PEACH RICE PUDDING
This old-fashioned rice pudding is layered with sliced peaches, then topped with a sweet raspberry sauce. It makes for a pretty presentation in parfait glasses.

- In a large saucepan, bring milk, rice and salt just to a boil. Reduce heat; cover and simmer for 25-30 minutes or until rice is tender and most of the liquid is absorbed, stirring occasionally. Remove from the heat. Stir in the sugar, butter and vanilla; cool. , In a small saucepan, combine the sugar, raspberries and jelly. Bring to a boil, stirring constantly. Cook and stir over medium heat for 5 minutes. Press mixture through a fine strainer or sieve; discard seeds. Return raspberry sauce to pan. Combine cornstarch and wine or grape juice until smooth; stir into sauce. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Remove from the heat; cool., In individual dessert dishes or in a 2-1/2-qt. trifle bowl, layer the rice pudding and peaches. Serve with sauce.

WALNUT AND RAISIN RICE PUDDING ON A PEACH
A old fashion recipe but good for your best company you can mix it up in no time .I serve it on a peach with walnuts.

- 1. Pre-heat oven 350 degrees. Rub a 8x8 glass dish with the softened butter. Spread rice in dish sprinkle evenly raisins then walnuts over .
- 2. In medium bowl -Stir cinnamon, salt ,nutmeg in with sugar whisk in milk, eggs ,and vanilla until sugar is dissolved ,pour over rice.
- 3. Place 8x8 dish in larger dish add very hot water slowly half way up . Bake 65 minutes. serve hot or cold on a well drained peach sprinkle more nuts on if you like.

- In a large saucepan, melt the butter and add the chopped peaches. Cook over medium heat until the peaches release their some of their juice, about 5 minutes.
- Stir in rice, apple juice, milk, and coconut milk, cinnamon stick, vanilla and salt. Bring to a boil.
- Reduce heat to medium, cover, and cook until the rice is tender and most of the liquid is absorbed, about 20 minutes.
- Discard the cinnamon stick and fold in the sugar. Serve warm or cold.
