SALAD
1 pkg salad macaroni pasta (7 oz) aka ditalini pasta, not elbow macaroni
1 cabbage head, shredded
1 medium onion, finely chopped
2 celery ribs, finely chopped
1 medium cucumber, finely chopped
1 green bell pepper, finely chopped
1 medium carrot, shredded
DRESSING
1 1/3 c mayonnaise
1/3 c sugar
1/4 c apple cider vinegar
1/2 tsp salt
1/4 tsp pepper

Steps:

  • 1. Cook pasta, drain, rinse, and place in large bowl.
  • 2. Combine remaining salad ingredients and refrigerate.
  • 3. Blend all dressing ingredients and pour over the top of the salad.
  • 4. Mix thoroughly and refrigerate until ready to eat.

ASIAN CHICKEN SLAW WITH PASTA



Asian Chicken Slaw with Pasta image

Number Of Ingredients 13

Salt
8 ounces angel hair pasta or capellini
1/4 cup vegetable oil
2 tablespoons sesame oil
1 clove garlic, minced
1/4 cup rice or white wine vinegar
1 teaspoon sugar
1/2 teaspoon dried red pepper flakes
2 tablespoons Nuoc nam (bottled Vietnamese fish sauce), optional
3/4 to 1 pound boneless smoked chicken or turkey breast
1/2 small head Napa or Chinese cabbage, cored
2 carrots, peeled
1/2 cup (packed) washed basil leaves

Steps:

  • Add the pasta to the boiling water and cook until it is tender but still firm to the bite, about 3 to 4 minutes. Drain the pasta and rinse it under cold water to cool it completely. Drain the pasta again, pat it dry and add it to the mixing bowl.
  • Finely shred the cabbage and grate or finely chop the carrots. Roll the basil leaves up into tight cylinders and cut across them to create fine shreds and add them to the mixing bowl. Toss the salad with the dressing and adjust the seasoning if necessary.

BROCCOLI PASTA SLAW

1/2 pound bow tie pasta, cooked and cooled
1 (16-ounce) bag shredded broccoli slaw
1 cup slivered almonds
1 cup dried cranberries
1/2 cup lowfat plain yogurt
1/4 cup mayonnaise
3 tablespoons cider vinegar
1 tablespoon sugar
1/4 teaspoon cayenne
Salt and freshly ground black pepper

Steps:

  • Cook pasta in boiling salted water until al dente. Cool.
  • Add pasta, broccoli slaw, slivered almonds and dried cranberries to a large bowl. In a separate bowl, whisk together yogurt, mayonnaise, cider vinegar, sugar, cayenne, and salt and pepper. Add the dressing to the broccoli and stir to combine. Season with salt and pepper.

It looks delicious and I plan to make it for a Church potluck that is coming up; although, I will probably leave out the cayenne pepper. *Note - this recipe calls for broccoli slaw which can be purchased in the salad section of the supermarket.

16 ounces broccoli (broccoli slaw, shredded)
1 cup almonds, slivered
1 cup cranberries, dried
1/2 cup yogurt, plain lowfat
1/4 cup mayonnaise, lowfat
3 tablespoons cider vinegar
1 tablespoon sugar
1/4 teaspoon cayenne pepper
salt and pepper, to taste

Steps:

  • Cook pasta in boiling, salted water until al dente. Cool.
  • Add pasta, broccoli slaw, almonds, and dried cranberries to a large bowl. In a separate bowl, whisk together the yogurt, mayonnaise, cider vinegar, sugar, cayenne, salt and pepper. Add the dressing to the broccoli and stir to combine. Check seasonings and adjust.

1 Box of color Rotini Pasta
1 Bag of cut slaw mix
1 Small onion (diced)
1 to 2 teaspoons of Dill Weed
DRESSING
1 cup of sugar
1/2 cup of vinegar
2 tablespoons of prepared mustard
2 cups of Mayo
Add Dill Weed to suit your taste

Steps:

  • Cook Pasta. Combine the Pasta, Slaw and Onion in a large bowl. Dissolve the sugar in the vinegar. Add the Mustard, Mayo and Dill Weed. Stir to blend well. Pour over Pasta/Slaw mix. Cover and Chill for 24 hours. Toss before serving.

Number Of Ingredients 13

2 cups shredded cabbage
2 cups shredded carrots
2 ounces whole wheat spaghetti
1 green bell pepper chopped
1 red bell pepper chopped
1/2 red onion or 4 green onions, chopped
1 tablespoon lemon juice (preferably fresh)
2 tablespoons balsamic vinegar or red wine
1/2 teaspoon salt
1/2 teaspoon oregano
1 tablespoon canola or olive oil
1/2 teaspoon chopped garlic (1 clove)
dash pepper (to taste)

Steps:

  • 1. Put a medium size pot of water on to boil. 2. Buy already shredded, or shred cabbage and carrots using a food processor. Place in a large serving bowl. 3. When water is boiling, add pasta. Set timer for 10 minutes. 4. Add peppers and onions to cabbage and carrots. 5. Mix remaining ingredients together in a small bowl. 6. At sound of timer, drain pasta and add to vegetables while still hot. 7. Toss all together with dressing. Serve warm or chilled. Tastes great with: Grilled Chicken or Fish
