9 graham crackers, crushed
¾ cup salted peanuts, finely chopped
¼ cup white sugar
¼ cup butter, melted
1 quart vanilla ice cream, softened
½ cup crunchy peanut butter
¼ cup chopped salted peanuts

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a small bowl, mix together crushed graham crackers, 3/4 cup finely chopped peanuts, and sugar. Stir in melted butter or margarine. Press mixture into a 9 inch pie plate.
  • Bake crust in preheated oven for 8 minutes. Chill.
  • In a medium mixing bowl, mix ice cream and peanut butter together on medium-low speed until combined. Pour mixture into chilled crust. Sprinkle with 1/4 cup chopped peanuts. Freeze for at least 6 hours. Remove from freezer 10 minutes before serving.

1-1/2 cups chocolate wafer crumbs, divided
1/4 cup sugar
1/2 cup butter, melted
1 quart vanilla ice cream, softened
1/2 cup chunky peanut butter
1 cup whipped topping
Peanuts, optional

Steps:

  • Set aside 1 tablespoon of wafer crumbs for garnish. In a bowl, combine the sugar and remaining crumbs. Stir in butter. Press onto the bottom and up the sides of greased 9-in. pie plate. Refrigerate for 1 hour or until set., In a bowl, combine ice cream and peanut butter. Fold in whipped topping. Pour into pie shell. Top with reserved crumbs and peanuts if desired. Cover and freeze for at least 2 hours. Remove from the freezer 15 minutes before cutting.

If you don't care for chocolate, you can substitute graham cracker pie crusts. Time preparing includes freezing time.

2 chocolate cookie pie crust (I use Keebler brand)
1/2 gallon vanilla ice cream, softened
1 (18 ounce) jar creamy peanut butter (or 2 Cups)
1 (8 ounce) container Cool Whip
8 reeces peanut butter cups, chopped

Steps:

  • Working quickly, blend the 1/2 gallon softened vanilla ice cream with the peanut butter, mix well.
  • Stir in the Cool Whip until well blended.
  • Quickly divide between the two pie crusts, sprinkle with chopped peanut butter cups, and freeze for 3 to 4 hours until frozen solid.
  • Take out about 10 minutes before serving for easier slicing. Enjoy!

1 1/2 cups finely crushed thin chocolate wafer cookies (24 cookies)
1/4 cup butter, melted
2 pints (4 cups) peanut butter ice cream
1 pint (2 cups) chocolate or vanilla ice cream
1/2 cup salted cocktail peanuts
1 cup bittersweet or semisweet chocolate chips (6 oz)
1/4 cup creamy peanut butter
Dash salt
1/4 cup whipping cream
1 tablespoon light corn syrup
1 cup chocolate-covered peanuts, coarsely chopped

Steps:

  • Heat oven to 350°F. In medium bowl, stir all crust ingredients until well mixed. Press mixture firmly and evenly against bottom and side of 9-inch glass pie plate. Bake 10 minutes. Cool on cooling rack 15 minutes. Freeze 10 minutes. Meanwhile, place both ice creams in refrigerator to soften, about 20 to 30 minutes.
  • In medium bowl, stir together chocolate chips, peanut butter and salt. In 1-quart saucepan, heat whipping cream and corn syrup over low heat until hot but not boiling. Pour over peanut butter mixture; cover bowl with plastic wrap. Let stand 1 minute; stir until smooth.
  • Spread 1/3 cup of the chocolate-peanut butter sauce in bottom of chilled crust. Sprinkle with cocktail peanuts. Spoon 3 cups of the peanut butter ice cream over top; spread evenly. Quickly and carefully spread 1/2 cup chocolate-peanut butter sauce over ice cream (it will start to freeze). With small ice cream scoop or tablespoon, alternate scoops of chocolate ice cream and remaining 1 cup peanut butter ice cream over top, covering pie and achieving bubble look.
  • Sprinkle chocolate-covered peanuts over top. Drizzle with remaining chocolate peanut butter sauce. Freeze 5 hours or until firm. Place pie in refrigerator 30 minutes before cutting to soften slightly.

1/3 cup confectioners' sugar
1/3 cup heavy cream
One 9-inch prepared graham cracker pie crust
1 1/2 pints chocolate or chocolate chunk ice cream, softened
1 cup mini marshmallows
Chocolate syrup, for drizzling

Steps:

  • Combine the 1/3 cup peanut butter, confectioners' sugar and heavy cream in a medium bowl and beat with an electric mixer until light and creamy, about 2 minutes. Spoon the mixture into the bottom of the pie crust and smooth evenly. Freeze until slightly firm, about 20 minutes.
  • Spoon the softened ice cream on top of the peanut butter cream and spread to fill the pie crust. Freeze until very firm, at least 2 hours.
  • Mound the marshmallows in the center of the pie and torch them with a kitchen torch; you can also broil them in the oven, but watch them carefully if you do. Steps:

  • Let the ice cream sit at room temperature to soften, about 20 minutes.
  • Meanwhile, put 1/2 cup of the peanut butter in a medium microwave-safe bowl and heat for 30 second increments, stirring after each, until warm and very loose, about 2 minutes. Add the cereal and stir and toss until combined. Transfer to a 9-inch pie plate and press into an even layer along the bottom and up the sides, using the flat bottom of a measuring cup to help. (The mixture will still be a bit crumbly.)

1 18-ounce jar hot fudge sauce

  • Finely grind cookies in processor. Add butter; blend until moist crumbs form. Press crumb mixture over bottom and up sides of 9-inch-diameter springform pan with 2 3/4-inch high sides. 1/2 cup dry-roasted unsalted peanuts
1/4 cup butter, melted

1 (8 ounce) jar fudge sauce
1/4 cup strong brewed coffee

I recently bought some french vanilla ice cream to use with a Dutch Apple Pie. Since we don't like plain vanilla ice cream, I needed a way to use the leftovers. Everyone loves peanut butter and chocolate so this frozen silky treat was born.

1 qt softened french vanilla ice cream
1 c chunky style peanut butter
1 pre-made chocolate or vanilla cookie crust
1/2 c salted peanuts coarsely chopped
1 c jar of hot fudge ice cream topping melted
canned or fresh whipped cream
10 small peanut butter cups
2 Tbsp caramel ice cream topping

Steps:

  • 1. In a large bowl, soften the ice cream.
  • 2. With electric mixer on low, whip in the peanut butter until well blended.
  • 3. Spoon 1/2 of ice cream mixture into pie crust.
  • 4. Top ice cream with 3/4 cup of the melted, cooled hot fudge. Top fudge with 1/4 cup of salted chopped peanuts.
  • 5. Pour remaining ice cream into pie shell. Put remaining fudge in a plastic bag and cut off one corner. Drizzle top of pie with fudge. Drizzle caramel ice cream topping over the pie with a spoon.
  • 6. Sprinkle top of pie with the remaining 1/4 cup peanuts. Cover and freeze for 2 or more hours until firm.
  • 7. Decorate with whipped cream around the edges. Place peanut butter cups around the whipped cream (optional.)
  • 8. When ready to serve, take pie from freezer and slice with a warm knife that's been run under hot water. Return unused portion covered to the freezer.

1/2 cup light corn syrup
4 cups corn flakes cereal (I use "Clusters" brand ONLY)
1 quart vanilla ice cream, slightly softened (prefer Breyer's Natural Vanilla)
chocolate syrup, optional for garnish
peanuts, optional for garnish

Steps:

  • Stir together peanut butter and syrup in a medium to large sized bowl.
  • Add Clusters brand cereal and stir until evenly coated.
  • Press half of this mixture into the bottom of a 9" pie plate.
  • Scoop and press ice cream into bottom "crust".
  • Top with remaining "crust" mixture.
  • Return to freezer.
  • Remove from freezer 5 minutes before serving.
  • Optional: Serve drizzled with chocolate syrup and sprinkled with peanuts.
  • I usually prefer this without either the chocolate syrup or the peanuts, but it's great either way!
  • Recipe can be doubled to fit 9x13 dish.

1 quart vanilla ice cream
1 tablespoon light Karo syrup
1/2 cup peanut butter (I use chunky peanut butter)
2 tablespoons chopped peanuts
1/4 cup shredded coconut (optional)
2 1/2 cups peanuts
2 1/2 tablespoons butter

Steps:

  • Crust: Finely chop peanuts (Food processor works best).
  • Mix butter with nuts.
  • Press mixture into pie pan until it covers entire pan and put in freezer until filling is ready.
  • Filling: Mix together ice cream, karo syrup and peanut butter.
  • I found that a Kitchen Aid Mixer or Food Processor works best to mix.
  • Once mixture is blended together add in peanuts and coconut.
  • Scoop mixture into pie crust.
  • It will be fairly soft and should smooth out evenly pretty easily.
  • Freeze until ready to serve.
  • I usually make this a few hours before serving, so it has a chance to freeze again (It makes serving much easier if the pie is froze).

  • Again, place a sheet of wax paper over pie and pat down the "Bunny Tracks" ice cream until it is a smooth layer.
  • Keep the pie covered with a sheet of wax paper and freeze until ice cream is hard.
  • Freezing can take hours. I suggest making this pie at least 10-24 hours pior to serving, just to be sure it is ready when you are!

1 pkg. (16.5 oz.) NESTLÉ® TOLL HOUSE® Refrigerated Chocolate Chip Cookie Bar Dough, softened, divided
1/2 cup creamy peanut butter, divided
2 cups DREYER'S® or EDY'S SLOW-CHURNED® vanilla ice cream, softened
1/4 cup chopped peanuts
3 tablespoons NESTLÉ NESQUIK Chocolate Flavor Syrup
Chopped peanuts (optional)

Steps:

  • Directions: PREHEAT oven to 350° F. Grease 9-inch pie plate. PRESS 20 squares of cookie dough onto bottom and up side of prepared pie plate. BAKE for 18 to 22 minutes or until golden brown; flatten down with back of spoon to form pie shell. Cool completely on wire rack. SPREAD 1/4 cup peanut butter over crust. Mix ice cream, remaining 1/4 cup peanut butter and 1/4 cup peanuts in medium bowl. Spoon into cookie crust; spread evenly. Drizzle with Nesquik and additional chopped peanuts. Freeze for at least 2 hours or overnight. BAKE remaining cookie dough according to package directions. Cool completely on wire rack; crumble cookies. THAW pie for 5 to 10 minutes. Sprinkle cookie crumbs over pie. Cut into wedges.

Rosalie's Ice Cream Pie With Peanut Butter Crust image

My mom, Rosalie, made this pie for the first time about 20 years ago. Everyone that has had it asks for the recipe, and it is known by all of her friends all over the country as "Rosalie's Ice Cream Pie". It is my favorite ice cream pie. You can use different flavors of ice cream if you like, but I still prefer the original. Prep time does not include freezer time.

2 pints good quality vanilla ice cream
1/2 cup creamy peanut butter
1/2 cup light Karo syrup
2 1/4 cups Rice Krispies
3/4 cup granulated sugar
1/2 cup unsweetened cocoa powder
4 tablespoons butter
1/2 cup heavy whipping cream
1 teaspoon pure vanilla extract

Steps:

  • Place 1 pint vanilla ice cream in refrigerator to soften slightly, about 20 minutes.
  • Meanwhile, in large bowl, stir peanut butter and corn syrup until blended, then add rice krispies, stirring until well coated.
  • Spray a 9 or 10 inch pie plate with cooking spray, then press cereal mixture onto bottom and up sides and form a"stand up" edge.
  • Evenly spread one pint softened ice cream on crust; freeze until firm, about 1 hour.
  • Meanwhile, prepare fudge sauce: in 2 quart saucepan over medium heat, cook sugar, cocoa, heavy cream and butter until mixture is smooth and boils, stirring constantly.
  • Remove saucepan from heat; stir in vanilla, and cool fudge sauce slightly.
  • Remove pie from freezer and pour 1 and 1/4 cups fudge sauce over ice cream.
  • Return pie to freezer and freeze until fudge sauce hardens, about 20 minutes.
  • Remove second pint of ice cream from its container to medium bowl and let stand at room temperature stirring occasionally, until its of smooth spreading consistency but NOT melted.
  • Remove pie from freezer and spread ice cream over fudge sauce.
  • Drizzle remaining fudge sauce over ice cream to make a pretty design.
  • Return pie to freezer; freeze until firm, at least 3 hours.
  • If not using the same day, when firm, wrap with plastic wrap and foil and put back in freezer.
  • There is usually extra fudge sauce which I spoon over pie when serving.
  • Remove pie from freezer for about 10 or 15 minutes to ease slicing.
