Another celebrity recipe. I do not know if you should chop up the tomatoes or not, but this sounds great. This would be vegan if you don't use the butter.

1/2 lb split peas
1/4 lb orange lentils
1 1/2 large onions, quartered
4 stalks celery, including leaves, rinsed & chopped
2 tomatoes, peeled
2 leeks, white part only, cut into 1-inch chunks
5 cups water (about)
1/4 lb butter or 1/4 lb soy margarine
crushed black peppercorns
sea salt

Steps:

  • Place split peas, lentils, onions, celery, tomatoes and leeks in large pot and cover with water.
  • Bring to boil, lower heat and simmer about 1-1/2 hours, until split peas and lentils are soft.
  • Add butter and stir until melted.
  • Add peppercorns and sea salt to taste.

I got this recipe from a bag of peas and added the spagetti the way my mother in law does. It makes for a very hardy and yummy soup.

1 lb dried split peas
1 chicken bouillon cube
6 -8 ounces kielbasa, cut into 1/2 inch pieces
1 small onion, chopped
1 garlic clove, minced
1 medium carrot, diced
salt and pepper
6 cups water
1/2 lb spaghetti

Steps:

  • Sort and rinse peas.
  • In a large pot combine all ingredients except spagetti.
  • Bring to a boil.
  • Reduce heat, cover and simmer until peas are tender, about 2-3 hours. Adding water if necessary.
  • In the meantime cook spagetti until al dente, and drain.
  • After soup has finished cooking and peas are tender add spagetti and cook about 5 minutes longer.
  • Serve topped with hot sauce and croutons if desired.

6 gallons water
12 ounces ham soup base
3 ounces chicken base
7 lbs diced ham
2 bunches celery, diced
3 lbs onions, diced
7 lbs carrots, diced
6 tablespoons garlic, minced
4 tablespoons onion powder
4 tablespoons garlic granules
4 tablespoons sodium-free seasoning
3 tablespoons season salt
1/2 cup parsley flakes or 1/2 cup chopped fresh parsley
2 lbs bacon, diced and browned (optional)

Steps:

  • -Rinsesplit peas in water.
  • -Addboth ham, and chicken base to water and simmer-Add split peas and simmer till cooked.
  • Stirring constantly.
  • -Peeland dice carrots, celery, and onions.
  • -Mincegarlic, or purchase it in the jar already minced.
  • -Peeland dice potatoes and keep covered with water until needed.
  • -Whenpeas are cooked and well blended, add seasonings, carrots, celery, onions, diced ham and potatoes.
  • (Bacon if desired).
  • -Simmeruntil vegetables are tender.

  • Stirring constantly to prevent scorching.

1 onion, diced
2 tablespoons oil
1 bay leaf
1 teaspoon celery seed
1 cup split peas
1/4 cup barley
1/2 cup lima beans
8 cups water
2 teaspoons salt
1 dash pepper
1 carrot, chopped
3 stalks celery, diced
1/2 cup parsley, chopped
1 potato, diced
1/2 teaspoon basil
1/2 teaspoon thyme

Steps:

  • Saute onion in oil until soft, along with bay leaf and celery seed. Stir in peas, barley, and lima beans. Add 8 cups water and bring to a boil. Cook on low heat, partially covered, for about an hour and a half.
  • Add salt, pepper, vegetables, and herbs. Turn heat down as low as possible and simmer another 30 to 45 minutes. Thin with additional water or stock as you like. Correct seasonings.
  • Makes about 8 to 9 cups.

I've served this hearty soup for as long as I can remember. I think the liquid smoke really flavors the soup nicely and the absence of ham is not a drawback. BE SURE NOT TO ADD ANY SALT OR PRODUCTS THAT CONTAIN SALT TO THE SOUP BEFORE THE SPLIT PEAS HAVE BECOME TENDER! I generally make this soup into a stew by adding more carrots and potatoes. This makes a large kettle of soup, so unless you're serving a lot of people, you won't need to double the recipe. The split peas will need to be soaked 1 hour before you begin making the soup (see directions).

1 (1 lb) package dried split peas
8 cups water
1 medium onion, diced fairly small
1 medium green bell pepper (dice slightly larger than 1/4-inch by 1/4-inch square. )
2 large potatoes, washed, peeled and diced 3/4-inch by 3/4-inch square (I use Yukon Gold or Golden Potatoes and because of the thin skin I don't peel them. I fill my soup p)
4 celery ribs (Also include celery leaves from the entire package of celery. Cut off leaves with a knife and chop. )
2 cups carrots (dice slightly larger than 1/4-inch by 1/4-inch square. I use fresh, long carrots. Peel carrots, if d)
2 tablespoons dried parsley flakes
1/8 teaspoon black pepper, freshly ground
2 garlic cloves, peeled and minced (fresh)
1 bay leaf (I use 2 bay leaves-remove sharp stem ends and leaf tips!)
1 (28 ounce) can whole tomatoes, cut into small cubes with stainless steel kitchen shears (RESERVE THE TOMATO JUICE)
1 teaspoon liquid smoke (grocery item)

Steps:

  • NOTE: The split peas will take 1 hour to soak before they can be used in the making of this soup (see below). There is also some time involved in preparing the vegetables. When the peas have soaked and the vegetables have been prepared, the soup will take 1 hour to cook.
  • Fill a medium soup pot with 8 cups of water.
  • Add the dried split peas.
  • Bring the water to a gentle boil; boil the peas for 2 minutes. Cover the pot with a lid and remove it from the heat source for 1 hour.
  • Add the remaining ingredients to the soup pot, EXCEPT for the TOMATOES, THE RESERVED TOMATO JUICE AND THE LIQUID SMOKE.
  • Bring the soup to a boil; reduce the heat to low and simmer, covered, for about 45 minutes or so, or until the peas are tender.
  • Add the tomatoes, the tomato juice, and liquid smoke. Cover the pot with a lid and continue to cook for an additional 30 minutes. Salt to taste. The soup/stew may be served with saltine soda crackers.

2 ¼ cups dried split peas
2 quarts cold water
1 ½ pounds ham bone
2 onions, thinly sliced
½ teaspoon salt
¼ teaspoon ground black pepper
1 pinch dried marjoram
3 stalks celery, chopped
3 carrots, chopped
1 potato, diced

Steps:

  • In a large stock pot, cover peas with 2 quarts cold water and soak overnight. If you need a faster method, simmer the peas gently for 2 minutes, and then soak for l hour.
  • Once peas are soaked, add ham bone, onion, salt, pepper and marjoram. Cover, bring to boil and then simmer for 1 1/2 hours, stirring occasionally.
  • Remove bone; cut off meat, dice and return meat to soup. Add celery, carrots and potatoes. Cook slowly, uncovered for 30 to 40 minutes, or until vegetables are tender.

1/2 cup olive oil
8 ounces pancetta, diced small
1 tablespoon garlic, chopped
1 tablespoon shallot, chopped
1 medium onion, diced small
3 stalks celery, diced small
2 carrots, diced small
1 (16 ounce) bag dried split peas, sorted and rinsed
2 quarts chicken stock
1 tablespoon thyme, fresh and chopped
1 tablespoon salt
1 1/2 teaspoons black pepper
4 -6 ounces fresh spinach

Steps:

  • In a stockpot, heat olive oil over medium heat. Add pancetta and cook out all the fat. Add garlic and shallot, saute until tender. Add onion, celery and carrot, saute until tender.
  • Stir in split peas; combine well. Add chicken stock, thyme, salt and pepper. Bring to a boil. Reduce heat and simmer until peas are soft and are falling apart. Remove from heat and cool slightly.
  • Place a few ladles of soup into a blender and add a couple handfuls of spinach. Blend until spinach is incorporated. Place soup in a second pot. Repeat with remaining soup and spinach. Warm soup over very low heat.
