1 cup Gold Medal™ all-purpose flour
1 teaspoon baking soda
1/8 teaspoon salt
1/2 cup sugar
1/3 cup creamy peanut butter
1/4 cup butter or margarine, softened
1 egg
2 tablespoons whipping cream
1 teaspoon vanilla
1/4 cup chopped unsalted peanuts
1 bag (12 oz) Reese's peanut butter cups miniatures, unwrapped

Steps:

  • Heat oven to 350°F. Grease 36 mini muffin cups with shortening or cooking spray.
  • In small bowl, mix flour, baking soda and salt; set aside. In medium bowl, beat sugar, peanut butter and butter with electric mixer on medium speed 2 minutes. Beat in egg, whipping cream and vanilla. On low speed, beat in flour mixture until blended. Stir in peanuts.
  • Shape dough into 3/4-inch balls.Place one ball into each muffin cup.
  • Bake 12 minutes. Immediately press 1 peanut butter cup into center of each cookie. Bake 2 minutes longer. Cool in pan on cooling rack.

Water, vegetable oil and egg called for on cookie mix package
1/4 cup chopped cocktail peanuts
1/4 cup peanut butter chips
1 1/2 tablespoons coarse sparkling sugar

Steps:

  • Heat oven to 375°F. Place mini paper baking cup in each of 36 mini muffin cups.
  • In large bowl, stir cookie mix, water, oil and egg until soft dough forms. Stir in peanuts and peanut butter chips.

Steps:

  • Heat oven to 375°F. In large bowl, mix cookie mix, oil, water and egg with spoon until soft dough forms. Shape into 36 (1 1/4-inch) balls (about 1 tablespoon each); place in ungreased mini muffin cups. Press indentation in center of each with end of wooden spoon.
  • Bake 8 to 10 minutes or until light golden brown around edges. Immediately repeat indentation into center of each cookie with end of wooden spoon to create 1-inch opening, cleaning off end with paper towel when needed. Cool in pan 15 minutes. Remove to cooling rack; cool completely.
  • Spoon frosting into resealable food-storage plastic bag. Cut off corner of bag. Gently insert cut corner of bag into indentation in each cookie cup. Squeeze bag to fill opening, about 1 teaspoon per cookie cup. Cut each truffle in half with small serrated knife, using a gentle sawing motion. Place truffle half on top of frosting, cut side down; drizzle with cookie icing, and immediately sprinkle with candy sprinkles.

Steps:

  • Heat oven to 375°F. Spray 36 mini muffin cups with cooking spray with flour.
  • In large bowl, stir Cookie Cups ingredients until soft dough forms. Drop 1 rounded teaspoon cookie dough in each mini muffin cup.
  • Bake 9 to 11 minutes or until set when lightly touched in center. 175g butter, softened
200g light brown soft sugar
100g golden caster sugar
1 tbsp vanilla extract
1 large egg
250g plain flour
½ tsp bicarbonate of soda
150g dark chocolate (at least 70% cocoa solids)
240g peanut or almond butter

Steps:

  • Heat the oven to 190C/170C fan/gas 5. Tip the butter, sugars and vanilla into a bowl and beat with an electric whisk until pale and fluffy. Beat in the egg. Add the flour, bicarb and a pinch of salt, and mix everything together with a spatula.
  • Break off golf-ball-sized lumps of dough (about 65g each) and press into the holes of a 12-hole muffin tin, ensuring it comes up the sides - if you're using a deep muffin tin, the dough should come about halfway up the side of each hole. Bake for 15 mins until golden. The dough will sink as it bakes, so leave until cool enough to handle, then press it up the sides of the holes again. Leave to cool completely.
  • Break the chocolate into a heatproof bowl and melt until smooth in the microwave in 20-second bursts, or set over a pan of barely simmering water ensuring the bowl doesn't touch the water. Remove the cookie cups from the tin (you may need a cutlery knife to help you do this). Spoon 1 tsp nut butter into the centre of each, then cover with the melted chocolate. Leave to cool until the chocolate sets, about 1 hr. Will keep in an airtight container for up to five days.

I can't remember who first showed me how to make these, but they are simply DELICIOUS! Not to mention easy to make.

1 (16 1/2 ounce) package refrigerated peanut butter cookie dough
24 Reese's Peanut Butter cups (either full size or mini)

Steps:

  • The first thing you need to decide is whether you will be using full size or mini Reese's cups. If you choose the full size, you will need a regular size muffin tin, but if you choose the minis you will need a mini muffin tin. I think the full size makes a better cookie.
  • Preheat oven according to the cookie dough instructions, usually about 350°fF.
  • Spray the muffin tins with butter spray.
  • Ball up the cookie dough as though you are making cookies.
  • Press enough dough into each tin to fill about half way.
  • Bake according to cookie dough instructions.
  • The cookies will puff up and fill the muffin tin.
  • As soon as the cookies are done, take the tin out of the oven and press an unwrapped Reese's Cup into the center of each tin. This will create a peanut butter cookie crust around the cup.
  • Let them set for a couple of minutes, while the chocolate and peanut butter melt.
  • Get a nice tall glass of milk and enjoy this delicious treat!

I'm, always trying to make up some recipes for cookies using basic cookie recipes I have already, like peanut butter cookies. W/ these cookie "cups" I have tried them w/ Reese's peanut butter cups and Rolos so far. Next I will try other "mini" candies. My grand children love when I make these!

1-3/4 c flour
1/3 tsp salt
1 tsp baking soda
1/2 c sugar
1/2 c butter, softened
1/2 c smooth peanut butter
1/2 c packed light brown sugar
1 large egg
1 tsp vanilla
2 Tbsp milk
1 bag(s) about 40 in bag, mini-unwrapped rolo candies

Steps:

  • 1. Heat oven to 375. Lightly spray a mini muffin pan w/ cooking spray, to prevent sticking.
  • 2. In large bowl, sift flour, salt and baking soda. In another large bowl, beat butter, sugar, peanut butter and brown sugar until fluffy. Beat in egg, vanilla and milk. Beat in flour mix.
  • 3. Shape mix into balls & place inside a muffin cup, continue w/ remaining dough. Bake 8 mins. As soon as you take the pan out of the oven, press a Rolo gently into center of each dough cup. Let cool & remove from pans. You can also do this w/ mini Reese's peanut butter cups.

1/2 cup Crisco® All-Vegetable Shortening
or 1/2 stick Crisco® Baking Sticks All-Vegetable Shortening
3/4 tsp. baking soda
3/4 tsp. salt
Crisco® Original No-Stick Cooking Spray
Sugar
1 cup semi-sweet chocolate chips
1 tsp. Crisco® Butter Flavor All-Vegetable Shortening
1/4 cup finely chopped peanuts

Steps:

  • BEAT brown sugar, peanut butter, 1/2 cup shortening, milk and vanilla in bowl of electric mixer at medium speed until well blended. Beat in egg. Combine flour, baking soda and salt in a medium bowl. Add to shortening mixture. Beat at low speed just until blended. Refrigerate about 1 hour or until firm.
  • HEAT oven to 350 degrees F. Spray mini-muffin pans with no-stick cooking spray.
  • SHAPE dough into 1-inch balls. Roll in sugar. Place each ball in prepared mini-muffin cups. Press dough onto bottom and sides of cup to within 1/2-inch of top.
  • BAKE 7 to 8 minutes or until cookies are set and just beginning to brown. Cool 10 minutes on cooling racks. Remove cookie cups very carefully to cooling racks to cool completely.
  • PLACE chocolate chips and 1 teaspoon shortening in microwave-safe bowl. Microwave at MEDIUM for 1 to 2 minutes or until chips are shiny and soft. Stir until smooth. Spoon about 1/2 teaspoon chocolate mixture into center of each cookie. Sprinkle with chopped peanuts. Cool completely.

I saw this easy cookie recipe being made on television and it is basically 2 ingredients. Great if you need a hurry up dessert. What I chose to do with mine was have assorted varieties of the peanut Butter cup, because my daughter does not like dark chocolate, only the white Chocolate It is a quick dessert idea,. Reese's has a large bag at Wal Mart with the milk chocolate, white Chocolate, and Dark Chocolate in one package. The guest usually appreciate all three varieties as well. The recipe is easy, quick & simple.

HOMEMADE VERSION
1 3/4 cup(s) all purpose flour
1/2 teaspoon(s) salt
1 teaspoon(s) baking soda
1 stick(s) butter (1/2 cup)
1/2 cup(s) granulated sugar
1/2 cup(s) peanut butter
1/2 cup(s) packed brown sugar

40-44 - reeses peanut butter cups, unwrapped

  • PREHEAT OVEN TO 350 DEGREES F. Unwrap the peanut butter cups and set aside in fridge till needed.Using miniature muffin tins, place one mini muffin liner in each muffin tin. Prepare cookie mix according to package directions, and then pinch off enough dough to make one and a half inch ball of dough, and fill each cup. Bake for 6 to 8 minutes.
  • Remove from oven and leave in pans. CAREFULLY press one peanut butter cup into each cookie. Remove from tin when they are almost cool. COOL COMPLETELY ON TRAY IN FRIDGE OR ON WIRE RACKS.
  • HOMEMADE SCRATCH VERSION: Preheat oven to 375 degrees F. Mix flour salt & baking soda in a medium bowl, stir to mix and set aside.Add butter, sugar, peanut butter& brown sugar in a separate bowl and cream together till light and fluffy. Then add in beaten egg, and beat well till mixed.Next add vanilla and milk, and beat again till mixed.
  • Add flour mixture, mix well, until soft and smooth texture. Pinch off enough dough to form into a small ball about the sizr of a tablespoon, & place in ungreased paper lined mini muffin cup. THERE IS NO NEED TO SPRAY PAPER CUPS, THERE IS ENOUGH BUTTER IN COOKIE DOUGH.
  • NOTE: I prefer to use the variety pac of Reeses Peanut Butter cups with the dark chocolate, milk chocolate & white chocolate. Then arrange the 3 varieties in a decorative pattern on platter where you can noticiably distinguish the different varieties. I find the large Variety pac at Wal Mart.

1 cup(s) chunky peanut butter
- turbinado sugar (sugar in the raw), optional
1/2 cup(s) nutella
- chopped peanuts (optional)

Steps:

  • Preheat oven to 350 degrees. In a small bowl, sift together the dry ingredients and set aside. Cream the butter and sugar in the bowl of an electric mixer using the paddle attachment. Add the egg and vanilla and beat until combined. Add the peanut butter and continue beating on low speed. Add the sifted dry ingredients and beat until just blended.
  • Form dough into 1 1/2 inch balls. Roll balls in turbinado sugar. Place each ball in a cup of a greased mini muffin tin. Bake 10 to 12 minutes until edges are browned and crackled, the centers will not be completely set. Remove the cookies from the oven and using the end of a thick-handled wooden spoon make a small, deep well in the center of each cookie and fill with Nutella. Sprinkle chopped peanuts on top of Nutella. Transfer cookies to a rack to cool completely.
  • Tip: Don't worry about smoothing the Nutella at first. After you've put Nutella in each cookie go back and spread it. It will have melted a bit and be much easier to spread.
