2 large red apples, chopped
1 cup green grapes
1 medium firm banana, sliced
1/2 cup chopped walnuts
1/4 cup mayonnaise
2 tablespoons sour cream
1/2 teaspoon sugar
1/2 teaspoon lemon juice
Pinch salt

Steps:

  • In a large bowl, combine the apples, grapes, banana and walnuts. Combine mayonnaise, sour cream, sugar, lemon juice and salt; pour over fruit mixture and toss gently to coat.

A nice salad that goes well with chicken or pork. For those trying to have a healthier diet this is a great addition that pleases most palates, even the younger ones.

Number Of Ingredients 15

3 medium red apples (cut and cored into 1/2 inch pieces)
1 banana, peeled and sliced
1/2 stalk celery (sliced)
1/4 cup chopped walnuts or 1/4 cup pecans
1/3 cup chopped dates
3 tablespoons mayonnaise
1 teaspoon honey
1 dash lemon juice or 1 dash lime juice
lettuce leaf
1 cup sugar
1/2 cup water
1 teaspoon cinnamon
1/8 teaspoon clove
2 cups pecan halves
1 teaspoon vanilla extract

Steps:

  • Combine all ingredients and toss lightly.
  • Chill mixture and serve in lettuce cups.
  • (To prevent bananas from turning brown marinate in lemon or lime juice for a few minutes.).
  • Candied pecan variation: Combine first 4 ingredients in a medium sauce pan and cook over medium heat until sugar dissolves @ 5 minutes.
  • Stir constantly and add pecans and vanilla, cook until syrup is absorbed @ 10-12 minutes.
  • Place pecans on a baking sheet lined with wax or parchment paper and allow to cool.
  • Chop up and add desired amount to salad.
  • Extra pecans may be stored in an airtight container for @ 1 month.

It's my favorite way to eat fruit. Easy and colorful for a summer barbeque. Great way to get kids to eat fruit. Not as sweet as whipped cream topping.

1 cup sour cream
2 tablespoons sugar
1 large banana, sliced into chunks
1 (8 ounce) can pineapple chunks in juice
1 cup apple, diced
1 cup seedless grapes, sliced in half
1 cup walnut halves, toasted
1/2 cup golden raisins or 1/2 cup dried cranberries

Steps:

  • Stir sour cream and sugar together until well mixed.
  • Peel bananas and cut into chunks. Add to mixing bowl. Stir in diced apple, pineapple, grapes, walnut halves and raisins and sour cream mixture.
  • Chill in refrigerator about an hour if possible.
  • Options: I occasionally add 1/4 cup shredded coconut, 1/2 cup mandarin oranges or 1/2 cup diced celery just for something different.
  • Refreshing summer side dish.
