MARILYN'S SLOW COOKER POT ROAST

Weeknight dinner has never been easier with this pot roast, set it and forget it recipe. Beef chuck roast, ranch dressing mix, au jus mix, butter and pepperoncini all go into the slow cooker. Cook on low, 8 hours. Serve over rice.

3 lbs chuck roast
1 packet ranch dressing mix
1 packet au jous mix
1 stick butter
1 jar pepperoncini, drained
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder

Steps:

  • Place meat in a crock pot. Sprinkle with both mixes and place butter on top. Place pepperocinis on top. Cook on low for 8 hours.

This is now my go to pot roast. She has a version of this recipe in one cookbook for the oven and another in the slow cooker. Both are excellent.

1 (3 lb) boneless chuck roast
1 1/2 teaspoons house seasoning, recipe follows
1/4 cup vegetable oil
1 onion, thinly sliced
3 bay leaves
3 -4 beef bouillon cubes, crushed
2 garlic cloves, crushed
1 (10 3/4 ounce) can condensed cream of mushroom soup
1/2 cup Chardonnay wine
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Steps:

  • Sprinkle roast on all sides with house seasoning. Using a skillet over high heat, sear roast until brown in oil. Place roast in a slow cooker, and layer onions, bay leaves, crushed bouillon cubes, garlic, and cream of mushroom soup. Add the Chardonnay and cover with enough water to cover all of the ingredients. Cook on the low setting for 8 hours.

3 lbs boneless chuck roast
1/4 cup vegetable oil
1 onion, thinly sliced
3 bay leaves
3 -4 crushed bouillon cubes
2 cloves crushed garlic
1 (10 3/4 ounce) can condensed cream of mushroom soup
1/2 cup Chardonnay wine
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Steps:

  • Make house seasoning by combining salt, pepper and garlic powder- store remainder in an airtight container for up to 6 months.
  • Sprinkle 1 1/2 teaspoons of house seasoning on all sides of roast.
  • Over high heat, sear roast until brown in oil.
  • Place roast in slow cooker and layer onions, bay leaves, bouillon cubes, crushed garlic and cream of mushroom soup.
  • Add Chardonnay and enough water to cover all of the ingredients.
  • Cook on low setting for 8 hours.

I saw Paula making this on TV and knew I had to try it.... It makes your house on a cold day smell heavenly... I added some potatoes and carrots the last hour of cooking.

1 (3 -4 lb) boneless chuck roast
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons vegetable oil
1 cup onion, thinly sliced wedges
3 garlic cloves, crushed
2 bay leaves
1 (10 3/4 ounce) can cream of mushroom soup
1/4 cup red wine
2 tablespoons Worcestershire sauce
1 tablespoon beef bouillon granules
3/4 cup water
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Steps:

  • Preheat oven to 350 degrees.
  • For House Seasoning: Mix ingredients and store in an airtight container for up to 6 months.
  • Add the house seasoning, salt and pepper to a small bowl. Rub seasoning into the roast on both sides. Heat oil in a large skillet and brown the roast, searing it on both sides. Place the meat in a roaster pan. Add onions and garlic to skillet for 1 to 2 minutes to absorb leftover roast juice. Place into roaster iwth meat and add bay leaves.
  • Combine the mushroom soup, wine, worcestershire sauce and beef bouillon into a bowl. Pour over the roast. Add water.
  • Cover pan with foil and bake for 3 to 3 1/2 hours or until tender.
  • Remove and discard the bay leaves.
  • Cooks Note:.
  • If the gravy is not thick enough, remove the meat from the pan and pour the gravy into a saucepan. Bring to a boil and thicken it by adding 2 T. of cornstarch mixed with 1/4 cup cold water, stirring constantly until thickened.

3 - 4 lb boneless chuck roast
1 tsp garlic powder
1 tsp salt
1/2 tsp ground black pepper
2 Tbsp vegetable oil
1 c thinly sliced onion
3 clove garlic, crushed
2 bay leaves
1 can(s) campbell's healthy request cream of mushroom soup
1/4 c red wine
2 Tbsp worcestershire sauce
1 Tbsp beef bouillon
3/4 c water

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. Add the Garlic powder, salt and pepper to a small bowl. Rub seasoning into the roast on both sides. Heat oil in a large skillet and brown the roast, searing it on both sides. Place the meat in a roaster pan. Add onions and garlic to skillet for 1 to 2 minutes to absorb leftover roast juice. Place into roaster pan with meat and bay leaves.
  • 3. Combine the mushroom soup, wine, Worcestershire sauce and beef bouillon into a bowl. Pour over the roast. Add water. Cover pan with foil and bake for 3 to 3 1/2 hours or until tender.

PAULA'S SMOKED BOSTON BUTT ROAST

This is a great recipe from chef Paula Deen. The smell alone of this roast cooking will drive you crazy. The meat is tender and very tasty. Excellent!

1 (5 lb) pork butt
2 tablespoons seasoning salt
4 tablespoons liquid smoke (I only used 2 T., one for each side)
1 medium onion, sliced
1 cup water
3 bay leaves
2 cups favorite barbecue sauce
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Steps:

  • Preheat oven to 350.
  • Mix House Seasoning and store in airtight container.
  • Sprinkle one side of the roast with 2 T. of the House Seasoning, making sure to rub well.
  • Flip the roast over and rub the remaining 2 T. of House Seasoning.
  • Repeat the process with the seasoned salt and liquid smoke.
  • Place the roast in a large roasting pan.
  • Add the onion, water and bay leaves to roast.
  • Place in the oven and cook for 2 ½ to 3 hours or until thermometer reads 170 degrees.
  • Let meat cool and then slice.
  • Serve with favorite barbeque sauce.
