1 ounce peach schnapps, to taste

ice

Steps:

  • Add a few frozen peach slices and liquor to blender and puree. The mixture should be taking on a slushy type texture.
  • Taste and add more liquor or peaches as needed. Add ice and continue to blend until a nice frozen texture is acquired. Pour into glasses and garnish with peaches.

1 (750 ml) bottle sparkling apple cider, chilled (3 cups)

Steps:

  • Allow chopped peaches to defrost if using frozen. If using fresh peaches, put puree in freezer to chill about 1/2-1 hour before proceeding(or put peaches in freezer till they are really cold, about 1/2-3/4 hour.
  • Place in blender with 1/2 cup sparkling cider. Blend until peaches are pureed.
  • Divide puree evenly between 4 champagne glasses. Fill glasses with remaining sparkling cider. Serve and enjoy!

100 g of twinings earl grey tea, loose
16 ounces dole frozen sliced peaches
1/4 cup sugar
1 cup torani raspberry flavored syrup
fresh raspberry, to garnish

Steps:

  • Brew tea by adding the entire 100g tin of leaves to 12-cup coffee maker's filter basket. Use 12 cups water. As soon as it has brewed, pour into a pitcher and refrigerate until very cold. (This is double-strength.).
  • In a bowl, mix peaches, sugar and raspberry syrup. Refrigerate until peaches are thawed and sugar is dissolved. Stir frequently.
  • To make tea:.
  • Fill a glass with ice. Add some peaches and 2-4 Tablespoons of syrup over ice. Fill glass with cold tea and top with a few fresh raspberries. Stir and enjoy!

1/4 cup sliced fresh ginger, with skin
2 cups granulated sugar
2 cups cold water
10 ounces semi-frozen peaches
1/2 cup ginger simple syrup
Ice cubes
1 bottle Champagne

Steps:

  • Begin by making the ginger simple syrup. Peel and grate the ginger. Add it together with the sugar and cold water to a saucepan. Bring it to the boil and stir until the sugar dissolves. Cover and let steep for 15 minutes. Strain, discard ginger pieces and set simple syrup aside.
  • In a blender add frozen peaches and ginger simple syrup. Blend until completely pureed then place into the refrigerator to cool.
  • For serving:
  • Add ice cubes to a cocktail shaker and fill half way with peach puree. Top off with Champagne and shake vigorously to combine. Pour into Champagne glasses and repeat process as needed.

1/2 vanilla bean, split and seeds scraped
2 ripe white peaches, peeled, halved, pitted and chopped, plus 1 cut into thin slices
Very cold California sparkling rose wine, as needed
Fresh mint sprigs, for garnish

Steps:

  • Combine the sugar, 1/2 cup water, vanilla bean and seeds in a small saucepan. Bring to a boil and cook until the sugar is melted. Remove the vanilla bean, transfer to a bowl, cover and refrigerate until cold, about 1 hour.
  • Combine the vanilla sugar syrup and chopped peaches in food processor and process until smooth. Put some of the puree into the bottom of 4 Champagne flutes, or a pitcher. Top with cold sparkling wine and garnish with sliced peaches and mint sprigs.

1 cup unsalted butter, at room temperature
2 cups sugar
1 teaspoon vanilla
6 egg whites
3 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup champagne
1/4 cup peach schnapps
1 small peach, peeled and diced
3/4 cup unsalted butter, at room temperature
4 cups powdered sugar
1/4 cup champagne
1 tablespoon milk
1 teaspoon peach schnapps
1 teaspoon vanilla
2 -3 drops red food coloring, if desired

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium sized bowl combine flour, baking powder and salt.
  • In a large mixing bowl beat together butter and sugar for 3-5 minutes, until light and fluffy. Add vanilla; then beat in egg whites one at a time.
  • Stir together the champagne and schnapps in a spouted measuring cup.
  • To the butter mixture, gradually add in flour mixture and the champagne/schnapps mixture, in three alternating additions, beginning and ending with the flour mixture.
  • Gently stir in the diced peaches.
  • Pour batter into cupcake liners, filling 2/3 full.
  • Bake at 350 degrees F for 25-30 minutes, or until toothpick inserted into center comes out clean.
  • To make the frosting:.
  • Beat together the butter and vanilla.
  • Add powdered sugar in one cup increments, then add champagne, milk, peach schnapps and food coloring.
  • Frost cupcakes once they have completely cooled. I also sprinkled with a little orange and yellow sugar, for decoration.
  • Makes 2 dozen cupcakes.

PEACH BELLINI JAM

This fantastic jam recipe originally came from a Better Homes and Gardens canning magazine, as did the tip about making peach bellini floats with it. I added the butter to help tame the foaming. Use your tallest stockpot for this recipe - even with the butter it foams up a lot! Do not increase the amount of butter as this could lower the acidity of your recipe too much and make it unsafe for canning. Bottled lemon juice has a more consistent acid level then fresh lemon juice and is the preferential choice for canning recipes. Cooking time listed is processing time and this will vary depending on your altitude (consult a trusted source such as the Ball Blue Book for an altitude adjustment chart).

7 1/2 cups sugar
3 cups finely chopped peeled and pitted peaches
1 cup prosecco (or any sparkling white wine)
2 tablespoons bottled lemon juice
3 ounces liquid pectin
1/2 teaspoon butter

Steps:

  • Combine sugar, peaches, Prosecco and lemon juice in a very large stockpot. Bring to a full rolling boil, stirring constantly until the sugar dissolves.
  • Quickly stir in the pectin and return to a full rolling boil, stirring constantly. Boil hard for 1 minute, stirring constantly.
  • Remove from heat and stir for 5 minutes to eliminate the foam and help evenly distribute the fruit throughout the jam.
  • Fill hot, sterilized half pint canning jars, leaving 1/4-inch headspace.
  • Process jars in a boiling water bath canner for 5 minutes, adjusting for altitude.
  • The jars may need to sit for up to 2 weeks before full gel is acheived.
  • *To make a peach bellini float stir some of this jam into soda water and top with vanilla ice cream!

raspberry flavored syrup to taste
1 bag(s) frozen peach slices
1 bunch fresh mint, optional

  • 1. Brew tea if making your own iced tea. If using a mix, make one gallon of tea.
  • 2. Add the raspberry flavored syrup to taste, or mix up a gallon of raspberry flavored ice tea mix.
  • 3. Add the frozen peach slices to each glass or in the punchbowl right before serving. Garnish with a sprig of mint if desired.
  • 4. Adding some light rum makes this an adult drink.

6 peaches, (about 1 pound, 8 ounces), halved and pitted
1/4 cup superfine sugar, plus more for garnish
1/4 cup water
1 bottle Prosecco (750 ml or 3 1/3 cups), chilled

Steps:

  • With a box grater, grate peaches into a pitcher. Add the sugar and water to the peaches and place pitcher in refrigerator until chilled and sugar has dissolved, or until needed.
  • When ready to serve, pour the superfine sugar on a plate and invert a chilled Champagne glass in the sugar to coat rim. Pour about a 1/8th of the peach mixture into the prepared glass and top off with Prosecco. Stir gently and serve.

This is one of the drinks we made and served in our class. They were yummy....but Champagne is always yummy!! The peach puree will settle to the bottom of the glass or pitcher, so you will HAVE to stir this to mix the two. It is well worth it though. Enjoy!!

3 cups champagne or 3 cups sparkling wine

Steps:

  • Puree the peaches in a blender until smooth.
  • If the peaches are really ripe this should happen without a problem; but if they are not that ripe peel and slice them, place them in a bowl and sprinkle them with a Tbs or so of sugar. Let it sit for 10 min or so to draw some of the juices from the peaches and add a little sweetness.
  • Pour puree into a bowl and chill until ready to use.
  • Mix 2 oz of peach puree with 4 oz of Champagne, stir to combine and serve in chilled flutes.
  • You can also combine the two in a pitcher, mix and serve (we found this a little easier for our large group).
