This is a quick light meal. Wilted spinach, bacon and tomatoes are tossed with penne pasta. Good for any season and will complement anything.

1 (12 ounce) package penne pasta
2 tablespoons olive oil, divided
6 slices bacon, chopped
2 tablespoons minced garlic
1 (14.5 ounce) can diced tomatoes
1 bunch fresh spinach, rinsed and torn into bite-size pieces

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the penne pasta, and cook until tender, 8 to 10 minutes.
  • Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Place bacon in the skillet, and cook until browned and crisp. Add garlic, and cook for about 1 minute. Stir in the tomatoes, and cook until heated through.
  • Place the spinach into a colander, and drain the hot pasta over it so it is wilted. Transfer to a large serving bowl, and toss with the remaining olive oil, and the bacon and tomato mixture.

Bacon and Spinach Pasta with Parmesan is a quick and flavorful weeknight dinner that only requires a few ingredients.

6 oz. bacon ($2.15)
1 yellow onion ($0.25)
2 cups chicken broth ($0.28)
1/2 lb. pasta ($0.50)
1/4 lb. fresh spinach (about 4 cups) ($1.50)
1/3 cup grated Parmesan ($0.55)

Steps:

  • Cut the bacon across the strips into one-inch pieces. Sauté the bacon in a large skillet until it is brown and crispy (no extra fat needed). Remove the browned bacon to a bowl with a slotted spoon. Carefully pour the fat off into a separate bowl, leaving about one tablespoon in the skillet.
  • While the bacon cooks, dice the onion. Once the bacon is removed and the fat is drained from the skillet, add the diced onions and sauté until they are soft and transparent. Allow the moisture from the onions to dissolve some of the browned bits off of the bottom of the skillet.
  • Add two cups of chicken broth to the skillet and dissolve off any remaining browned bits of bacon drippings from the bottom of the skillet.
  • Finally, add the uncooked pasta to the skillet, place a lid on top, and let the skillet come to a boil over high heat. Once it reaches a boil, give it a quick stir, turn the heat down to low, and let simmer for 10 minutes with the lid in place. Give the skillet a stir to loosen the pasta from the bottom every few minutes or so, replacing the lid quickly each time. After 10 minutes the pasta should be tender and most of the broth absorbed. There should be a little bit of thick, saucy broth remaining in the bottom of the skillet.
  • Add the fresh spinach to the skillet and stir until it has wilted into the pasta. Turn off the heat, add the cooked bacon back to the skillet, sprinkle the Parmesan over top, stir to combine, and then serve.

1/2 lb. tri-color fettuccine, uncooked
4 slices OSCAR MAYER Bacon, cut into 1-inch pieces
4 cloves garlic, minced
1 cup quartered cherry tomatoes
1/2 cup KRAFT Lite Zesty Italian Dressing
1 pkg. (6 oz.) baby spinach leaves

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet. Add garlic to reserved drippings in skillet; cook and stir 1 min. Add tomatoes and dressing; cook and stir 2 min. or until heated through.
  • Place spinach in colander. Pour pasta with cooking water over spinach; drain well. Add to tomato mixture in skillet; mix lightly.

1 head garlic
1 onion, chopped
1/2 pound bacon
1/4 pound dry Sopresatta sausage
1/2 cup chicken stock
1/4 cup olive oil
1 pound pasta (any style)
3 cups baby spinach
1/2 cup sliced basil
1/2 head radicchio
1/2 can garbonzo beans (or chickpeas)
1/2 cup Parmesan
Salt and pepper, to taste
4 steamed artichokes
1 pinch saffron
1/4 teaspoon cayenne pepper
2 cloves garlic crushed
1/2 red bell pepper, chopped
2 teaspoons water
1 lemon, juiced
1 cup mayonnaise

Steps:

  • Cut off top of garlic head, wrap in foil and put in a preheated 375 degree oven for 20minutes. Saute onion, bacon, garlic and sopresatta. Add chicken stock, olive oil and roasted garlic squeezed out of shell. Cook pasta aldente and add to sauce. Add spinach, basil, radicchio, garbonzo beans, Parmesan, salt and pepper to taste.
  • Artichoke Dip In blender put saffron, cayenne, garlic, bell pepper, 2 teaspoons water, salt and lemon juice and puree. Add mayonnaise. Serve as a dip for steamed artichokes.

1 (16 ounce) package bow tie pasta
1 lb thick cut bacon
2 tablespoons olive oil
3 cloves garlic, minced
1 (10 ounce) package frozen chopped spinach, thawed
1/2 cup dry white wine
1/3 cup grated parmesan cheese

Steps:

  • Cook pasta according to package directions.
  • Drain, reserving 1/2 cup cooking water.
  • In a large skillet over medium heat, cook bacon until crisp.
  • Remove and drain on paper towels.
  • Drain drippings but do not clean pan.
  • In same pan over medium heat, heat olive oil 1 minute.
  • Increase heat to medium-high and add spinach, wine and reserved cooking water.
  • Cook and stir until heated through.
  • Toss pasta and cheese with sauce.
  • Season with pepper to taste.
  • Crumble bacon over pasta.

1 tablespoon olive oil
2 garlic cloves, peeled and sliced
1 slice bacon, chopped small
1/4 teaspoon red pepper flakes
1 1/2 cups canned chick-peas, drained and rinsed
2 cups fresh spinach, rinsed and chopped
1/4 lb ditalini
2 tablespoons parmesan cheese, freshly grated

Steps:

  • Bring a large pot of water to a boil. Cook the pasta according to instructions on the box, minus a minute or two.
  • When done save 1/2 cup of pasta water and drain the rest- keep in a colander.
  • Pour the olive oil into a skillet over medium heat. . Add the bacon pieces and cook for 3 minutes or until they begin to render their fat. Toss in the garlic and cook for 2 minutes.
  • Sprinkle in the red pepper flakes.
  • Dump in chickpeas and stir to coat. Then add the spinach leaves, and cook until wilted. Season with a pinch of salt and add a half a cup or so of the pasta cooking water.
  • When the spinach is wilted, add pasta to the pan with spinach and chick peas. Cook, stirring constantly, for a minute or two.
  • Remove from the heat, sprinkle with cheese, and serve.
  • I actually removed the bacon before eating, wanted to add the flavor but avoid some of the calories.

350g penne pasta
1 tbsp vegetable oil
1 onion , chopped
8 rashers smoked back bacon , chopped
200ml hot vegetable stock
300g frozen pea
150g pack gorgonzola , cubed
250g spinach

Steps:

  • Cook the pasta following pack instructions. Meanwhile, heat the oil in a large frying pan, then add the onion and cook for 3 mins until starting to soften. Add the bacon, cook for a further 5 mins, then pour in the hot stock and bring to the boil. Simmer for a few mins until the liquid has reduced slightly.
  • Stir in the peas, followed by the gorgonzola, until the cheese has melted and the peas are defrosted. Quickly stir through the spinach to wilt. Drain the pasta and mix with the sauce, then serve.
