8 oz velveeta cheese, chopped
1 1/2 stick butter
1 tsp vanilla
1 c creamy peanut butter
32 oz powdered sugar
1 c chopped walnut or pecans (optional)

Steps:

  • 1. Spray 9x9 square baking pan. In large saucepan, melt cheese, butter, peanut butter. Stir until smooth. Remove from heat and add vanilla and nuts.
  • 2. In large bowl, empty all sugar in bowl and pour cheese mixture over sugar. Stir until completely mixed. The mixture should now look like cookie dough. Press in pan Chill until firm about 2 hours.

2 1/2 cups sugar
1/4 cup butter or 1/4 cup margarine
1 (5 1/3 ounce) can evaporated milk
1 (7 1/2 ounce) jar marshmallow cream
3/4 teaspoon salt
9 ounces peanut butter

Steps:

  • Grease a 9 inch square pan & set it aside. (I use an 8x8 tin & don't grease & it works fine).
  • In a large sauce pan combine the first 5 ingredients. Stir over low heat until blended.
  • Over medium heat, bring to a full rolling boil being careful not to mistake escaping air bubbles for boiling. Boil slowly, stirring constantly for 5 minutes. (once it starts to boil I turn the timer on for 5 minutes & turn the heat to about 6 or 7 on the burner.).
  • Remove from heat, stir in peanut butter untill blended.
  • Turn into greased pan & cool.

(Our family has been making this recipe for peanut butter fantasy fudge around Christmas for as long as I can remember. It's a great gift to friends and acquaintances! We all absolutely love it! 3 cups white sugar, divided
¾ cup margarine, divided
⅔ cup evaporated milk, divided
6 ounces semisweet chocolate pieces
1 (7 ounce) jar marshmallow creme (such as Kraft Jet-Puffed), divided
1 teaspoon vanilla extract, divided
½ cup creamy peanut butter

Steps:

  • Combine 1 1/2 cups sugar, 6 tablespoons margarine, and 1/3 cup evaporated milk in a heavy 1 1/2-quart saucepan; bring to full rolling boil, stirring constantly. Continue boiling over medium heat, stirring constantly to prevent scorching, for 4 minutes.
  • Remove from heat; stir in chocolate pieces until melted. Add 1/2 jar of marshmallow creme and 1/2 teaspoon vanilla extract; beat until well blended. Pour into a greased 9x13-inch baking pan.
  • Repeat process with remaining ingredients, substituting peanut butter for chocolate pieces. Spread over chocolate layer.
  • Let cool at room temperature until set; cut into squares.
