6 tablespoons butter
24 large shrimp, peeled and deveined
2 tablespoons minced green onions
1 small jalapeno peppers, seeded and thinly sliced or 7 ounces canned whole green chilies, julienned
1/2 cup dry white wine
1 1/2 cups orange juice
3/4 cup whipping cream or 3/4 cup half-and-half
salt, to taste
pepper, to taste
12 ounces angel hair pasta, cooked to package directions
fresh parsley, for garnish

Steps:

  • Prepare pasta according to package directions.
  • Meanwhile, melt butter in a large skillet over medium heat. Add shrimp and cook until pink, about 1 minute per side. Remove from skillet and set aside.
  • Add green onions and jalapeno to skillet and saute 1 minute. Add wine and bring to a boil. Mix in orange juice and cream. Boil until reduced to thin sauce, stirring occasionally, about 10 minutes. Add salt and pepper, if desired.
  • Add shrimp to sauce and cook until heated through. Add pasta and toss well. Sprinkle with minced fresh parsley and serve.

1 1/2 lbs medium shrimp, peeled and deveined (about 10-13 per serving)
4 garlic cloves, minced
1/4 cup parsley, chopped
1/3 cup white wine
1 teaspoon butter
2 tablespoons olive oil (light oil)
1/4 cup water (reserved from pasta)
1/4 cup parmesan cheese, grated
salt and pepper
2/3 lb pasta (linguini is the classical pasta, but it's up to you)

Steps:

  • Heat a large pot of water to the boil, add 1 tsp salt and pasta (cooking time about 11 minutes), then start your sauce.
  • When pasta is done, usually at the most critical point of cooking the sauce, reserve 1/4 cup of pasta water, and drain the pasta.
  • Put butter and olive oil into a large frying pan over medium-high heat and add the garlic when the butter melts.
  • Cook garlic, stirring constantly, until it becomes soft, but not browned at all, about 3-4 minutes.
  • Add shrimp and briefly stir into the oil, then add the parsley, stir again and add the wine, half the pasta water and a good grind of pepper.
  • Reduce heat to medium and cook, stirring occasionally, until the shrimp are just done.
  • Add the pasta and Parmesan cheese to the shrimp pan and toss thoroughly.

20 large shrimp (about 1 pound), peeled and deveined (tails left intact; optional)
3 garlic cloves, minced
1/2 jalapeno chile (stem, ribs, and seeds removed), finely chopped
1 tablespoon fresh lime juice
3 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper

Steps:

  • Toss together shrimp, garlic, jalapeno, lime juice, and 1 tablespoon oil; season with salt and pepper. Marinate in refrigerator for 45 minutes.
  • Heat remaining 2 tablespoons oil in a large skillet over medium-high heat. Remove shrimp from marinade, and add to skillet; cook through, about 2 minutes per side.

6 tablespoons (3/4 stick) unsalted butter
24 large shrimp, peeled and deveined
2 tablespoons minced shallots
1 small jalapeño, seeded, thinly sliced
1/2 cup dry white wine
1 1/2 cups orange juice
3/4 cup whipping cream
Salt and pepper to taste
12 ounces angel-hair pasta
1/4 cup chopped fresh parsley

Steps:

  • Put a large pot of water on to boil for the pasta. In a heavy large skillet over medium-high heat, melt butter. Add shrimp and cook until just pink, about 1 minute per side. Transfer shrimp to plate. Add shallots and jalapeño to skillet and sauté 1 minute. Add wine and bring to a boil. Mix in orange juice and cream. Boil until reduced to thin sauce, stirring occasionally, about 15 minutes. Season to taste with salt and pepper. (Can be prepared 4 hours ahead. Cover and refrigerate shrimp and sauce separately.) When water comes to a boil, add pasta and cook until al dente, stirring occasionally to prevent sticking. Drain. Bring sauce to simmer. Add shrimp and cook until just heated through. Add pasta and toss well. Divide pasta among 4 plates. Sprinkle with fresh parsley and serve.

1 tablespoon chopped cilantro
3 tablespoons orange juice concentrate, undiluted
1/8 teaspoon hot red pepper flakes, optional
2 shakes salt
3/4 pound cooked peeled shrimp
1 teaspoon canola oil

Steps:

  • Grate lime rind, and squeeze 1 tablespoon juice into a large bowl.
  • Wash, trim, seed and mince jalapeño; wash, chop cilantro. Add to bowl, with juice concentrate, pepper flakes and salt. Stir in shrimp.
  • Heat oil in nonstick pot until it is medium hot. Add shrimp and sauce, and heat, about one minute.
