ROSA MARINA PASTA SALAD

I got this recipe from a co-worker who brings it to every pot luck dinner. It is really so very good and makes a large batch. If you're making it just for family I'd suggest halving the recipe. Nice change in pasta salads and makes the occasion seem special. Note that you must start making this the day before you plan to serve it.

1 lb rosa marina pasta or 1 lb orzo pasta, cooked
3/4 cup sugar
2 eggs
2 tablespoons flour
1/2 teaspoon salt
2 (1 lb) cans unsweetened pineapple chunks
1 (11 ounce) can mandarin oranges
1 (1 lb) can fruit cocktail
1 jar maraschino cherry, halved
1 (8 ounce) carton Cool Whip

Steps:

  • Put pasta in a large bowl.
  • Beat eggs in small bowl.
  • Drain the pineapple, saving juice.
  • Refrigerate drained pineapple.
  • In a saucepan, put saved pineapple juice, beaten eggs, sugar, flour and salt.
  • Cook over low heat, stirring till thickened.
  • Pour thickened juice mixture through a strainer over the cooked pasta.
  • Mix well then and refrigerate overnight.
  • The next day, drain all of the fruits very well.
  • Fold the fruits (including the chilled pineapple) and Cool Whip into the pasta.
  • Mix well.
  • Chill for at least an hour.

1 (1 1/3 ounce) envelope Knorr parma rosa sauce mix
1 cup milk
1/4 cup grated parmesan cheese
1 ounce grated parmesan cheese
1/4 cup shredded mozzarella cheese
1 tablespoon butter
1 dash white wine
1 lb chicken breast
1/2 bell pepper, sliced thin (yellow or red)
2 cups cooked egg noodles

Steps:

  • Pre-heat oven to 345 degrees.
  • Spray baking dish with butter flavored cooking spray.
  • In sauce pan, mix sauce mix, milk, 1/4 c parmesan cheese, mozzarella cheese, and butter. Cook on medium heat until cheese and butter are melted, stirring often.
  • When everything is melted, add wine and stir over heat until mixed.
  • Reduce heat to low.
  • Arrange chicken in baking dish, and spoon sauce over chicken, using just enough to cover the chicken breasts. (Leave the rest of the sauce in the pan on low heat, covered, and stir ocassionally while chicken bakes).
  • Arrange bell peppers on top of chicken.
  • Cover baking dish with aluminum foil and bake at 375 degrees for 30 minutes.
  • After 30 minutes, add cooked noodles to remaining sauce and stir to coat noodles. Spoon noodles around and over chicken and top with 1 oz grated cheese.
  • Return to oven for 5 minutes or until chicken is completely cooked.
  • After taking out of oven, leave dish to sit for a couple minutes for sauce to thicken.

1 pound frozen Patagonian scallops, thawed
4 plum tomatoes, coarsely chopped

Steps:

  • Cook and drain pasta following package instructions. Keep warm.

1/2 cup (1 stick) butter
1 medium onion, minced
1/2 cup all-purpose flour
1 cup hot milk
1 (8-ounce) can chunky tomato sauce
8 ounces soft cream cheese
3/4 pound Norwegian smoked salmon, sliced into 1-inch long strips
1 pound penne pasta
Salt and freshly ground black pepper
1/4 cup fresh chives, chopped

Steps:

  • Bring a pot of water to boil for the pasta.
  • For the sauce, melt butter in a saucepan which will be large enough to accommodate the pound of cooked pasta, and saute onion until it becomes translucent. Mix in the flour to make a roux. Gradually add milk and allow thickening. Stir in tomato sauce and heat through. Remove from heat and add cream cheese. Blend with an immersion blender. Immediately cover surface of sauce with a sheet of plastic wrap and set aside briefly.
  • Boil the pasta until al dente and drain. Add the cooked pasta and strips of salmon to the pan containing the sauce and fold to coat pasta. Season with salt and pepper, as needed. Transfer to a serving dish and sprinkle with chives.

1 tablespoon olive oil
4 cloves garlic, minced
1 pinch crushed red pepper flakes
2 medium tomatoes (about 1/2 lb.) chopped
2 cups fresh spinach
24 medium raw shrimp, peeled and deveined
1/3 cup 0% plain Greek yogurt
1-2 oz goat cheese

Steps:

  • Instructions 1.Cook penne according to package directions, omitting salt and fat. Drain and set aside. 2.In a large skillet with a lid, heat olive oil over medium-low heat. Add in garlic and red pepper flakes, cook for 2 minutes or until garlic begins to soften. 3.Add in tomatoes. Cook for 5 minutes 4.Turn heat up to medium-high and add in shrimp. Cook for 1-2 minutes, or until shrimp are pink and opaque. Remove from heat, add in spinach and cover skillet. Let spinach wilt for 2 minutes. 5.Remove lid and place skillet back over low heat. Add the penne, Greek yogurt and goat cheese. Stir until sauce is mixed well and all pasta and veggies are coated. Heat until just warmed through.

2 garlic cloves, smashed

1/2 teaspoon fresh ground black pepper
1/4 teaspoon crushed red pepper flakes (optional)
3 cups watercress or 3 cups spinach, coarsely chopped
1/4 cup pine nuts or 1/4 cup slivered almonds, toasted

Steps:

  • Cook pasta according to package directions, drain.

2 large garlic cloves chopped really fine
1 can diced tomatoes
1 8 oz can tomato sauce or you can use store bought sauce like a marinara
salt and fresh ground black pepper to taste
1/4 c. heavy cream
1/2 c. freshly grated Parmesan cheese
2 Tbsp. parsley
6 basil leaves chopped
a pinch of sugar

Steps:

  • 1) In a large heavy saucepan, heat olive oil, then add the garlic cloves. Toss and cook on medium heat for a few minutes. Do not let garlic brown. 2) Add the tomatoes, basil, salt and pepper. Cover and cook tomatoes about 10 min. 3) Uncover and stir in parmesan cheese and then the cream slowly, then add sugar. 4) Simmer the sauce a bit for the cream to become incorporated. Add water or warm milk, if needed, to bring the sauce to desired consistency. 5) Serve with either Penne, Rigatoni, Bow Ties or your favorite shaped pasta.

This pasta makes a beautiful presentation with the fresh tomatoes and baby spinach. The name means red and green pasta, and it's appropriate. I got this from my mother-in-law in an e-mail, but I have no clue where she found it. Easy to make, great dish for a week night when you don't really feel like cooking an involved meal, but you still want to eat something a little classy.

4 -6 tomatoes, diced
1 medium white onion, diced
2 garlic cloves, minced
3 cups fresh Baby Spinach
1/4 cup lemon juice
1/4 cup pine nuts, toasted
gorgonzola
1 tablespoon olive oil
salt
pepper

Steps:

  • Cook pasta according to package directions.
  • Heat oil over medium heat and saute onions and garlic until soft.
  • Add tomatoes and heat until they start to release their liquid.
  • Add the spinach and cook until just wilted, add the salt and pepper to taste and stir in.
  • With a slotted spoon, scoop the sauce into a bowl, discarding any excess liquid.
  • Serve over the pasta and top with toasted pine nuts and crumbled cheese to taste.
  • Note: I thought this was pretty good with the gorgonzola but it's a little strong. It would be just as good with romano or parmesan.

3 cups leftover ground meat, sauce (bolognese or ragu)
1 cup orzo pasta

1 handful grated romano cheese (Parmesan or Grana Padano)

Steps:

  • Bring chicken broth (or water with chicken bouillon) and leftover meat sauce to a boil in a large pot, over high heat. Add orzo pasta and stir frequently so it doesn't stick at the bottom.
  • When the soup comes to a boil, reduce heat to medium and simmer till the orzo is cooked, about 12-13 minutes or according to package instructions.
  • Remove pot from heat, stir in butter and cheese, and serve immediately. Top with extra cheese, if desired.
