1/2 pound bacon (, diced)
1 pound broccoli (, cut into 1-inch florets)
4 tablespoons unsalted butter
4 cloves garlic (, minced)
1/4 teaspoon cracked red pepper flakes
1 teaspoon kosher salt
3 1/2 cups low-sodium chicken broth
12 ounces angel hair pasta (, broken in half)
1/2 cup freshly grated Parmesan cheese (, plus more for serving)

Steps:

  • In a large nonstick skillet, cook bacon over medium-high heat until browned and crispy, about 5-6 minutes. With a slotted spoon, transfer to a paper-towel lined plate. Drain all but 1/2 tablespoon grease from the pan.
  • Add butter to the pan. Once melted, stir in the garlic, red pepper flakes, and salt. Add in the broccoli and toss to coat.
  • Pour in the chicken broth; bring to a boil. Add in the pasta and cook for 4-5 minutes until pasta is al dente and broccoli is tender. Sprinkle with the cheese, reduce heat to low, cover the pan and allow to steam for an additional 1-2 minutes to absorb any remaining liquid.
  • Add cooked bacon back to the pan and toss gently to combine.
  • Divide into bowls and serve with more Parmesan at the table.

4 strips of bacon (cut into chunks)
2 cloves garlic (minced)
2 cups dry rigatoni pasta ((or other small shape like penne))
2 cups heavy cream
1 1/2 cups low-sodium chicken broth
1/2 teaspoon salt ((and pepper to taste))
1/4 teaspoon crushed red pepper
2 cups broccoli florets
1/4 cup grated Parmesan cheese ((more for sprinkling on top))

Steps:

  • In a large saucepan, pot or Dutch oven, cook the bacon until crispy. Remove bacon from pan and drain on paper towels. Drain fat from the pot leaving about 1 tablespoon in the pot.
  • Add the garlic and sautee for about 30 seconds. Add the uncooked pasta, cream, chicken broth, salt (and pepper), and crushed red pepper. Stir. Bring to a boil then reduce to a simmer. Cover and cook for about 6 minutes making sure to stir once in a while and keep noodles covered in liquid.
  • Add the broccoli to the pot and cook another 5-7 minutes or until the broccoli is soft. Continue cooking until sauce is a little thicker. It will be thin and then thicken towards the end. Stir in the Parmesan and reserved bacon.
  • Serve immediately and top with additional Parmesan.

1 bunch broccoli (about 1 pound), trimmed and cut into large florets
4 tablespoons (1/2 stick) unsalted butter
Kosher salt and freshly ground pepper
12 ounces spaghetti
2 cloves garlic, minced
2 tablespoons olive oil
1/2 cup grated Parmesan cheese

Steps:

  • Set up a steamer basket in a 3-quart saucepan. Add enough water to come up to the bottom of the basket. Bring the water to a boil. Add the broccoli florets to the basket, cover and cook until the broccoli is soft and nearly falling apart but still holds its shape, about 15 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Transfer the broccoli to a large bowl. Add 2 tablespoons butter and gently toss; season with salt and pepper, then mash.
  • Cook the spaghetti according to label directions, then reserve 1 cup cooking water and drain.
  • In a large skillet, cook the garlic in the remaining 2 tablespoons butter and the olive oil for 30 seconds. Add the mashed broccoli, the Parmesan and half of the reserved cooking water. Cook, stirring, until saucy. Season with salt and pepper. Toss with the spaghetti, adding more cooking water as needed.

1 1/2 teaspoons kosher salt, plus more for the pasta
1 pound shell pasta
1/4 cup olive oil
1 carrot, peeled and diced
1 small red onion, diced
1 1/2 teaspoons kosher salt
1/2 teaspoon red pepper flakes
1/4 teaspoon dried thyme
One 15-ounce can cannellini beans, drained and rinsed
1 cup low-sodium chicken broth
8 ounces smoked provolone or smoked mozzarella, grated (about 2 cups)
One 5-ounce container baby spinach, chopped

Steps:

  • Bring a large pot of water to a boil. Season well with salt. Add the pasta and cook for 3 minutes less than indicated in the package directions, about 7 minutes. Drain well reserving 1/2 cup pasta water.
  • Heat a large skillet over medium-high heat until hot. Add the oil, carrot and onion to the skillet. Season with 1 teaspoon salt and cook, stirring often, until fragrant and beginning to soften, about 3 minutes. Add the pepper flakes and thyme and cook another minute. Stir in the drained beans and chicken broth. Reduce the heat to medium to maintain a simmer and cook for 5 minutes, stirring occasionally. Use the back of a spoon to gently mash some of the beans. Set aside.
  • Add the cooked pasta to the sauce. Sprinkle the grated cheese over the pasta and toss to coat well. Stir in the remaining 1/2 teaspoon salt and add the 1/2 cup pasta water as needed to maintain a creamy, broth-like sauce. Sprinkle in the spinach and cook until wilted.

8 ounces bacon
Kosher salt
8 ounces elbow macaroni
1 medium yellow onion, chopped
2 tablespoons chopped garlic
2 plum tomatoes, chopped
Two 15-ounce cans red beans, drained and rinsed
1 tablespoon chopped fresh parsley
Freshly ground black pepper

Steps:

  • Cook the bacon in a large skillet, working in batches, until it is crisp. Drain on a plate lined with a brown paper bag or paper towels. Chop into 1/2-inch pieces.
  • While the bacon is cooking, bring a large pot of water to a boil. Add a big pinch of salt and the macaroni and cook according to package instructions. Drain and set aside.
  • Remove all except 1 tablespoon of the bacon fat from the skillet and put it over medium heat. Add the onions and cook until they are soft, about 5 minutes. Add the garlic and cook for about 1 minute, being careful not to let the garlic burn. Add the tomatoes and beans and cook until the beans are heated through, about 2 minutes. Stir in the bacon and parsley. Reserve 1 1/2 cups for the Round 2 Recipe French Bean Stew. Stir in the macaroni. Taste and season with salt and pepper if needed. Serve warm.

1 head broccoli , about 300g, cut into small florets
8 rashers smoked bacon , cut into large pieces
5 tbsp pesto

  • Bring a large pan of water to the boil and cook the pasta according to pack instructions. About 3 mins before the pasta is cooked, throw in the broccoli. When everything is done, drain, reserving about 100ml of the cooking water.
  • While the pasta is cooking, grill the bacon for 6-7 mins until crisp, then cut into bite-size pieces. Tip everything into the pasta pan, toss together well and loosen with a little of the cooking water, if needed. Sprinkle over the Parmesan and serve.

3 slice bacon, cut crosswise into 1/4-inch thick strips
2 Tbsp extra virgin olive oil, plus more for serving
2 clove garlic, finely chopped
2 c rough-chopped broccoli florets
1/4 to 1/2 c chicken stock
1 c cooked cannellini beans
1/2 lb penne or rigatoni pasta
1/4 to 1/2 tsp dried red pepper flakes (optional)
salt and freshly ground pepper to taste
1/4 c toasted bread crumbs
1/4 c freshly grated parmesan cheese, plus more for serving

Steps:

  • 1. In a large skillet over medium heat, cook the bacon until it is brown and beginning to crisp, 8 to 10 minutes. Remove to a paper towel to drain. Pour most of the bacon fat from the pan, add the 2 Tbsp. olive oil, and warm over medium heat. Saute the garlic until soft, about 2 minutes.
  • 2. Add the broccoli and saute until coated and beginning to wilt. Add 1/4 cup of the chicken stock, stirring and scraping up browned bits from bottom of pan. Cover partially and cook, stirring occasionally, and adding more chicken stock if needed, for about 10 minutes, or until broccoli is tender.
  • 3. Cook the pasta in boiling salted water according to package directions, until it is al dente. Drain but don't rinse.
  • 4. When the broccoli is cooked, add pasta, beans, and reserved bacon. Add the red pepper flakes, if desired, and salt and pepper to taste. Toss well.
  • 5. Remove from heat; add bread crumbs and 1/4 cup Parmesan. Toss gently and serve in warmed bowls. Drizzle each bowl with olive oil, Parmesan and freshly ground pepper. Serve with some crusty bread and a lettuce salad.

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Three minutes before the pasta is done, add the broccoli (the broccoli should be crisp-tender when the pasta is al dente). Reserve 1/2 cup pasta cooking water, then drain the pasta and broccoli.
  • While the pasta cooks, make the sauce: In a large (12-inch) skillet, melt the butter over medium-high heat. Add the shallot and a pinch of salt and stir until softened, 1 to 2 minutes. Add the white wine and cook until reduced by half, 1 to 2 minutes.
  • Add 1/4 cup of the pasta water, the beans, capers and a pinch of salt, and simmer until saucy and slightly thickened, 1 to 2 minutes.
  • Reduce the heat to medium, add the lemon juice, cooked pasta and broccoli, and stir until the pasta is coated in the sauce, adding pasta water as needed to coat. Season to taste with salt and pepper. Transfer to bowls, top with parsley and serve with lemon wedges.

1 head broccoli
1 lb crisp bacon, crumbled

  • Fry bacon crisp & crumble. You don't want it to still be hot when you add it to pasta salad.
  • Boil pasta according to package instructions.

  • Sauté chopped bacon in heavy large pot over medium-high heat until fat is rendered, about 5 minutes. Add onions, mushrooms, garlic and oregano and sauté until onions are soft, about 8 minutes. Add wine and bring to boil. Add beans and tomatoes with juices. Reduce heat to medium. Simmer until liquid thickens and flavors blend, stirring occasionally, about 25 minutes.
  • Mix in pasta and 3/4 cup cheese and simmer 2 minutes. Season to taste with salt and pepper.
