Peaches and yogurt that look like eggs sunny-side up! My 10 yr old saw this idea on a children's TV show and used to surprise her younger sisters; it was a big hit. It would be a great afterschool snack or quick breakfast for slumber parties.

1/3-1/2 cup vanilla yogurt
1/2 peach (we used canned peach halves in light syrup)

Steps:

  • Spread yogurt into circle on plate, using the back of a spoon.
  • Place peach half, flat side down, in the center of the yogurt.
  • Repeat for each serving desired.

1 cup orange juice
1 (40 g) packet orange jelly powder (orange jelly crystals)
3/4 cup boiling water
2 cups yoghurt
1/2 cup cream
oranges (to garnish) or lemon, segments (to garnish)

Steps:

  • Dissolve jelly in hot water and cool to room temperature, stir in orange juice and then yoghurt until smooth.
  • Refrigerate until mixture begins to set.
  • Remove from fridge & whip until mixture is foamy.
  • Beat cream, until fluffy and fold into mixture.
  • Spoon into serving glasses & refrigerate until mixture is set, garnish with orange or lemon segments & somw whipped cream.

Granitas are the ultimate easy, refreshing make-ahead dessert. You need little more than fruit, sugar and water for the most basic ones. This version adds an adult twist with some Manzanilla sherry, which adds a complexity of flavor without overshadowing the fruit base.

3/4 cup sugar
4 wide strips orange zest, plus 2 tablespoons orange juice
2 wide strips lemon zest, plus 2 tablespoons lemon juice
1 1/2 pounds peaches, pitted and chopped (about 4 cups)
1/3 cup manzanilla sherry
Peach and/or orange slices, for garnish

Steps:

  • Bring the sugar, 1/2 cup water and the orange and lemon zest to a simmer in a saucepan, stirring until the sugar dissolves. Let cool, then strain into a blender. Add the peaches and orange and lemon juice. Blend until very smooth.
  • Pour into a 9-by-13-inch baking dish and stir in the sherry. Freeze until beginning to harden, 2 to 3 hours, then scrape with a fork. Continue to freeze, scraping occasionally, until frozen, about 3 more hours. Serve garnished with peach and/or orange slices.

2 quarts peeled chopped peaches
3/4 cup thinly sliced orange rind
1 1/2 cups chopped orange sections
2 tablespoons lemon juice
5 cups sugar

Steps:

  • Add all ingredients to a large pot; slowly bring to a boil; stir frequently until the sugar dissolves.
  • Boil for approximately 40 minutes or until thickened, stirring frequently to keep from sticking.
  • Take pot off of stove; skim off foam with a metal spoon.
  • Quickly pour marmalade into hot sterized jars, leave 1/4 inch headspace.
  • Cover immediately with metal lids and screw on bands tight.
  • Process in boiling water bath for 15 minutes.

I got this recipe from a friend at my wedding shower. It is a very light dish. It can be used as a salad or a dessert.

60 Ritz crackers, rolled fine
1/3 cup butter, melted
1/4 cup sugar
1 (8 ounce) Cool Whip
1 (6 ounce) frozen orange juice, slightly thawed
2 (11 ounce) cans mandarin oranges, drained
1 (15 ounce) can eagle brand sweetened condensed milk

Steps:

  • Mix together crackers, butter and sugar.
  • Press in a 13x9-inch baking dish. (Save a little bit of the crumbs for top).
  • Refrigerate this while making rest of recipe so it becomes firm.
  • Fold the rest of ingredients together.
  • Spread over crumbs in dish.
  • Top with remaining crumbs.
  • Refrigerate until ready to serve.
