"I found this idea in a magazine several years ago," notes Irene Wilson. "I have shared it with many people and everyone enjoys it." The Grand Junction, Colorado cook says the crisp celery sticks stuffed with peanut butter filling and dressy enough for holidays.

2 packages (3 ounces each) cream cheese, softened
1/4 cup creamy peanut butter
2 tablespoons half-and-half cream
1 tablespoon chopped onion
5 to 6 celery ribs, cut into thirds
Chopped salted peanut, optional

Steps:

  • In a small bowl, beat the cream cheese, peanut butter and cream until smooth; stir in the onion. Stuff or pipe into celery; sprinkle with peanuts if desired. Refrigerate for at least 1 hour.

8 ounces cream cheese
1 cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons adobo sauce from canned chipotles in adobo
1 teaspoon freshly ground black pepper
1 pound sharp Cheddar, grated
1 pound Monterey Jack cheese, grated
2 tablespoons fresh dill fronds
Two 4-ounce jars diced pimientos, drained
1 teaspoon kosher salt
24 celery stalks, cut into 3-inch pieces
Garnish suggestions: raisins, sriracha, walnuts, cranberries

Steps:

  • Combine the cream cheese, mayonnaise, Dijon, adobo and black pepper in the bowl of an electric mixer and mix until totally combined.
  • Add the Cheddar and Monterey Jack and mix gently until combined. Using a rubber spatula, scrape down the sides of the bowl to ensure all the ingredients are mixed together.
  • Chop 1 tablespoon of the dill. Add the chopped dill and pimientos to the mixture, then season with salt and mix. Place into a container with a tightly fitting lid and refrigerate until firm, at least 2 hours.
  • Mound the pimiento cheese into the celery segments. Garnish to your liking with raisins, sriracha, walnuts, cranberries and dill fronds. Serve immediately or return to the refrigerator until ready to serve.

¼ cup chopped walnuts
20 green olives with pimento, chopped
1 bunch celery, cut into bite-size pieces

Steps:

  • In a medium bowl, mix together the cream cheese and sour cream. Stir in the walnuts and chopped olives. Spread filling onto the celery pieces. It's also good on crackers.

½ cup pimento cheese spread

Steps:

  • Spread peanut butter into one half of the hollow in each celery stalk. Spread pimento cheese spread into the other half. Refrigerate until chilled, at least 20 minutes.
