1 broiler/fryer chicken (3-1/2 pounds), skin removed and cut up
2 celery ribs, cut into chunks
1 small onion, quartered
1 teaspoon whole peppercorns
3/4 teaspoon salt
6 cups water
CHILI:
8 corn tortillas (6 inches), cut into 1/4-inch strips
4 teaspoons canola oil, divided
3 celery ribs, chopped
2 medium onions, chopped
2 garlic cloves, minced
1/4 cup all-purpose flour
1 tablespoon ground cumin
1 tablespoon chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
2 cans (15-1/2 ounces each) navy beans, rinsed and drained
2 medium tomatoes, chopped
1/2 cup reduced-fat sour cream
4 green onions, chopped
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • Place the first six ingredients in a Dutch oven. Bring to a boil. Reduce heat; simmer, covered, 1 hour or until chicken is tender. Remove chicken; cool slightly. Strain broth, discarding vegetables and peppercorns; skim fat from broth. Set broth aside., Preheat oven to 400°. Remove meat from bones; cut into bite-size pieces and set aside. Discard bones., In a bowl, toss tortilla strips with 1 teaspoon oil. Arrange strips on a baking sheet coated with cooking spray. Bake 8-12 minutes or until crisp, stirring once., In a large saucepan, heat remaining oil over medium-high heat. Add celery, onions and garlic; cook and stir 6-8 minutes or until tender. Stir in flour and seasonings until blended. Gradually add 4 cups chicken broth (save remaining broth for another use)., Bring to a boil; cook and stir 1-2 minutes or until slightly thickened. Stir in beans, tomatoes and chicken. Reduce heat; simmer, covered, 15 minutes longer. Top servings with baked tortilla strips, sour cream, green onions and cheese.

1 pound boneless, skinless chicken thighs
1/4 cup vegetable oil, plus more for drizzling
Kosher salt and freshly ground white pepper
3 celery stalks, cut into medium dice (about 1 cup)
1 medium onion, cut into medium dice (about 2 cups)
1 yellow bell pepper, cut into medium dice (about 1 cup)
1/4 cup all-purpose flour
4 cups (1 quart) chicken stock, warmed
Two 15-ounce cans Great Northern beans
Two 4-ounce cans chopped green chiles
2 teaspoons garlic powder
2 teaspoons ground cumin
1 teaspoon minced fresh rosemary
2 green tomatoes, cut into large dice (about 2 cups)
1/2 to 1 teaspoon cayenne, depending on how much spice you like
Sour cream, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Drizzle the chicken with some oil, season with salt and pepper and put on a baking sheet. Roast until the internal temperature registers 165 degrees F on a meat thermometer, 15 to 20 minutes. Set aside until cool enough to handle, then cut into large dice.
  • Meanwhile, add 1/4 cup oil to a large Dutch oven and heat over medium heat. When hot, add the celery, onions and bell peppers and saute until tender, 4 to 5 minutes. Add the flour, stir to coat the vegetables and cook until the flour starts to brown, about 3 minutes. Whisk in the warm chicken stock, stirring until combined. Add the beans, chiles, garlic powder, cumin, rosemary and green tomatoes and bring to a simmer, cooking until the mixture starts to thicken, 15 to 20 minutes.
  • Add the diced chicken and cayenne and season with salt and pepper. Cover and cook for another 10 minutes to warm through. Serve garnished with sour cream.

1 tablespoon olive oil
3 skinless, boneless chicken breast halves
1 large onion, chopped
2 cloves garlic, minced
5 ¼ cups chicken broth
3 (15 ounce) cans cannellini (white kidney) beans, rinsed and drained

1 tablespoon dried oregano
1 teaspoon ground cumin
2 pinches cayenne pepper, or to taste

Steps:

  • Heat olive oil in a Dutch oven over medium heat. Cook chicken, onion, and garlic in hot oil until the chicken is browned completely, 3 to 5 minutes per side.

2 (14.5-ounce) cans white beans
1 tablespoon canola oil
1 medium jalapeno pepper, minced
2 medium poblano peppers, chopped
1 large onion, chopped
4 garlic cloves, minced
Kosher salt and freshly ground black pepper
1 tablespoon ground cumin
1 1/2 teaspoons ground coriander
1 teaspoon ancho chili powder
4 cups low-sodium chicken broth
2 limes, juiced, plus lime wedges, for serving
1 rotisserie chicken, skin removed and meat shredded
1/4 cup chopped cilantro leaves
Sour cream, for topping
Tortilla chips, coarsely crushed, for topping

Steps:

  • Drain and rinse the canned white beans. In a medium bowl, mash half of the beans with a potato masher until chunky. Reserve the beans until needed.
  • Add the canola oil to a large Dutch oven and heat it over medium-high heat. Add the peppers, onions, and garlic and saute until soft and fragrant, about 5 minutes. Season the vegetables with salt, and pepper, to taste. Add the cumin, coriander, and chili powder and continue to saute for 1 more minute to toast the spices. Stir in the chicken stock, and lime juice and bring to a simmer. Add the beans and continue to simmer for 20 more minutes.
  • After 20 minutes of simmering, taste for seasoning, and adjust if necessary. Stir in the shredded rotisserie chicken and cilantro and simmer until heated through, about 5 more minutes. Serve the chili in individual bowls topped with a dollop of sour cream, crushed tortilla chips, and lime wedges.

1 onion, chopped
2 poblano peppers, chopped
1 jalapeño, chopped (seeds removed, if you don't like it spicy!)
1 tbsp. ground cumin
1 tsp. ground coriander
1 tsp. chili powder
1/2 tsp. black pepper
2 tsp. dried oregano
4 c. chicken broth, divided
3 tbsp. cornmeal or masa harina
2 15 oz. cans white beans (such as cannellini or great northern beans), drained and rinsed
1 4 oz. can chopped green chilis
1 c. frozen corn
3 c. cooked chicken (from 1 rotisserie chicken)
1/2 c. heavy cream
2 tbsp. fresh lime juice
2 tbsp. chopped cilantro leaves, plus more for serving
Tortilla chips, shredded Monterey Jack cheese and/or sour cream, for serving

Steps:

  • Heat a large Dutch oven over medium-high heat. Add the olive oil, then onion and poblano pepper. Season with ½ teaspoon of salt and cook until slightly softened, stirring occasionally, about 5 minutes. Add the garlic and jalapeño and cook for 2 more minutes. Add the cumin, coriander, chili powder, black pepper, and oregano and cook 1 more minute, or until fragrant.
  • In a small measuring cup, whisk together ½ cup of chicken broth and the cornmeal or masa harina.
  • Add the remaining 3 ½ cups chicken broth, cornmeal mixture, white beans, canned green chilis, and frozen corn to the Dutch oven. Bring to a simmer and cook, stirring occasionally, for 10 minutes, over medium heat. Stir in the cooked chicken and cook for 5 more minutes. Stir in the heavy cream, lime juice and cilantro and remove from the heat. Season with the remaining ½ teaspoon of salt, plus more to taste.
  • Serve topped with additional cilantro, sour cream, tortilla chips and shredded cheese, if you like.

WHITE CHICKEN CHILI

From America's Test Kitchen. A very thick, filling chili. If you like yours more soup-like, I would suggest adding a little more chicken broth. We like our soups thick, so this was perfect for our tastes. Adjust the heat in this dish by adding the minced ribs and seeds from the jalapeño at the end of cooking time. If Anaheim chiles cannot be found, add an additional poblano and jalapeño to the chili. This dish can also be successfully made by substituting chicken thighs for the chicken breasts. If using thighs, increase the cooking time to about 40 minutes. Serve chili with sour cream, tortilla chips, and lime wedges.

1 tablespoon vegetable oil
3 medium jalapeno chiles
3 poblano chiles, stemmed, seeded, and cut into large pieces (medium)
3 anaheim chilies, stemmed, seeded, and cut into large pieces (medium)
2 medium onions, cut into large pieces (2 cups)
6 medium garlic cloves, minced (about 2 tablespoons)
1 tablespoon ground cumin
1 1/2 teaspoons ground coriander
2 (14 1/2 ounce) cans cannellini beans, drained and rinsed
3 cups low sodium chicken broth
3 tablespoons fresh lime juice (from 2 to 3 limes)
1/4 cup minced fresh cilantro leaves
4 scallions, white and light green parts sliced thin

Steps:

  • Season chicken liberally with salt and pepper. Heat oil in large Dutch oven over medium-high heat until just smoking. Add chicken, skin side down, and cook without moving until skin is golden brown, about 4 minutes. Using tongs, turn chicken and lightly brown on other side, about 2 minutes. Transfer chicken to plate; remove and discard skin.
  • While chicken is browning, remove and discard ribs and seeds from 2 jalapeños; mince flesh.
  • In food processor, process half of poblano chiles, Anaheim chiles, and onions until consistency of chunky salsa, ten to twelve 1-second pulses, scraping down sides of workbowl halfway through.
  • Transfer mixture to medium bowl. Repeat with remaining poblano chiles, Anaheim chiles, and onions; combine with first batch (do not wash food processor blade or workbowl).
  • Pour off all but 1 tablespoon fat from Dutch oven (adding additional vegetable oil if necessary) and reduce heat to medium. Add minced jalapeños, chile-onion mixture, garlic, cumin, coriander, and 1/4 teaspoon salt. Cover and cook, stirring occasionally, until vegetables soften, about 10 minutes. Remove pot from heat.
  • Transfer 1 cup cooked vegetable mixture to now-empty food processor workbowl. Add 1 cup beans and 1 cup broth and process until smooth, about 20 seconds.
  • Add vegetable-bean mixture, remaining 2 cups broth, and chicken breasts to Dutch oven and bring to boil over medium-high heat.
  • Reduce heat to medium-low and simmer, covered, stirring occasionally, until chicken registers 160 degrees (175 degrees if using thighs) on instant-read thermometer, 15 to 20 minutes (40 minutes if using thighs).
  • Using tongs, transfer chicken to large plate.
  • Stir in remaining beans and continue to simmer, uncovered, until beans are heated through and chili has thickened slightly, about 10 minutes.
  • Mince remaining jalapeño, reserving and mincing ribs and seeds (see note above), and set aside.
  • When cool enough to handle, shred chicken into bite-sized pieces, discarding bones. Stir shredded chicken, lime juice, cilantro, scallions, and remaining minced jalapeño (with seeds if desired) into chili and return to simmer.
  • Adjust seasonings with salt and pepper and serve.

1 large yellow onion, chopped
1 tablespoon olive oil
2 teaspoons garlic powder
1 tablespoon ground cumin
2 teaspoons dried oregano
1/2 teaspoon white pepper

1 (10 ounce) can original rotel
1 (10 ounce) can hot rotel
2 (15 ounce) cans great northern beans, drained
1 (4 ounce) can chopped green chilies
32 ounces low sodium chicken broth
1 rotisserie chicken, shredded
1 cup sour cream
1/2 cup heavy cream

Steps:

  • Sauté onions in olive oil until softened, about 10 minutes. Add spices & sauté briefly.
  • Add Rotel, beans, green chiles & chicken broth. Bring to a boil, then reduce heat to a simmer.
  • Add shredded chicken and simmer uncovered for 30 minutes, stirring occasionally.
  • Reduce heat to low and add sour cream & heavy cream. Be careful not to allow soup to boil again once they have been added.
  • Serve with tortilla chips, diced avocado & a sprinkle of chopped fresh cilantro, if desired.

1 lb great northern bean (soaked in water overnight)
2 medium Spanish onions, chopped
6 cups diced cooked chicken
2 jalapeno peppers, seeded diced
2 diced chili peppers
1 teaspoon oregano, heeping
2 teaspoons cumin
1 teaspoon cayenne pepper
2 garlic cloves, minced
1 cup salsa
1 tablespoon vegetable oil
salt

Steps:

  • Simmer beans, half the onions, and half the garlic for 2 hours in the chicken stock or until the beans soften, stirring frequently.
  • Add chicken and salsa.
  • Sauté pepper, spices, and the remaining onions and garlic in the oil and add to the chili.
  • Simmer for one more hour.
  • Garnish with Sour cream or Monterey Jack Cheese.
