Time 35m

Yield 2

Number Of Ingredients 16

⅓ pound fresh linguine pasta
1 tablespoon vegetable oil
2 slices bacon
1 (3.5 ounce) link Italian sausage, casing removed
2 cloves garlic, minced
2 tablespoons chopped fresh flat-leaf parsley
2 tablespoons chopped green onion
¼ teaspoon garlic powder
¼ teaspoon dried oregano
¼ teaspoon seasoned salt
¼ teaspoon onion powder
salt and ground black pepper to taste
2 extra large eggs, beaten
6 tablespoons grated Parmesan cheese, divided
2 teaspoons chopped fresh flat-leaf parsley, divided
2 teaspoons grated Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in the fresh linguine and return to a boil. Cook until the pasta floats to the top, 2 to 3 minutes; drain and set aside.
  • Heat vegetable oil in a large skillet over medium-high heat, and cook bacon, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels; crumble and set aside. Cook and stir sausage in the same skillet, until brown and crumbly, 8 to 10 minutes. Drain excess grease.
  • Return bacon to skillet and stir in garlic, 2 tablespoons flat-leaf parsley, green onions, garlic powder, oregano, seasoned salt, onion powder, salt, and black pepper; cook and stir just until garlic is fragrant, about 30 seconds.
  • Stir cooked linguine into the bacon and sausage; toss lightly to combine. Stir eggs and 6 tablespoons Parmesan cheese into the pasta until eggs are set, about 2 minutes. Divide onto 2 serving plates and sprinkle each serving with 1 teaspoon parsley and 1 teaspoon Parmesan cheese.

PAPA'S FAVORITE PASTA SAUCE

Papa's Favorite Pasta Sauce image

Growing up, Sunday meant "Pasta" in our home. But believe it or not, Papa never cared too much for the traditional italian "gravy" made with beef or pork. He developed this recipe and loved the lightness of this chicken sauce. So while my friends were having spagetti and meatballs; we were having shells and chicken! You get the benefits of two delicious meals in one; tender juicy chicken and peppers AND pasta sauce in one!

Time 1h45m

Yield 12 serving(s)

Number Of Ingredients 11

2 lbs frying chickens (cut up)
4 large sweet red peppers (cut into strips)
2 medium onions (sliced thin)
1 (28 ounce) can tomato puree
1 tablespoon canola oil
2 tablespoons dried basil
2 tablespoons dried oregano
2 tablespoons Italian parsley (chopped)
6 cloves fresh garlic (sliced thin)
2 teaspoons salt
1/2 teaspoon red pepper flakes

Steps:

  • Wash, cut up pieces of chicken; pat dry with paper towel.
  • Season with 1 tsp.
  • salt; set aside.
  • In a large saucepan, heat oil and saute onions and garlic.
  • Add chicken pieces skin-side down and brown lightly.
  • Add the sweet peppers, tomato puree, basil, oregano, parsley, salt and pepper flakes.
  • Cover and simmer over low- medium heat on the stovetop for 1-1/2 hour.
  • Note: Usually, tomato puree suggests adding a can of water.
  • In this recipe, the water comes from the cooking peppers and chicken which dilutes the puree without additional liquid.
  • However, if sauce becomes too thick during cooking, add 1/2 can of water (or wine) a little at a time until its consistency is to your liking.

Yield 1-2 servings

Number Of Ingredients 9

1/4 pound fresh capellini or 3 ounces dry capellini or dry coil vermicelli
1 hot or mild Italian sausage (4 oz.), casing removed
2 thick slices bacon, cut into 1/2-inch pieces
1 teaspoon minced garlic
1 tablespoon chopped green onion
3 large eggs, lightly beaten
2 tablespoons chopped parsley
2 to 3 tablespoons grated parmesan cheese
Salt and pepper

Steps:

  • In a 3- to 4-quart pan over high heat, bring about 2 quarts water to a boil. Add noodles and cook, uncovered, until barely tender to bite, 1 to 2 minutes for fresh pasta, 3 to 4 minutes for dry. Drain well. Crumble sausage into a 10- to 12-inch frying pan. Add bacon and stir often over medium-high heat until lightly browned. Drain off and discard all but 2 tablespoons fat. Add garlic and green onions; stir often until onion is limp. Add cooked pasta and mix until hot and coated with fat. Add eggs, 1 tablespoon parsley, and parmesan cheese; stir until eggs are softly set. Spoon onto a plate. Add salt and pepper to taste. Sprinkle noodles with remaining 1 tablespoon parsley. Makes 1 generous or 2 smaller servings.
