Thai Duck Soup ( Ped Toon) image

This is good to by skipping the honey and adding a little coke for fizz.

Number Of Ingredients 15

9 oz skinless duck breast
4 oz rice noodles
handful of bean sprouts or shredded lettuce
2 scallions white and light green parts only
2 Tbsp fresh cilantro chopped
FOR THE BROTH
2 star anise
1/2 Tbsp ground cinnamon
1 inch piece of ginger grated or 1 tsp ginger paste
4 clove garlic minced or 1 tbsp garlic paste
2 Tbsp each dark soy sauce & light or thin soy sauce
1/2 Tbsp fish sauce
2 Tbsp honey
1/2 tsp birds eye chilis ground
3 c hot water or chicken stock

Steps:

  • 1. Put all the broth ingredients in a large pot. Bring to a boil. Add the duck breast and simmer for 20 minutes. Remove the duck and cut into pieces or shred it and set it aside. Strain the broth discarding any solids. set aside.
  • 2. Cook the noodles according to package directions.
  • 3. Place noodles in a bowl. Add broth, bean sprouts or lettuce, and scallions. Place the duck on top and add the cilantro. Serve immediately
