My son had the idea for these one fall Saturday morning after we had gone apple picking. They are delicious! Great for school lunches, too.

1 cup all-purpose flour
1 cup white whole wheat flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
2 tablespoons unsalted butter
¾ cup natural creamy peanut butter
⅔ cup brown sugar
¾ cup milk, or more as needed
1 egg, beaten
1 teaspoon vanilla extract
1 cup peeled and diced apple
1 cup peanut butter chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper liners.
  • Mix flours, baking powder, baking soda, and salt in a large bowl.
  • Melt butter in a small saucepan. Stir in peanut butter and brown sugar. Remove from heat and add milk, egg, and vanilla extract. Add butter mixture to the flour mixture, mixing until just blended. Add more milk, 1 tablespoon at a time, if the batter seems dry.
  • Add apple and peanut butter chips, stirring gently to distribute. Divide the batter evenly among the muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes.

  • Dividing evenly, spread peanut butter on muffin halves. Sprinkle with wheat germ; then top with apple slices. Serve open-faced.

6 whole-wheat English muffins
1 cup peanut butter
2 medium Granny Smith apples, cored and thinly sliced
1/2 cup sugar
1 tablespoon ground cinnamon
1/4 teaspoon nutmeg

Steps:

  • Preheat the oven to 350 degrees F.
  • Halve the muffins and spread a heaping tablespoon of peanut butter on each half. Layer the apple slices on the peanut butter. Mix the sugar, cinnamon and nutmeg together in a small bowl and sprinkle about 2 teaspoons on top of each muffin half.
  • Put the muffin halves on a baking sheet and bake for 10 minutes. Set the oven to low broil and cook until bubbly and caramelized, about 3 minutes.

2 cups Pillsbury BEST® All Purpose Flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 large egg
1/2 cup Jif® Creamy Peanut Butter
3/4 cup milk
1/3 cup Crisco® Pure Canola Oil
6 small, cooked sausage patties, halved
1/2 cup Smucker's® Apple Jelly

Steps:

  • HEAT oven to 375 degrees F. Combine flour, sugar, baking powder and salt in large bowl; mix well.
  • BEAT egg in small bowl; whisk in peanut butter. Stir in milk a little at a time; add oil and mix well. Pour into bowl with dry ingredients; stir gently to combine (this is a stiff batter; do not over mix).
  • LINE a 12 muffin pan with paper muffin cups. Fill the lined cups 1/3 full of batter. Make a shallow indentation in the center of the batter with your finger; do not go to the bottom of the cup.
  • PLACE 1 teaspoon jelly in each indentation. Top with halved sausage patties. Fill muffin cups 2/3 full with remaining batter.
  • BAKE 20 minutes until done and golden brown. Remove from oven and cool in pan 5 minutes. Remove from pan and cool on wire rack; serve warm.

Number Of Ingredients 15

1-3/4 cups all-purpose flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/8 teaspoon ground ginger
1 egg, lightly beaten
3/4 cup milk
1/4 cup canola oil
1/2 cup thick apple butter
TOPPING:
1/2 cup chopped pecans
3 tablespoons sugar

Steps:

  • In a small bowl, combine the first eight ingredients. Combine egg, milk and oil; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups with a rounded tablespoon of batter. Top each with a rounded teaspoon of apple butter and remaining batter. Combine topping ingredients; sprinkle over muffins. , Bake at 400° for 15-18 minutes. Cool for 10 minutes before removing from pan to a wire rack.
