2 slices wheat bread
1 tablespoon peanut butter
1 banana, sliced
2 tablespoons salted butter, softened
1 teaspoon powdered sugar

Steps:

  • Lay out the bread slices and spread them both with peanut butter. Lay the banana slices on one piece of bread. Press the 2 slices together.
  • Butter one side of the sandwich and put it on a hot panini maker butter-side down. Butter the other side, close the lid and cook until it's toasted and warmed through. (If you do not have a panini maker, you can grill the sandwich in a skillet, laying another heavy skillet on top of the sandwich to press it together. Turn to grill the other side in the same way.)
  • Sprinkle with powdered sugar, cut in half and serve!

1/2 cup chunky style peanut butter
2 tablespoons honey, a couple of drizzles
1 cup fancy granola with nuts and raisins
2 large bananas
4 ice cream sticks or chop sticks

Steps:

  • Heat the peanut butter in the microwave on high for 20 seconds to loosen it, then stir honey into it. Place the granola into a food processor and lightly process to crush up the granola, nuts, and raisins. Peel and cut each banana in half across the middle. Insert a popsicle or chop stick into the cut end of each half-banana. Spread 1 side of each banana stick with 1/4 of the peanut sauce then coat liberally with spoonfuls of granola, gently pressing it into the peanut butter. Eat the bananas right off the sticks, but serve on a plate to catch the crumbs.

1/4 cup creamy peanut butter
2 tablespoons honey
1/4 teaspoon ground cinnamon
2 tablespoons miniature semisweet chocolate chips
4 slices whole wheat bread
1 medium banana, thinly sliced

Steps:

  • Mix peanut butter, honey and cinnamon; stir in chocolate chips. Spread over bread. Layer 2 bread slices with banana slices; top with remaining bread. If desired, cut into shapes using cookie cutters.

Ingredients:
2 cups roasted unsalted peanuts
1 1/4 tsp. salt
1/2 cup peanut oil
2 Tbs. plus 4 tsp. honey
8 slices white sandwich bread
3 Tbs. unsalted butter, melted
2 bananas, peeled, halved crosswise and quartered lengthwise
Honey for serving (optional)

Steps:

  • Put the peanuts, salt, peanut oil and the 2 Tbs. honey in a mini food processor. Process until the desired consistency is reached, scraping down the sides of the bowl as needed. You will need 1/2 cup peanut butter for making the panini; reserve the remaining peanut butter for another use. (It will keep, covered and refrigerated, for up to 2 weeks.) Preheat a panini press to 400°F according to the manufacturer's instructions. Brush one side of each bread slice with the melted butter. Turn 4 of the slices over and spread each with 2 Tbs. peanut butter. Top each with 4 banana slices and drizzle with 1 tsp. honey. Top each with one of the remaining bread slices, buttered side up. Place the sandwiches on the preheated panini press and cook until the bread is golden brown and toasted, about 2 minutes. Transfer the sandwiches to a cutting board and cut each in quarters. Repeat with the remaining sandwiches. Serve with honey for dipping. Serves 4.
