ROMAINE SALAD WITH PARMESAN VINAIGRETTE



Romaine Salad with Parmesan Vinaigrette image

3 tablespoons grated Parmesan
2 teaspoons Dijon mustard
2 tablespoons red wine vinegar
1 clove garlic, minced
1/3 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
2 hearts romaine lettuce, chopped

Steps:

  • Whisk the Parmesan, mustard, vinegar and garlic in a small bowl. Whisk in the oil. Sprinkle the vinaigrette with salt and pepper. Toss the lettuce with the vinaigrette. Serve immediately.

Nothing unusual but this is the way we like our pasta salad and I wanted to post it mainly for ingredient ratios.

16 ounces tri-color spiral pasta, cooked as directed
1/2 pint grape tomatoes, quartered
3 inches chunk of sandwich pepperoni, cubed small
3 inches chunk hard salami, cubed small
8 ounces mozzarella cheese, cubed small
1/2 cup chopped red onion
1 cup halved black olives
1/2 cup grated parmesan cheese
16 ounces ken's steak house lite northern italian dressing with basil & romano cheese

Steps:

  • Combine all ingredients and refrigerate. Check to see if more dressing is needed.

1/3 cup plus 3 tablespoons olive oil, divided
2 tablespoons white wine vinegar
1 tablespoon dill weed
1/2 teaspoon garlic powder
1/8 teaspoon crushed red pepper flakes
1/8 teaspoon salt
6 green onions
4 plum tomatoes, halved
1 large cucumber, peeled and halved lengthwise
2 romaine hearts

Steps:

  • In a small bowl, whisk 1/3 cup oil, vinegar and seasonings. Set aside., Brush the onions, tomatoes, cucumber and romaine with remaining oil. Grill the onions, tomatoes and cucumber, uncovered, over medium heat for 4-5 minutes on each side or until onions are crisp-tender. Grill romaine for 30 seconds on each side or until heated through. , Chop the vegetables; place in a large bowl. Whisk dressing and pour over salad; toss to coat. Serve immediately.

3 plum tomatoes, seeded and chopped
1 cup (4 ounces) crumbled feta cheese
1 cup chopped seeded cucumber
1/2 cup Greek olives, chopped
2 tablespoons minced fresh parsley
2 tablespoons minced fresh cilantro
3 tablespoons lemon juice
2 tablespoons olive oil
1/4 teaspoon pepper
