I made these in the hopes of appeasing my picky 2-year old, but I'm the one who eats them! They are so good, and are a great go-to when I am craving something sweet.

Number Of Ingredients 8

2 cups crispy rice cereal
1 1/2 cups quick-cooking oats
1/2 cup honey
1/2 cup peanut butter
1 teaspoon vanilla
1/3 cup chopped pitted dates
1/4 cup dried cranberries
1/3 cup mini chocolate chip

Steps:

  • Lightly grease a 12x8 inch baking dish. If you don't have this size, 11x7 or 13x9 will work.
  • Put half of the oats in a food processor and process until it forms a powder. This is optional, but I like the texture it creates.
  • Add processed oats, remaining oats, and cereal to a large bowl.
  • Put dates and craisins in a food processor and process until finely chopped. Add to dry ingredients.
  • In a small saucepan, heat honey until it starts to bubble. Remove from heat and whisk in the peanut butter and vanilla until well combined.
  • Pour liquid over the dry mixture and stir to combine.
  • Stir in chocolate chips. Be aware the chips will melt into the mix. You can freeze them ahead of time if you want them to stay whole.
  • Dump mixture into the greased baking dish. Lay a sheet of waxed or parchment paper over top, then press down the mixture until smooth and even. Throw out paper.
  • Allow to cool for about 15 minutes, then slice into bars while still in the dish. Chill dish for about an hour to firm up, then remove bars and place in an airtight container.

1 12-ounce jar creamy peanut butter
24 slices of Pepperidge Farm Very Thin white bread
1 13-ounce jar Nutella

Steps:

  • Preheat a panini press or George Foreman grill. Spread about 2 teaspoons peanut butter on each of 12 slices of bread. Spread about 1 tablespoon Nutella on each of the other 12. Put the peanut butter and Nutella slices together and grill until marked and crispy. Use a silicone spatula to remove.

1 ¾ cups Water
1 ½ cups Corn Syrup
2 cups sugar
420g of Rice Krispies
340g Butter
900g Peanut Butter
900g Nutella
860g Milk Chocolate
900g Bittersweet Chocolate
200g Butter
2 Tbsp Corn Syrup

Steps:

  • 1. Melt Butter 2. Combine water, corn syrup and sugar and cook to soft ball... Whisk melted butter into softball sugar. 3. Pour over Rice Krispies and fold together well. 4. Pour mixture into full sheet pan lined with parchment and sprayed with PAM. 5. Spread out evenly and let cool. 6. Melt butter, milk chocolate and nutella, pour this mixture over cooled Krispies. Bang pan on table to remove air bubbles. Let cool and start to set up. 7. Melt bittersweet chocolate, peanut butter and corn syrup. Pour over bars. Let cool overnight, cut into desired shapes.
