Very popular in the Canary Islands, these roast pork sandwiches are sure to please! The meat is juicy, and tender. Perfect for a picnic!

3 -4 garlic cloves
sea salt
1 1/2 teaspoons paprika (I like smoky)
1/2 teaspoon thyme
1/2 teaspoon oregano
1/4 cup olive oil
3 lbs pork sirloin roast (bone in, the roast should have a fair amount of fat on top)
2 -3 crusty French baguettes, sliced lengthwise
salt

Steps:

  • Using a mortar and pestle, mash garlic cloves and sea salt.
  • Once creamy, add paprika, thyme, oregano and olive oil; combine well.
  • Rub roast all over with this mixture.
  • Place uncovered in a preheated 350 degree Fahrenheit oven.
  • Bake 3 to 4 hours or until cooked through.
  • Remove from oven and allow to stand 15 minutes before slicing.
  • Slice into very thin slices.
  • Serve on crusty baguettes, lightly salted.

SLOW COOKER ITALIAN-STYLE PORK ROAST

If you are a pork roast enthusiast, this is definitely one to add to your collection. The pork is simmered in a tomato sauce, and served over hot rice or noodles. The recipe calls for beans, I did not use any since my kids don't like them.

2 teaspoons garlic, minced
1 teaspoon salt (optional)
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves
1/4 teaspoon red pepper flakes
2 -3 lbs boneless boston pork roast
1 large onion, quartered and thinly sliced
1 1/2 cups tomato and basil pasta sauce (I used recipe # 22280) or 1 1/2 cups marinara sauce (I used Homemade Pizza Sauce)
2 -16 ounces great northern beans or 2 -16 ounces cannellini beans, rinsed and drained
1/4 cup shredded fresh basil (optional) or 1/4 cup chopped Italian parsley (optional)

Steps:

  • Combine garlic, salt, basil, oregano and red pepper flakes in small bowl; rub over roast.
  • Place half of onion slices into slow cooker. Cut roast in half to fit into slow cooker. Place one half of roast over onion slices; top with remaining onion slices and other half of roast. Pour pasta sauce over roast. Cover; cook on LOW 8 to 9 hours until roast is fork tender.
  • Remove roast from cooking liquid; tent with foil. Let liquid in slow cooker stand 5 minutes to allow fat to rise. Skim off fat.
  • Stir beans into liquid. Cover; cook on HIGH 10 to 15 minutes or until beans are hot. Cut pork. Serve with beans mixture and garnish wi fresh basil, if desired.
  • I did not use the beans, so I used corn starch to thicken the liquid and spooned it over the rice and pork.

BAKED PORK ROAST

If you like a juicy, tender pork roast, this one will work for you. I developed the recipe last year after tiring of bland, mundane pork roasts. The basting that this recipe calls for is well-worth the effort. The prep time includes the marinating time. Enjoy! big pat.

2 1/2 lbs boneless pork roast, thawed
1 cup water
1/2 teaspoon five-spice powder
1/2 cup soy sauce
1/2 cup sorghum molasses or 1/2 cup brown sugar
4 tablespoons port wine or 4 tablespoons madeira wine
6 fresh garlic cloves, crushed
4 teaspoons fresh ginger, minced

Steps:

  • Mix the marinade ingredients together in a large mixing bowl, whisking.
  • Poke the pork roast 10-12 times deeply with a fork to allow the marinade to penetrate it.
  • Place the roast in a casserole dish and pour the marinade over it. Allow it to marinate in the refrigerator for 4 hours. (Some people like to do this in a large zip-lock bag and that is fine). Make sure to turn the roast a couple of times during the marinating process.
  • At the end of the four hours, elevate the roast slightly in a roaster pan or Dutch Oven with a small rack or oven proof saucer. Pour in the cup of water, along with the marinade, so that the liquid doesn't actually touch the roast if possible.
  • Cover the roasting pan and bake in a pre-heated 300-degree F. oven for 2 hours. Then, reduce the heat to 275-degrees and bake for an additional 45 minutes. You should baste the roast 4 times during the baking process.
  • At the end of the 45 minutes, remove the cover and broil the roast for 5-15 minutes until it is nicely golden brown on top.
  • After browning, remove the roast from the oven and allow it to "rest", covered for 20 minutes before slicing.

1/4 teaspoon sea salt
1/2 teaspoon pepper
1/4 teaspoon thyme
1/4 teaspoon rosemary
1/4 teaspoon sage
1/4 teaspoon marjoram
1/4 teaspoon dry mustard
1/4 teaspoon ground cloves
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon oregano
2 -3 tablespoons extra virgin olive oil
3 -4 lbs pork roast or 3 -4 lbs pork shoulder
3 -4 large red potatoes
1 1/2-2 cups carrots (or both) or 1 1/2-2 cups green beans (or both)

Steps:

  • Preheat oven to 350f.
  • Mix all spices and oil together. If needed, add more oil to produce a thick molasses-like consistency. Rub mixture on roast and place in roasting pan. Cover with foil and bake approximately 30 mins per pound until internal temperature is at least 165f.
  • About an hour before it's finished, add a little water to the bottom of the pan and add lightly seasoned (salt/pepper/oregano), cut potatoes and carrots or green beans. Do not cover the vegetables with the water. Do recover the roast with foil to avoid drying it out.
