OLD FASHIONED BLUE RIBBON POUND CAKE

Old Fashioned Blue Ribbon Pound Cake image

Old-fashioned Blue Ribbon Pound Cake is dense, moist, buttery, and sweet. It has that outer crusty edge with a smooth, creamy, small crumb inside that makes pound cake distinctive. One taste and this will be your new favorite cake recipe!

Time 1h45m

Number Of Ingredients 5

2 cups butter, no substitutes
3 and 1/2 cup granulated sugar
10 large eggs (at room temperature)
4 cups all-purpose flour (sifted (always sift, then measure))
2 teaspoons vanilla extract (I use this)

Steps:

  • Allow butter and eggs to come to room temperature.
  • Grease and flour a tube (I recommend this one.)or bundt pan. The cake is too large for a regular bundt pan. You need a 10-15 cup bundt pan like this which is larger than a standard bundt. If you don't have a tube pan or large bundt pan, you can make cupcakes with the extra batter. Don't fill the pan closer than 2 inches from the top or it may overflow. You can grease and flour, use non-stick spray, or I absolutely love this cake release product from Wilton! You may need to line the sides of the tube pan with waxed paper so that is above the top of the pan 2 to 3 inches as shown in the photo. This is a very tall cake.
  • Preheat oven to 350 degrees.
  • Cream 2 cups butter until soft and there are no lumps.
  • Add 3 and 1/2 cups granulated sugar and cream until light and fluffy.
  • Add one at a time, beating until just mixed in before adding the next egg.
  • Lower speed on mixer to low and slowly add 4 cups sifted all-purpose flour.
  • Add vanilla and mix in completely.
  • Spoon batter into prepared tube or bundt pan. (If using a bundt pan, make sure it's large enough for batter to double in size.)
  • Bake at 350 degrees F for 1 hour and 20 minutes.
  • *PLEASE NOTE - COOKING TIMES VARY DEPENDING ON IF YOUR OVEN IS CALIBRATED AND IF YOU USE A LIGHT OR DARK PAN. TEST THE CAKE BEFORE THE RECOMMENDED TIME. IF THE CAKE IS TOO DRY, YOU BAKED IT TOO LONG.
  • Test for doneness with a wooden pick. Insert pick in the center of the cake, if pick comes out clean or with dry crumbs, it is done.
  • Remove cake and allow to cool on a wire rack 30 minutes before inverting onto a serving platter.
  • The recipe is correct as written. There are no baking soda or baking powder in it.

PASTA POUND CAKE

Pasta Pound Cake image

This Instagram-worthy recipe "takes the cake" and turns it into a savory pasta-lover's delight. Top it with cheese sauce or marinara, according to your mood.

Provided by Food Network Kitchen

Time 55m

Yield 8 to 10 servings

Number Of Ingredients 13

Nonstick cooking spray, for the pan
Kosher salt and freshly ground black pepper
1 pound spaghetti
6 large eggs, beaten
1 cup grated Parmesan
1/2 cup grated Pecorino-Romano
4 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups whole milk, plus additional as needed
8 ounces shredded extra-sharp Cheddar
1 cup finely grated Parmesan plus 2 tablespoons coarsely shredded Parmesan
Kosher salt
Chopped fresh basil, for serving

Steps:

  • For the cake: Preheat the oven to 425 degrees F. Generously spray the inside of a 12-cup bundt pan with nonstick cooking spray.
  • Bring a pot of heavily salted water to a boil. Add the spaghetti and cook until not quite al dente according to the package instructions.
  • Meanwhile, combine the eggs with the Parmesan and Pecorino in a large bowl. Whisk in 1 teaspoon salt and 1 tablespoon pepper.
  • Drain the pasta and discard the cooking liquid. Pour the pasta into the egg mixture and toss thoroughly to combine. Once the pasta is evenly coated, pour it into the prepared bundt pan. Gently press the pasta into an even layer.
  • Bake until the pasta cake is firm and some strands of pasta have turned golden brown, about 20 minutes. Let cool in the pan for 10 minutes, then invert the cake onto a large serving platter.
  • For the toppings: Melt the butter in a large saucepan over medium heat. Whisk in the flour until a smooth paste forms. Cook the roux, stirring frequently, until it begins to smell like toasted nuts, 1 to 2 minutes. Pour in the milk, continuously whisking. Reduce the heat and simmer until a thick sauce forms, about 3 minutes. Whisk in the Cheddar and grated Parmesan and stir until melted, loosening with 1 to 2 tablespoons of milk if needed. Sprinkle with salt to taste. Allow to cool slightly before topping the cake.
  • Decorate the cake with the cheese sauce. Allow the cheese "icing" to drip down the sides of the cake slightly. Top with the Parmesan shreds and basil to resemble sprinkles. Slice the cake into wedges and serve warm, with extra sauce on the side if desired.

Time 55m

Number Of Ingredients 9

200g unsalted butter , softened
200g caster sugar
3 eggs , beaten
200g self-raising flour
1 tsp baking powder
3 tbsp whole milk
1 tbsp vanilla paste / ½ vanilla pod seeds
125g icing sugar
1 tbsp vanilla paste / ½ vanilla pod seeds

Steps:

  • Pre-heat oven to 180C/160C fan/gas 4 and line a 900g loaf tin with parchment paper (mine was 19cm x 9cm x 6cm). Put all of the ingredients except those for the icing into a large bowl and beat together, either using an electric hand whisk or a wooden spoon until smooth and combined. Pour the mix into the loaf tin and spread evenly with the back of spoon. Bake for 40 - 45 mins.
  • Once out of the oven, leave to cool and make the icing. Combine the icing sugar and vanilla paste with three tbsp of water - you may need more but add it gradually to get a thick icing. Spread it over the top of the cake; it's fine if it drips down the edges. Allow to set and then slice.
