PEANUT BUTTER CHIP COOKIES

Deliciously thick, soft, and chewy peanut butter cookies that are LOADED with flavour, and stuffed full of peanut butter chips. These super easy cookies are a peanut butter lover's dream!

2 cups (250g) plain/all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons cornflour/cornstarch
1/4 teaspoon salt
1/2 cup (115g) unsalted butter, melted
3/4 cup (150g) light brown sugar
1/4 cup (50g) caster/granulated sugar
1 large egg
2 teaspoons vanilla extract
1/2 cup (125g) smooth peanut butter
1 cup (175g) peanut butter chips

Steps:

  • Preheat the oven to 180C/350F/Gas 4. Line a baking tray with parchment paper or a silicone mat, and set aside.
  • Whisk together the flour, baking powder, baking soda, cornflour, and salt. Set aside.
  • In a separate large bowl, whisk together the melted butter and sugars until combined.
  • Add the egg, vanilla, and peanut butter, and mix until combined.
  • Add the dry ingredients, and mix until just combined. Fold in the peanut butter chips.
  • TIP: If you find the cookie dough too crumbly, add milk (1 tablespoon at a time) and mix until it comes together and is easier to manage.
  • Roll the dough into 2-oz balls (or use a medium cookie scoop), and place onto the prepared baking tray. Bake for 10 - 12 minutes.
  • Allow to cool on the baking tray for 5 - 10 minutes before transferring them to a wire rack to cool completely.

These lil' sweeties answer a peanut butter craving call any day of the week! FYI-I have been known to spread more pb or honey or grape jam right over the top while eating them! 8)

1 1/2 c all purpose flour
1/2 c light brown sugar
1/2 c (1 stick) cold butter
1 2/3 c (10 oz.) pkg. reese's peanut butter chips,divided
1 can(s) (14 oz.) sweetened condensed milk ( not evaporated)
1 egg,slightly beaten
1 tsp vanilla extract
3/4 c chopped walnuts
powered sugar (for dusting)

Steps:

  • 1. Heat oven to 350F. Stir together flour and brown sugar in medium bowl. Cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Stir in 1/2 cup peanut butter chips. Press mixture into bottom of ungreased 13x9x2 inch baking pan. Bake 15 minutes.
  • 2. Meanwhile, in large bowl, combine sweetened condensed milk,egg,and vanilla. Stir in remaining chips and walnuts.Spread evenly over hot baked crust.
  • 3. Bake 25 minutes or until golden brown. Cool completely in pan on wire rack. Cut into 2" or 2 1/2" squares; cut squares diagonally into triangles. Sift powdered sugar over top, if desired.

PEANUT BUTTER AND POTATO CHIP TRUFFLES



Peanut Butter and Potato Chip Truffles image

1 cup creamy peanut butter
5 tablespoons unsalted butter, at room temperature
2 1/2 cups confectioners' sugar
1/2 teaspoon pure vanilla extract
2 cups finely crushed rippled potato chips (about half of a 9-ounce bag), plus large pieces for topping
12 ounces semisweet chocolate, chopped

Steps:

  • Line a baking sheet with parchment paper. Combine the peanut butter and butter in a large bowl and beat with a mixer on medium speed until smooth, 1 to 2 minutes. Gradually add the confectioners' sugar, then the vanilla; beat until the mixture comes together in clumps, 1 to 2 minutes. Add the crushed potato chips and beat until combined.
  • Roll the mixture into tablespoon-size balls (about 36); arrange on the prepared baking sheet. Refrigerate while you melt the chocolate.
  • Put the chocolate in a medium heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water). Let melt, stirring occasionally, about 10 minutes. Remove the bowl from the saucepan. One at a time, dip the truffles in the melted chocolate with a spoon, letting the excess drip back into the bowl, then return to the baking sheet. Push a large potato chip piece into each truffle. Refrigerate until the chocolate sets, at least 15 minutes, or freeze until ready to serve.

6 slices whole grain bread, crusts removed (optional)
butter
6 teaspoons honey
6 tablespoons crunchy peanut butter
6 tablespoons semi-sweet chocolate chips

Steps:

  • Place the bread slices onto a chopping board and spread with butter.
  • Spread one slice of each sandwich with honey and the other with peanut butter and sprinkle over the chocolate chips. Cut into triangles.
