Number Of Ingredients 20

6 whole chicken wings, cut into joints (tips discarded or saved for other use)
vegetable oil, for deep-frying
1 tablespoon seasoning salt
1 tablespoon crushed red pepper flakes
2 teaspoons black pepper
2 teaspoons cayenne pepper
2 teaspoons poultry seasoning
1 teaspoon lemon pepper
2 eggs
2 tablespoons hot sauce
1 tablespoon crushed red pepper flakes
1 teaspoon black pepper
1 teaspoon cayenne pepper
2 cups all-purpose flour
1 cup sour cream
2 tablespoons horseradish
1/2 tablespoon chili sauce
1/2 teaspoon cayenne pepper
salt
fresh ground black pepper

Steps:

  • Combine ingredients for dipping sauce and chill for 30 minutes or more to incorporate flavors.
  • Whisk together the seasoning salt, red pepper flakes, black pepper, cayenne pepper, poultry seasoning and lemon pepper, reserving 2 tablespoons separately.
  • Rinse chicken wings in cold water, pat dry, and place in a shallow baking sheet. Sprinkle with the seasoning and let them marinate, refrigerated and covered with plastic wrap, for 1 hour.
  • Whisk eggs, hot sauce, red pepper flakes, black pepper and cayenne pepper into a mixing bowl and set aside. Place flour in a shallow plate.
  • Heat cooking oil for deep frying to 350°F.
  • When the oil is hot, dredge chicken wings first in the egg mixture then the flour. Fry in small batches for 8-10 minutes, being careful not to crowd, turning occasionally, until cooked through and golden. Drain on paper toweling or brown paper bags, sprinkling with reserved spice for added spice level if desired.
  • When oil reheats to 350F, add a few more wings to the fryer. Repeat until all wings are cooked.
  • Serve with spicy dipping sauce.

Peanut oil, for frying
Kosher salt
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
3 pounds chicken wings, cut at joint
1/2 stick (2 ounces) butter
2 cloves garlic, chopped
1/2 cup peach preserves
1/4 cup hot sauce (recommended: Tabasco)
1 tablespoon soy sauce

Steps:

  • Preheat deep fryer with peanut oil to 350 degrees F.
  • Mix the 2 teaspoons salt, smoked paprika, and garlic powder together in a small bowl.
  • Add chicken wings and toss to coat.
  • Melt the butter in medium saucepan over medium heat with the garlic.
  • Stir in peach preserves, hot sauce, and soy sauce. Cook until syrupy and thick, about 5 minutes. Transfer to a large bowl.
  • Add the wings to the deep fryer and fry until cooked through and golden and crisp, 12 to 15 minutes. You will need to do this in 2 batches so you don't overcrowd your fryer.
  • Remove the wings from the fryer and drain on a paper towel-lined baking tray.
  • Add the fried wings to the large bowl of sauce and toss until well combined and wings are well coated. Using a slotted spoon, remove the wings to a platter and serve immediately.

2 teaspoons kosher salt
Oil for deep-fat frying
BUFFALO WING SAUCE:
3/4 cup Louisiana-style hot sauce
1/4 cup unsalted butter, cubed
2 tablespoons molasses
1/4 teaspoon cayenne pepper
SPICY THAI SAUCE:
1 tablespoon canola oil
1 teaspoon grated fresh gingerroot
1 garlic clove, minced
1 minced Thai chile pepper or 1/4 teaspoon crushed red pepper flakes
1/4 cup packed dark brown sugar
2 tablespoons lime juice
2 tablespoons minced fresh cilantro
1 tablespoon fish sauce
SPICY BARBECUE SAUCE:
3/4 cup barbecue sauce
2 chipotle peppers in adobo sauce, finely chopped
2 tablespoons honey
1 tablespoon cider vinegar
Thinly sliced green onions, optional

Steps:

  • Using a sharp knife, cut through the 2 wing joints; discard wing tips. Pat chicken dry with paper towels. Toss wings with kosher salt. Place on a wire rack in a 15x10x1-in. baking pan. Refrigerate at least 1 hour or overnight., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry wings in batches until skin is crisp and meat is tender, 8-10 minutes. Drain on paper towels., For Buffalo wing sauce, bring hot sauce just to a boil in a small saucepan. Remove from heat; whisk in butter 1 piece at a time. Stir in molasses and cayenne pepper., For Thai sauce, heat oil in a small saucepan over medium heat. Add ginger, garlic and chile pepper; cook and stir until fragrant, about 2 minutes. Stir in brown sugar and lime juice. Bring to a boil; cook until slightly thickened, about 5 minutes. Stir in cilantro and fish sauce., For barbecue sauce, heat prepared barbecue sauce in a small saucepan over medium heat. Stir in chipotle peppers, honey and vinegar. Bring to a boil; cook and stir until slightly thickened, about 5 minutes. , Toss wings with 1 of the sauces. If desired, sprinkle with green onion slices.

Steps:

  • In a small bowl whisk together seasoning salt, red pepper flakes, black pepper, cayenne pepper, poultry seasoning, and lemon pepper. Reserve 2 tablespoons in a separate bowl.
  • Rinse chicken wings in cold water and place into a shallow baking dish. Sprinkle the wings evenly with the seasoning, and let them marinate, covered and chilled, for 1 hour.

1/4 cup Danish blue cheese, crumbled
1/4 cup buttermilk
1/3 cup sour cream
1/4 teaspoon sugar
2 teaspoons apple cider vinegar
Salt and freshly cracked black pepper
2 teaspoons Neely's Dry Rub
2 teaspoons kosher salt
1/4 teaspoon cayenne pepper
Peanut oil, for frying
3 pounds chicken wings, cut at joint, washed and dried
1 to 2 tablespoons lemon-pepper seasoning
4 tablespoons salted butter
1 clove minced garlic
1/2 cup hot sauce (recommend: Texas Pete's)
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
1/4 teaspoon Worcestershire sauce
Carrot and Celery Sticks, for serving

Steps:

  • For the dipping sauce:
  • In a small bowl, mash the blue cheese into the buttermilk and sour cream. Mix in the sugar and the apple cider vinegar, and season with salt and pepper, to taste.
  • For the seasoning:
  • Mix the dry rub, salt, and cayenne together in a small bowl.
  • Preheat deep-fryer with peanut oil to 350 degrees F.
  • For the wings:
  • Add the wings to a large mixing bowl and season with the lemon-pepper seasoning and toss to coat. Allow to sit for a few minutes, so flavors can permeate into the chicken.
  • Add the wings to the deep-fryer and fry until cooked through and golden and crisp, 12 to 15 minutes. You may need to do this in batches.
  • Meanwhile, while wings are frying, melt butter in small saucepan over medium-low heat with the garlic. Transfer to a large bowl and whisk in the hot sauce, brown sugar, vinegar, and Worcestershire sauce until combined.
  • Remove wings from fryer and drain on a paper towel lined sheet tray. Immediately sprinkle with the seasoning.

1/2 cup hot pepper sauce
2 tablespoons cider vinegar
Carrots and celery sticks
Blue cheese dressing

  • Cut wings into three pieces; discard the wing tips.
