This is one of my favorite cookies to make. They are the only peanut butter cookies my family will eat! Sprinkle a pinch of sugar on cookies before baking, if desired.

1 cup peanut butter
1 cup white sugar
1 egg

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix peanut butter, sugar, and egg together in a bowl using an electric mixer until smooth and creamy. Roll mixture into small balls and arrange on a baking sheet; flatten each with a fork, making a criss-cross pattern.
  • Bake in the preheated oven for 10 minutes. Cool cookies on the baking sheet for 2 minutes before moving to a plate.

1 cup unsalted butter
1 cup crunchy peanut butter
1 cup white sugar
1 cup packed brown sugar
2 large eggs eggs
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 ½ teaspoons baking soda

Steps:

  • Cream butter, peanut butter, and sugars together in a bowl; beat in eggs.
  • In a separate bowl, sift flour, baking powder, baking soda, and salt; stir into butter mixture. Put dough in refrigerator for 1 hour.
  • Roll dough into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown.

A basic cookie using natural peanut butter from the Laura Scudder's Peanut Butter people. For Peanut Butter Cookies, omit oatmeal and increase flour to 2 cups.

3/4 cup butter, softened
1 cup firmly packed light brown sugar
1 cup natural-style peanut butter, at room temperature
2 large eggs
2 teaspoons vanilla
1/4 teaspoon salt (optional)
1 cup all-purpose flour
1 cup quick-cooking oats
1 teaspoon baking soda

Steps:

  • In large mixer bowl, beat butter and sugar until well blended. Add peanut butter, eggs, vanilla and salt if desired; beat well.
  • Add flour, oats and baking soda; mix well.
  • Chill until firm, 6 hours or overnight.
  • Roll into 1-inch balls; place 2-inches apart on ungreased baking sheets. Flatten with fork or glass dipped in sugar.
  • Bake in preheated 375° oven 9-10 minutes or until golden. Let stand 2-3 minutes, remove from baking sheet.
  • Store covered at room temperature.
