Fresh tomatoes, cucumbers, onion, and herbs tossed in a light creamy dressing with pasta make a salad that's absolutely irresistible! Creamy Tomato Cucumber Pasta Salad is not only easy to make but it's colorful, cool, and does double duty as a side dish or salad.

8 ounces rotini pasta (or any pasta you like)
1 pint grape tomatoes
1 English cucumber
1/2 red onion
1 tablespoon fresh dill
1 tablespoon fresh parsley
1 tablespoon fresh basil
1/4 cup sour cream
1/4 cup mayonnaise
1 tablespoon red wine vinegar
1 teaspoon sugar
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Bring a pot of salted water to a boil and add pasta. Cook pasta according to package directions.
  • While pasta cooks, halve tomatoes, slice the cucumber, and onion. Chop the dill, parsley, and basil. Put all ingredients into a large bowl.
  • To a small bowl or mason jar, add sour cream, mayonnaise, red wine vinegar, sugar, garlic powder, salt, and pepper. Whisk together or shake to combine.
  • Drain and rinse the cooked pasta. After cooling for 5 minutes, add it to the bowl with the chopped vegetables and herbs. Pour dressing over and toss to combine. Taste and adjust seasoning. Cover and refrigerate for 1 hour before serving.

Green Onion Dressing
1/2 cup olive oil
1 bunch green onions (scallions), trimmed, white bottoms and green tops separated
1 small clove garlic, chopped
1 1/2 tablespoons white wine vinegar
1 teaspoon Dijon mustard
2 tablespoons sour cream
Salt and freshly ground black pepper
Pasta Salad
12 ounces bow tie pasta, cooked according to package directions
3 teaspoons vegetable oil
1 red onion, cut into 1/4-inch thick rings
1 red pepper, seeded and diced
1 yellow pepper, seeded and diced
1 orange pepper, seeded and diced
1 cup chopped fresh parsley
1 cup shredded unsweetened coconut, toasted

Steps:

  • For the green onion dressing: Heat a grill. Drizzle 1/2 teaspoon of olive oil over the white portion of the green onions. Place the white bottoms of the green onions on the hot grill and grill until they are slightly softened and charred. Put the grilled whites of the green onions, the green onion tops, garlic, white wine vinegar, Dijon mustard and remaining olive oil in a blender, puree until smooth. Transfer the mixture to a bowl and stir in the sour cream. Season the dressing with salt, and black pepper, to taste. Set the dressing aside.
  • For the pasta salad: Heat a grill. Place the cooked pasta in a large bowl, toss with 2 teaspoons of vegetable oil. Drizzle the remaining 1 teaspoon of vegetable oil over the red onion rings and season with salt.
  • Place the red onions on the hot grill and grill until softened, approximately 10 minutes, remove the onions from the grill. Coarsely dice the grilled red onions. Add the chopped red onions, red pepper, yellow pepper, orange pepper, chopped parsley, and green onion dressing to the pasta. Mix to incorporate all ingredients. Season the pasta with salt, and pepper, to taste. Garnish with toasted coconut.

3 unpeeled garlic cloves
5 scallions
1 1/2 pounds medium to large tomatoes, halved
2 tablespoons extra-virgin olive oil, plus more, for brushing
Kosher salt
Freshly ground black pepper
4 ounces fresh mozzarella, cut into 1/2-inch cubes
10 ounces penne or other short pasta

Steps:

  • Light a grill and preheat for at least 10 minutes or preheat a grill pan. Oil the grates. Meanwhile, soak 1 bamboo skewer for 10 minutes. Thread the garlic on the skewer.
  • Brush the scallions and the cut sides of the tomatoes with olive oil and season with salt and pepper.
  • Grill the garlic and scallions over high heat, turning frequently, until blistered in spots and softened, about 2 minutes. Grill the tomatoes cut side down until nicely charred, about 2 minutes. Flip and grill until the skin starts to shrink, about 1 minute.
  • Peel the garlic and finely chop, then transfer to a large bowl. Thinly slice the scallions crosswise and transfer to the bowl. Pull off the tomato skins, dice the tomatoes and add them to the garlic and scallions.
  • Meanwhile, in a large pot of boiling salted water, cook the pasta until al dente. Reserve 1/2 cup of the pasta water and drain. Add the hot pasta, the cheese and the 2 tablespoons of olive oil to the tomatoes and toss. Add the pasta water, little by little, if you need to loosen the sauce.
  • Season the pasta with salt and pepper and serve immediately.

PASTA SALAD WITH SUMMER TOMATOES, BASIL AND OLIVE OIL



Pasta Salad With Summer Tomatoes, Basil and Olive Oil image

This summery dish walks the line between tangy, juicy tomato salad and hearty pasta salad. To make it, ripe tomatoes are marinated with capers, garlic, basil and lots of good olive oil until they almost fall apart, creating a wonderfully soupy dressing for the pasta. Then the pasta is added while still hot to mix; as it cools, it absorbs all the bright flavors. If you can, choose heirloom tomatoes in an array of hues, and serve this in a glass bowl to show it off. Cubes of fresh mozzarella, or bocconcini, make for creamy addition. Add them just before serving, so the heat of the pasta doesn't melt the cheese.

2 pounds very ripe tomatoes, coarsely chopped
1/4 cup drained capers or sliced olives
3 garlic cloves, finely grated or mashed to a paste
Kosher salt, as needed
1/4 teaspoon black pepper, plus more as needed
1/2 teaspoon red-pepper flakes
1 large basil sprig, plus 1/2 cup torn fresh basil leaves
3 oil-packed anchovy fillets, minced (optional)
1/2 cup extra-virgin olive oil, plus more for serving
1 pound short pasta, such as campanelle, fusilli or farfalle

Steps:

  • In a large bowl, toss together the tomatoes, capers, garlic, 1/2 teaspoon salt, black pepper, red-pepper flakes, the whole basil sprig and anchovies if using. Let sit for 5 minutes, then stir in 1/2 cup oil. Taste and add salt and pepper if needed. The tomatoes should be aggressively seasoned. Let tomatoes marinate for at least 1 hour and preferably 2 to 3.
  • Bring a large pot of heavily salted water to a boil. Add pasta and cook until it is just al dente, usually a minute less than the package instructions. Drain well. Add to bowl with tomatoes while still warm and toss well. Let pasta cool, soaking up the dressing. Let pasta sit at room temperature for at least another hour and up to 6 hours before serving. Or chill for up to 24 hours; bring to room temperature before serving.
  • Just before serving, gently fold in torn basil leaves. Top with more olive oil and cracked black pepper before serving.

2 medium tomatoes, sliced and quartered
1 large cucumber, peeled and sliced
4 green onions, chopped
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon pepper
1/3 cup cider vinegar
1 cup water

Steps:

  • In a bowl, combine the tomatoes, cucumber and onions. In a small bowl, combine the sugar, salt and pepper. Whisk in the vinegar and water. Pour over vegetables and toss to coat. Cover and refrigerate for 4 hours or overnight. Serve with a slotted spoon.
