4 large peaches, halved pitted
1/2 red onion, sliced
2 tablespoons chopped fresh cilantro
1 tablespoon fresh lime juice
1 teaspoon sugar
1 teaspoon grated orange rind
1 teaspoon finely chopped seeded habanero pepper
1/2 teaspoon salt

Steps:

  • Prepare grill to medium-high heat.
  • Lightly coat peaches and onion with cooking spray
  • Place peaches and onions on grill rack coated with cooking spray; grill peaches 2 minutes on each side. Cool and chop peaches.
  • Grill onion 3 minutes on each side. Cook and chop onion.
  • Combine peaches, onion, cilantro and remaining ingredients in a medium bowl. Toss well. Let stand 15 minutes.

3 -4 peaches, peeled and diced (about 3 cups)
6 tomatillos, washed and diced (about 1 cup)
1 fresh habanero pepper, de-seeded and finely chopped
1/3 cup fresh lime juice
1 tablespoon chopped fresh cilantro
1 tablespoon chopped of fresh mint
1 tablespoon corn syrup
2 teaspoons ground coriander
1 teaspoon salt

Steps:

  • Combine peaches, tomatillos and chile in mixing bowl and mix thoroughly.
  • Add all remaining ingredients.
  • Refrigerate salsa for at least 3 hours to allow the flavors to blend before serving.
  • Serve as an accompaniment to poultry, fish or pork.

A milder sweet-spicy habanero sauce, but can be made hotter by adding more habaneros. I chop the peppers and garlic in a mini food processor to ensure there are no large chunks in the sauce. It goes great on anything, but mostly we eat it as a dip/salsa with tortilla chips.

6 habanero peppers, seeded and chopped, or to taste
4 cloves garlic, minced
1 (15 ounce) can sliced peaches, drained
¼ cup dark molasses
¼ cup honey
¼ cup brown sugar
1 cup distilled white vinegar
2 tablespoons spicy brown mustard (such as Gulden's®)
2 tablespoons paprika
1 tablespoon kosher salt
1 tablespoon black pepper
1 tablespoon ground cumin
½ teaspoon ground coriander
½ teaspoon ground ginger
½ teaspoon ground allspice
1 teaspoon liquid smoke flavoring

Steps:

  • Place the habanero peppers and garlic into a blender. Puree until the peppers are finely chopped. Add the peaches, molasses, honey, brown sugar, vinegar, mustard, paprika, salt, black pepper, cumin, coriander, ginger, allspice, and liquid smoke. Continue to puree until smooth.
