1 carton (8 ounces) reduced-fat spreadable cream cheese
1 cup creamy peanut butter
1/4 cup fat-free milk
1 tablespoon brown sugar
1 teaspoon vanilla extract
1/2 cup chopped unsalted peanuts
Apple slices

Steps:

  • In a small bowl, beat the first five ingredients until blended. Stir in peanuts. Serve with apple slices. Refrigerate leftovers.

Healthy Peanut Butter Apples Crisp for Two is the perfect dessert recipe for two with tart apples, creamy peanut butter and crunchy granola crumble.

1 Tbsp. lemon juice
2 Tbsp. creamy peanut butter
1 tsp. honey
2 apples, chopped into 1/2" pieces
1/4 c. old fashion oats
1 Tbsp. creamy peanut butter
1/4 tsp. cinnamon
pinch of salt

Steps:

  • Preheat the oven to 350°. In a large bowl, whisk the lemon juice, peanut butter and honey. Fold in the chopped apples until they are well coated.
  • In a separate bowl, using a fork, combine the oats, 1 Tbsp. peanut butter, cinnamon and salt until the mixture is crumbly. Divide the apple mixture between two greased ramekins and top with the oatmeal crumble.
  • Bake at 350° for 45-50 minutes. Serve immediately.

1 c sugar
1 c white karo syrup
1 1/3 c peanut butter, crunchy
5 c corn flakes

Steps:

  • 1. Mix sugar and syrup together. Bring to a boil until sugar and syrup begins to bubble. Remove from heat. Add peanut butter. Mix well. Stir in corn flakes and blend until corn flakes are covered. Spoon out on waxed paper and allow to cool.

1 cup granulated sugar
7 cups frosted flakes (corn flakes aren't nearly as good)

  • Bring all, except cereal, to a near boil--be careful not to scorch. Remove from heat and pour over cereal and stir until cereal is coated well. Drop by spoonfuls onto waxed paper or press into greased 9 x 13 pan and cut into squares after cooled.

Apples are covered with peanut syrup for a wonderful Halloween dessert.

10 small apples
10 craft sticks (flat wooden sticks with round ends)
2 cups sugar
3/4 cup water
1 cup light corn syrup
1 cup creamy peanut butter
1 tablespoon shortening
1 cup chopped honey-roasted peanuts

Steps:

  • Line cookie sheet with waxed paper; spray waxed paper with cooking spray. Wash and dry apples; remove stem and blossom ends. Insert craft stick into stem end of each apple.
  • In 2-quart saucepan, mix sugar, water and 1/4 cup of the corn syrup. Heat to boiling over medium-high heat. Cook about 8 minutes, without stirring, to 300°F on candy thermometer or until small amount of mixture dropped into cup of very cold water separates into hard, brittle threads. (Watch carefully so mixture does not burn.) Immediately remove from heat.
  • Working quickly, dip each apple in sugar mixture. Place on cookie sheet; let stand 4 minutes.
  • Meanwhile, in top of double boiler, mix remaining 3/4 cup corn syrup, the peanut butter and shortening. Cook over simmering water about 4 minutes, stirring constantly until smooth. Dip coated apples almost completely in peanut butter mixture; roll apples in chopped peanuts, using hands to help adhere if necessary. Return to cookie sheet; refrigerate 15 minutes or until set. Store covered at room temperature.
