PEANUT BUTTER AND JELLY COOKIE BARS

Peanut Butter and Jelly Cookie Bars image

Provided by Trisha Yearwood

Categories     dessert

Time 1h30m

Yield about 35 cookie bars

Number Of Ingredients 10

Nonstick cooking spray
4 cups all-purpose flour
2 teaspoons baking powder
1 1/4 teaspoons kosher salt
3 sticks (1 1/2 cups) unsalted butter, softened
2 cups sugar
3 large eggs
2 teaspoons vanilla extract
1 cup creamy peanut butter
1 cup smooth strawberry jam

Steps:

  • Preheat the oven to 350 degrees F. Line a large (18-by-13 inch) rimmed baking sheet with parchment and spray with cooking spray.
  • Whisk the flour, baking powder and salt together in a bowl.
  • Combine the butter and sugar in a stand mixer fitted with the paddle attachment and beat on medium-high speed until light and fluffy, about 5 minutes.
  • Add the eggs, one at a time, beating well after each addition. Beat in the vanilla. Add the flour mixture and beat on low speed until completely incorporated.
  • Dab a little cookie dough under each corner of the parchment to keep it from moving. Then dollop the dough in big spoonfuls all over the parchment. Loosely cover with plastic wrap and press the dough into an even layer, filling the baking sheet. Remove the plastic wrap.
  • With a tablespoon, spoon the peanut butter and the strawberry jam all over the cookie dough. Use the back of a spoon to swirl the peanut butter and jelly together, gently pushing them into the surface of the dough.
  • Bake until the cookie is lightly puffed and golden brown at the edges, 20 to 25 minutes.
  • Let cool in the pan before cutting into squares.

A sweet and salty traybake with dollops of crunchy peanut butter and a drizzle of dark chocolate - leave to cool, slice into bars and serve with salted caramel ice cream

Provided by Cassie Best

Categories     Dessert

Time 1h10m

Yield makes 15

Number Of Ingredients 12

175g butter , softened, plus extra for greasing
200g soft light brown sugar
100g golden caster sugar
1 tbsp vanilla extract
2 large eggs , beaten
250g plain flour
1 tsp bicarbonate of soda
2 tbsp full-fat milk
150g dark chocolate , chopped into chunks
100g chunky peanut butter
50g small salted pretzels
½ tsp sea salt flakes

Steps:

  • Heat oven to 180C/160C fan/gas 4. Grease and line a 20cm square baking tin with baking parchment. Tip the butter, sugars and vanilla extract into a bowl and beat with an electric hand whisk until smooth and creamy. Add the eggs bit by bit, beating well between each addition. Stir in the flour, bicarb and 1/4 tsp salt until the mixture forms a dough, then add the milk and 100g chocolate chunks.
  • Spoon half the mixture into the tin, add the peanut butter in dollops to cover the surface, then top with the remaining dough. Use your fingers to press everything down, but don't worry about it looking too neat. Arrange the pretzels on top and bake for 50 mins until the dough is set and crisp on the surface. Leave to cool in the tin to room temperature before cutting.
  • Melt the remaining chocolate in a bowl over a small pan of gently simmering water, or in short bursts in the microwave. Remove the bars from the tin and drizzle with the chocolate, then sprinkle with the sea salt. Leave to set, then cut into bars. Will keep in an airtight container for up to 3 days.

CHOCOLATE PEANUT BUTTER COOKIE BARS

Chocolate Peanut Butter Cookie Bars image

Fast and fairly easy cookie bar that is tasty and will disappear from you cookie plate in a flash. Great for gifts or to share with those you work with. Adapted from a Local supermarket advertising mailer

Provided by Bruce Gurnick

Categories     Bar Cookie

Time 55m

Yield 20-24 cookies, 20-24 serving(s)

Number Of Ingredients 8

1 (18 1/4 ounce) package chocolate cake mix (experimenting with other cake flavors is OK)
1/4 cup vegetable oil
1 large egg
1 cup dry roasted peanuts
1 (14 ounce) can sweetened condensed milk
1/2 cup creamy peanut butter (or crunchy)
12 ounces semi-sweet chocolate chips
1/2 ounce cooking spray

Steps:

  • Heat oven to 350°F
  • Coat a 9x13" baking pan lightly with non-stick cooking spray.
  • Beat cake mix, oil and egg in large mixing bowl, on medium speed until somewhat crumbly. Add peanuts and stir. Measure out and set aside 1 1/2 cups of the cake crumb peanut mixture to be used later. Pour remaining mixture into prepared pan and press out to evenly cover the bottom of the pan.
  • Beat sweetened condensed milk and peanut butter in a medium bowl until smooth (hint: use the same bowl you used for cake crumbs). Spread this over the prepared cake crust. This will be a bit challenging. Be careful but don't worry if you struggle with the cake layer a bit.
  • After spreading the mixture sprinkle about 4 oz of semi sweet chocolate chips evenly over the peanut butter mixture.
  • Pour reserved cake crumb mixture over the top and spread evenly, pressing down gently.
  • Bake 25 - 30 minutes until set. Remove from oven. Turn oven off. Top with Remaining about 6 oz more of chocolate chips. Return to oven for 1 minute and then remove from oven. Use a spatula to spread the chocolate evenly over the top of the bars. Cool and store in covered container. Enjoy.
  • Note: You can be creative with this recipe. The cake flavor may be changed. Other flavor chips may be substituted for chocolate. Other nuts may be substituted or combined for/with peanuts. Other nut butters may be substituted for peanut butter. This one basic recipe can produce many bar variations.
