- 1. Drain all of your fruit and reserve the juice. Keep the fruit in a container in your fridge.
- 2. Cook pasta and set aside to cool.
- 3. Combine your fruit juice, sugar, eggs and flour, cook on medium heat until thick.
- 4. Poor thickened mixture over the pasta and refrigerate overnight.
- 5. Next day, re drain your fruit and add into the pasta. Fold in your cool whip and serve! :)
PASTA PUDDING
You can add a tablespoon of raisins or diced dried fruit to this dish for added flavor. It's similar to a rice pudding type of dessert.

Steps:
- Cook pastina in boiling salted water until al dente.
- Drain and return to saucepan.
- Add in the cream and 2 tablespoons of the sugar.
- Stir over low heat until hot and thickened, about 2 minutes.
- Stir in butter.
- Spoon into bowls.
- Combine the remaining sugar and cinnamon to sprinkle over top of pudding.

- Pour milk into large bowl. Add dry pudding mix. Beat with wire whisk 2 min. or until well blended.
- Add remaining ingredients; mix well.
- Cover and refrigerate several hours or until chilled.

PASTA RAISINS PUDDING WITH CARAMELIZED APPLE TOPPING
Steps:
- Preheat oven to 350 degrees.
- Combine cooked pasta with raisins, zest and melted butter and spread into a shallow buttered 2 quart baking dish.
- Beat sugar into eggs and whisk in milk and orange juice and pour over pasta. Set baking pan in a bain marie and bake for about an hour or until set.
- While this is baking saute the apples in 2 tablespoons butter. Add sugar and cinnamon and saute over low heat until apples are tender and caramelized.
- Remove pasta pudding from oven and let set 10 minutes before serving; serve topped with apples and a dusting of powdered sugar.
BLACK PUDDING PASTA
A pasta sauce with black pudding, mushrooms and a pepper sauce.

- Heat the olive oil in a frying pan and gently fry the onions until soft. Add the mushrooms and fry until soft. Add the black pudding and brown.
- Meanwhile, boil water and cook the pasta until al dente.
- Make up the Pepper sauce as instructed on packet.
- When all of the above are ready, mix together and serve.
