Here's what you need: farfalle pasta, olive oil, hot italian sausages, sweet italian sausages, red bell pepper, green bell pepper, yellow bell pepper, white onion, garlic, diced tomato, oregano, salt, black ground pepper

1 lb farfalle pasta, or any short pasta
1 tablespoon olive oil
3 hot italian sausages
3 sweet italian sausages
1 red bell pepper, large, diced
1 green bell pepper, large, diced
1 yellow bell pepper, large, diced
½ white onion, sliced
2 cloves garlic, sliced
28 oz diced tomato
1 teaspoon oregano
1 teaspoon salt
1 teaspoon black ground pepper

Steps:

  • Bring a large pot of water to a rolling boil, add a generous amount of salt, and cook pasta 2 minutes less than the package instructions.
  • Strain pasta and set aside. Toss with a small amount of oil to prevent sticking
  • In the same pot, heat 1 tbsp of olive oil and fry sausages, working in batches as needed, until deeply browned on all sides.
  • Remove sausages, slice in ¾-inch (2 cm) rings, and set aside.
  • Sauté all of the bell peppers, onion, and garlic for about 2 minutes.
  • Add the canned tomatoes, all of the spices, and the sausage slices to the pot.
  • Simmer about 10 minutes.
  • Add the pasta back to the pot and stir gently until all the ingredients are coated in the sauce. Continue simmering until pasta is al dente.
  • Serve with grated parmesan.

Freshly roasted peppers give this hearty pasta a smoky taste. If you like, you can use jarred peppers, thinly sliced, instead of making your own, and skip step 1.

2 medium red bell peppers, four flat sides sliced off core, ribs and seeds discarded
2 medium yellow bell peppers, four flat sides sliced off core, ribs and seeds discarded
Coarse salt and ground pepper
1 pound orecchiette or other short pasta
2 teaspoons olive oil
1 pound sweet Italian sausage, removed from casings
1 tablespoon butter, cut into small pieces
1/3 cup grated Parmesan cheese

Steps:

  • Heat broiler. Place peppers, skin side up, on a foil-lined baking sheet; broil 4 inches from heat until charred, 18 to 20 minutes. Transfer to a large bowl. Cover with plastic wrap; steam 2 to 3 minutes. Using a paper towel, rub off pepper skins, reserving any juices in bowl. Thinly slice peppers crosswise into 1/4-inch strips; return to bowl. Set aside.
  • In a large pot of boiling salted water, cook pasta until al dente, according to package instructions. Drain, reserving 1/2 cup pasta water.
  • Meanwhile, heat oil in a large skillet over medium heat. Cook sausage, breaking it up with a spoon, until browned, 7 to 10 minutes. Add roasted peppers; cook until heated through.
  • Transfer sausage mixture to bowl; add pasta, butter, reserved pasta water, and Parmesan. Season with salt and pepper. Toss to combine.

This is from the Ronzoni pasta box and it is delicious. Love roasting the vegetables in the oven with the peppers, before adding any tomatoes. I use 6-inch long chicken Italian sausages, and just cut into 1-inch chunks before they go in the oven.

1 large red bell pepper, sliced into thin strips
1 large green bell pepper, sliced into thin strips
1 large onion, thinly sliced
2 -4 large garlic cloves, minced
3 tablespoons extra virgin olive oil
1 teaspoon dried basil leaves
1 lb rope-style Italian sausage, cut into 4 equal pieces
2 (14 ounce) cans diced tomatoes with juice, undrained
1 (12 ounce) package egg fettuccine, uncooked
1/4 cup freshly grated parmesan cheese

Steps:

  • Heat oven to 450 degrees F.
  • In a 13 x 19 x 2 inch baking dish, toss peppers, onion, garlic, olive oil and basil; spread in an even layer.
  • Add sausage pieces.
  • Bake 25 minutes, uncovered, stirring half-way through baking time.
  • Stir in tomatoes with juice; bake 10 more minutes.
  • Meanwhile, cook pasta according to package directions; drain.
  • Remove sausage and cut into thin slices; stir back into pepper mixture.
  • Toss hot pasta and pepper mixture; sprinkle with parmesan cheese.

Years ago, I stayed with an Italian friend in Bologna who worked long hours at his job. By the time he got home, he was hungry, so he'd start water boiling and cast about his tiny kitchen to see what he could use for dinner. Then, to my fascination, he'd whip up a delicious pasta sauce from almost nothing: a few anchovies and some walnuts, or a can of tuna and another of beans. Yesterday's bread became today's bread crumbs, browned in olive oil with garlic and tossed with spaghetti, olives, capers and jarred tomato purée. I try to keep a jar of roasted peppers handy at all times. They're useful for panini, pizzas and especially pastas like this one. Spanish piquillo peppers are particularly sweet, but bell peppers will do as well. If you have basil, it's delicious in this dish - but not required.

2 garlic cloves, minced
1 cup thinly sliced roasted sweet red peppers

4 large basil leaves, cut in slivers chiffonade optional
3 ounces goat cheese, crumbled
3/4 pound pasta, any shape

Steps:

  • Bring a large pot of water to a boil. Meanwhile, heat the olive oil over medium heat in a large, heavy skillet. Add the garlic. Cook, stirring, until fragrant, about 30 seconds. Add the sliced roasted peppers, and stir together for about a minute until well infused with the oil and garlic. Season with salt and pepper, and stir in the basil (if using) and goat cheese. Remove from the heat.
  • When the water comes to a boil, salt generously and add the pasta. Cook until al dente - firm to the bite - following the recommendations on the package. Ladle about 1/2 cup of the pasta cooking water into the frying pan, and stir well so that the goat cheese begins to melt. Drain the pasta, and toss immediately with the pepper mixture in the pan. Serve.

2 tablespoons extra-virgin olive oil, plus more for skillet and drizzling
4 ounces Parmigiano-Reggiano, grated (1cup)
1/3 cup almonds, toasted and chopped
12 ounces spicy Italian sausage, casings removed
1 jar (12 ounces) roasted peppers, drained and chopped
4 teaspoons sherry vinegar
12 ounces orecchiette
Kosher salt and freshly ground pepper
2 cups baby arugula

Steps:

  • Heat a large nonstick skillet over medium 2 minutes; brush lightly with oil. Sprinkle evenly with 1/3 cup cheese and almonds; cook until crisp and browned on bottom, about 2 minutes. Scrape onto a plate; let cool, then crumble. Return skillet to medium-high heat; swirl in oil. Add sausage and cook, breaking up with a spoon, until browned and cooked through, about 6 minutes. Add peppers and 3 teaspoons vinegar; cook 1 minute.
  • Cook pasta in a pot of salted water 1 minute less than package instructions. Reserve 1/2 cup pasta water, then drain. Add pasta and remaining 2/3 cup cheese to skillet; toss to coat, adding enough reserved pasta water to create a silky sauce.
  • In a bowl, toss arugula with remaining 1 teaspoon vinegar and a drizzle of oil; season to taste. Serve over pasta with frico.
