prepared 1 day ahead. Cover and refrigerate.) Stir soup until heated through, thinning with more stock if desired; do not boil. Mix in sugar. Ladle soup into bowls. Sprinkle with green onions and cilantro.

1 Spanish onion, chopped
6 cloves garlic, minced
2 cups smooth peanut butter
4 1/2 cups chicken broth, homemade or low-sodium canned
One 28-ounce can whole, peeled tomatoes (with liquid), roughly chopped
2 heaping tablespoons roughly chopped unsalted, dry roasted peanuts
1/3 cup freshly squeezed lime juice
2 teaspoons hot sauce, or to taste
1 teaspoon kosher salt
Freshly ground black pepper
1 scallion, thinly sliced on the diagonal

Steps:

  • Heat the oil in a large soup pot over medium heat. Add the onion and garlic, cook covered, stirring occasionally, until soft, about 6 minutes. Add the peanut butter, broth, and tomatoes. Bring to a boil, lower the heat, and simmer, covered, for 10 minutes. Meanwhile, in a small skillet over medium-high heat, toast the peanuts, stirring occasionally, for about 1 1/2 minutes. Set aside. When ready to serve, stir in the lime juice, hot sauce, and salt. Season with pepper to taste. Divide among warm soup bowls, garnish with some of the toasted peanuts and scallion. Serve immediately.

Instead of white cubes of tofu bobbing in this African-style soup, where they look decidedly odd, I purée the tofu with a portion of the finished soup until everything is smooth. The tofu is there, but it doesn't intrude. And this is a method you can use with virtually any puréed soup. If you wish, you can purée the entire soup or leave it textured, with bits of sweet potatoes and peppers.
