Quick and easy to make with a few ingredients, this Roasted Red Pepper & Sun-Dried Tomato Pasta Sauce is extremely tasty and flavorful!

1/2 cup(s) oil-packed sun-dried tomatoes, drained and oil reserved
olive oil, if needed
1/2 cup(s) red onions, finely chopped
1/2 cup(s) roasted red peppers, chopped
5 large cloves garlic, pressed
1/2 teaspoon(s) red pepper flakes
2 cup(s) 35% heavy cream
1 teaspoon(s) dried basil
1 1/2 teaspoon(s) cornstarch mixed with 1/2 cup cold water
pasta of your choice (such as rigatoni, penne), cooked

Steps:

  • Measure reserved oil from sun-dried tomatoes to make 1 ½ tbsp. If there's not enough, top it up with olive oil.
  • In a saucepan over medium heat, add fragrant oil. When hot, add onions and sauté for 2 ½ minutes. Add sun-dried tomatoes and cook for 2 minutes. Add roasted red peppers and garlic; sauté for 1 minute. Add red pepper flakes, stir well to combined before pouring in heavy cream. Stir, increase heat to medium-high and bring to a simmer.
  • When simmer, reduce heat to medium-low and cook for 5 minutes, stirring occasionally. Add dried basil and cornstarch mixture; stir for about 60 seconds or until sauce thickens. Add cooked pasta, stir to coat and serve immediately. Makes 4 servings
  • Note: Add chicken breast and chopped cooked pancetta for a variation

Number Of Ingredients 12

Salt and freshly ground black pepper
1 pound pasta of your choice (I prefer short ones like rigatoni, penne, etc.)
1 tablespoon extra-virgin olive oil
2 tablespoons butter
3 cloves garlic, minced
1/2 large onion, finely diced
One 16-ounce jar roasted red peppers, drained and roughly chopped
1 cup vegetable or chicken broth
1/4 cup heavy cream
2 tablespoons finely minced fresh parsley, plus more for serving
Several leaves fresh basil, chopped, plus more for serving
1/2 cup Parmesan shavings, plus more for serving

Steps:

  • Bring a large pot of salted water to a boil. Cook the pasta according to the package directions.
  • Meanwhile, add the oil and butter to a large skillet over medium-high heat and melt the butter. Add the garlic and onions and saute until starting to soften, 2 to 3 minutes. Add the chopped red peppers and cook until hot, 2 to 3 minutes.
  • Carefully transfer the contents of the skillet to a food processor or blender. Put on the lid and puree the pepper mixture until totally blended (there will still be some texture to the peppers).
  • Pour the pepper puree back into the skillet. Add the broth, 1/2 teaspoon salt and some pepper, and stir until heated. Splash in the cream and stir to combine. Add the parsley and basil and stir to combine. Taste and adjust the seasoning if you need to.
  • Drain the pasta and add it to the skillet. Add the Parmesan, and then stir it together to coat the pasta.
  • Serve in bowls with extra Parmesan and a sprinkling of parsley and basil on top.

My variation of a "Build your Own Pasta Dish" concoction that I made up at the Macaroni Grill. Mine tastes better!!

1 lb bow tie pasta
1 tablespoon olive oil
4 cloves garlic, pressed
1/2 cup onion, diced
3/4 cup sun-dried tomato packed in oil, drained and chopped
1 (7 ounce) jar roasted red peppers, drained and chopped
1/2 cup basil, chopped (firmly packed)
5 green onions, sliced
1 can water-packed artichoke hearts, sliced
1/2 cup asiago cheese
1 cup whipping cream
1 teaspoon red pepper flakes
1 cup reserved pasta water

Steps:

  • Cook Bowties according to package directions.
  • Reserve 1 cup of the cooking water.
  • Heat oil in a large pan.
  • Add garlic and onion, cook until translucent.
  • Add tomatoes and roasted peppers.
  • Cook for 3 minutes; stir in red pepper flakes.
  • Add artichoke hearts and cook for 3 minutes.
  • Add whipping cream and asiago cheese.
  • Allow to simmer until it starts to thicken.
  • Stir in basil and green onion.
  • Season with salt and pepper if desired.
  • Toss with bowties.
  • Add 1 cup reserved pasta water to make it saucier.

12 ounces linguine, broken in half
1 cup packed basil leaves
1 cup coarsely chopped roasted red peppers
1/2 cup sliced oil-packed sun-dried tomatoes
3-4 large garlic cloves, pressed
4 1/2 cups water
2 tablespoons oil from the jar of sun-dried tomatoes (or regular olive oil)
1 tablespoon kosher salt, plus more to taste
Pinch red pepper flakes
Freshly ground black pepper, to taste
8 ounces brie cheese, rind removed and torn into pieces
Grated parmesan, for serving
Good quality olive oil, for serving

Steps:

  • Combine linguine, basil, roasted peppers, sun-dried tomatoes, and garlic in a 3-quart straight-sided skillet. Add the water, olive oil, salt, red pepper flakes, and a generous amount of black pepper and bring to a full rolling boil over high heat. Using tongs, stir and turn the pasta frequently to prevent sticking. Cook until al dente, approximately 9 to 10 minutes. Remove the skillet from the heat. (If there is still a little bit of cooking water pour some, but not all, into a separate bowl.) Add the brie and toss with tongs until creamy and melted. Season with additional salt and pepper, to taste. The sauce will naturally thicken up after a couple of minutes. Serve with grated Parmesan and a swirl of good olive oil. (If the pasta does seem to need liquid, add back a few splashes of reserved cooking liquid.)
