Number Of Ingredients 14

1/3 cup sugar
1 tablespoon cornstarch
1 to 1-1/2 teaspoons ground mustard
1 teaspoon salt
1/2 teaspoon celery seed
1/2 cup milk
1/4 cup vinegar
1 egg, beaten
1/4 cup butter, cubed
1/4 cup chopped onion
1/4 cup mayonnaise
7 medium red potatoes, cubed and cooked
3 hard-boiled large eggs, chopped
Lettuce leaves and paprika, optional

Steps:

  • In a saucepan, combine sugar, cornstarch, mustard, salt and celery seed. Stir in the milk, vinegar and beaten egg until smooth. Add butter. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Cool. Stir in onion and mayonnaise., In a large bowl, combine potatoes and hard-boiled eggs. Add dressing and toss gently to coat. Cover and refrigerate for at least 1 hour. If desired, serve in a lettuce-lined bowl and sprinkle with paprika.

Number Of Ingredients 7

1 pound frozen Southern-style hash brown potatoes
1 (10.75 ounce) can condensed Cream of Chicken soup
1 (16 ounce) container sour cream
2 teaspoon seasoning salt
2 cups shredded Cheddar cheese
1/2 cup butter, melted
1 cup crushed cheese flavored crackers

Steps:

  • Preheat oven to 350*. In a medium saucepan, mix together soup, sour cream, seasoning salt and cheese. Heat until cheese melts. Place hash browns in 8x11 baking dish and pour cheese mixture over top. Mix together well. Salt and pepper to taste, if desired. Top the mixture with crushed cheese crackers. Bake 60 minutes in the preheated oven, or until the mixture is bubbly and lightly brown. Remove from oven and let stand 15 minutes before serving.

Now every family has a version of this potato casserole. I've heard it called funeral potatoes, Aunt Betty's potatoes, party potatoes, cheesy potatoes, Potatoes Romanoff and my family's version, patio potatoes. Now where this recipe originates is beyond me, but I remember it fondly at my Cousin, Lori and her husband, Allan's home. Then a few years later, my cousin put together a book of family recipes, called Relatively Cooking. In this was my very own copy of her delectable dish....

2 cups Cheddar Cheese
12 oz Sour cream
1 Cream of chicken
1 tsp Season salt
1 tsp Black pepper
½ tsp Garlic powder
2 lbs Southern style Hash browns
2 cups Better cheddar crackers

Steps:

  • Melt first 6 ingredients together in a sauce pan. Mix together with frozen hash browns and place into a greased 9x13 pan.
  • Sprinkle crackers on top and bake at 350°F for 1 hour of until golden and bubbly.

Great served as a side dish for breakfast, lunch, or dinner! Always a hit at every family function. The frosted flakes give them a little sweetness... you could substitute corn flakes if that is more your taste.

2 lbs of thawed shredded hash browns
2 cups frosted flakes

Steps:

  • Preheat oven at 350 degrees.
  • Mix all ingredients together, except for 1/4 cup of butter.
  • Crush 2 cups frosted flakes with 1/4 cup melted butter and sprinkle on top.
  • Bake for 55 min in a 9 x 13 pan.

1/2 pound bacon strips, chopped
1 large onion, chopped
2 garlic cloves, minced
6 cans (15 ounces each) pinto beans, rinsed and drained
4 cans (8 ounces each) tomato sauce
2 cans (4 ounces each) chopped green chiles
1/3 cup packed brown sugar
1 teaspoon chili powder
3/4 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350°. In a Dutch oven, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan., Add onion to drippings; cook and stir over medium heat 6-8 minutes or until tender. Add garlic; cook 1 minute longer. Stir in beans, tomato sauce, green chiles, brown sugar and seasonings. Sprinkle top with bacon. Bake, covered, 60-70 minutes or until heated through. Freeze option: Freeze cooled bean mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add water if necessary.
