This classic Italian-American comfort food works with any kind of sausage, but I like the fennel and anise flavors of sweet Italian sausage with the beans--it's a hearty soup that's fast and easy to put together.

1 tablespoon olive oil
12 ounces sweet bulk Italian sausage
1 stalk celery, diced
½ yellow onion, chopped
¾ cup dry elbow macaroni
¼ cup tomato paste
3 cups chicken broth, or more as needed, divided
Salt and freshly ground black pepper to taste
¼ teaspoon crushed red pepper flakes, or to taste
¼ teaspoon dried oregano
3 cups chopped Swiss chard
1 (15 ounce) can cannellini (white kidney) beans, drained
¼ cup grated Parmigiano-Reggiano cheese, plus additional for serving, or to taste

Steps:

  • Heat oil in a skillet over medium-high heat. Brown sausage while breaking it into small pieces, about 5 minutes. Reduce heat to medium. Add diced celery and chopped onion. Cook until onions are translucent, 4 to 5 minutes. Add dry pasta. Cook and stir 2 minutes.
  • Stir in tomato paste until evenly distributed, 2 to 3 minutes. Add 3 cups broth. Raise heat to high and bring to a simmer. Add salt, black pepper, pepper flakes, and oregano. When soup comes to a boil, reduce heat to medium and let it simmer about 5 minutes, stirring often. Check soup consistency and add more broth, if needed.
  • Place chopped chard in a bowl. Cover with cold water and rinse the leaves; any grit will fall to the bottom of the bowl. Transfer chard to colander to drain briefly; add to soup. Cook and stir until leaves wilt, 2 to 3 minutes.
  • Stir in white beans; continue cooking and stirring until pasta is perfectly cooked, another 4 or 5 minutes. Remove from heat and stir in grated cheese. Serve topped with grated cheese, if desired.

6 ounces pancetta, diced
1 small yellow onion, finely diced
1 teaspoon dried Italian seasoning
1/2 teaspoon red pepper flakes
Kosher salt
3 cloves garlic, minced
1/4 cup dry white wine
2 cups chicken stock
Two 15-ounce cans cannellini beans, drained and rinsed
One 15-ounce can crushed tomatoes
3/4 cup ditalini or other small pasta
1 cup grated Parmesan cheese (about 2 ounces)
1 cup roughly chopped fresh basil
Soppressata Sandwiches, for serving, recipe follows

Steps:

  • Cook the pancetta in a large Dutch oven over medium heat, stirring occasionally, until the fat has rendered and the pancetta is crisp, about 5 minutes. Remove the pancetta to paper towels to drain, reserving the fat in the pot.
  • Add the onion, Italian seasoning, red pepper flakes and a couple pinches of salt to the pot and saute, stirring frequently, until the onion is translucent, 8 to 10 minutes. Add the garlic and saute until fragrant, about 15 seconds.
  • Deglaze the pot with the wine and bring to a simmer, scraping the bottom of the pot with a wooden spoon.
  • Add the chicken stock, beans, tomatoes and 1 cup water to the pot. Increase the heat to medium high and bring to a boil, then reduce the heat to medium low and simmer until slightly thickened, about 30 minutes.
  • Puree the soup with an immersion blender, about 30 seconds, keeping at least half of the beans intact (or puree in a regular blender, then return to the pot). Add the pasta and cook until al dente, 8 to 12 minutes. Stir in the pancetta and half each of the parmesan and basil. Adjust the seasoning, if necessary, and garnish with the remaining parmesan and basil.
  • Serve with Soppressata Sandwiches.
  • Split open and quarter 1 baguette. Layer thick slices of sharp provolone and thinly sliced soppressata on the bread. Add some baby arugula and drizzle with sweet Italian vinaigrette.

1 pound hot or sweet Italian sausage, casings removed
1 pound ground beef
1 large onion, chopped
4 garlic cloves, chopped
1 teaspoon dried oregano, crumbled
1/2 teaspoon dried thyme, crumbled
1 28-ounce can Italian plum tomatoes, drained, chopped
2 tablespoons tomato paste
1/4 teaspoon cayenne pepper
1 15-ounce can kidney beans, rinsed, drained
Salt and pepper
1 pound mostaccioli pasta, freshly cooked
1/2 cup grated parmesan
1/4 cup chopped fresh Italian parsley
12 ounces Fontina or provolone, grated

Steps:

  • Preheat oven to 400°F. Sauté first 6 ingredients in heavy large saucepan over medium-high heat until sausage and beef are brown, crumbling with fork, about 5 minutes. Add tomatoes, tomato paste and cayenne and simmer 5 minutes, breaking up tomatoes with back of spoon. Add kidney beans and heat through. Season with salt and pepper. Add mostaccioli, Parmesan and parsley and toss to combine. Transfer to 9x13-inch baking dish. Sprinkle with cheese. Bake until cheese melts, about 30 minutes.

This is a delicious dish that includes beans, pasta and sausage meat all in one, topped with cheese then baked in the oven, it's a very popular Italian dish and there are many versions of this recipe, this one is a family favorite, I hope you enjoy this as much as my family does! --- If you prefer a dryer mixture then drain the tomatoes, ziti pasta works well in place of penne, please adjust the cayenne pepper to suit heat level, prep time includes cooking the pasta.

Steps:

  • Set oven to 400 degrees F.
  • Grease a 13 x 9-inch baking pan.
  • Cook the pasta until just al dente (do not overcook); drain, do not rinse and immediately toss with 1-2 Tbsp oil to prevent sticking; set aside.
  • In a large fry pan, sauté the sausage, ground beef, onion, garlic, dried oregano and thyme, over med-high heat, until the sausage and the ground beef are brown, crumbling with a fork while cooking (about 6-7 minutes).
  • Add in the undrained tomatoes, tomato paste and the cayenne pepper; simmer for 5-6 minutes (breaking up tomatoes with the back of a spoon).
  • Add in the kidney beans, and heat through.
  • Season with salt and pepper.
  • Add in the cooked pasta, Parmesan cheese and parsley; toss to combine.
  • Transfer the mixture to a prepared baking dish.
  • Top with grated cheese.
  • Bake for 25 minutes, or until cheese melts and the mixture is hot and bubbly.

This is a Southern Calabrese (Soveria-Simeri) variation of Pasta Fagioli Soup, only it's really a pasta dish with a flavorful and spicy tomato, bean, and onion sauce.

1 (14 ounce) can northern white beans, drained and rinsed
1 white onion, diced
1 garlic clove, minced
1/4 cup extra virgin olive oil
28 ounces tomato sauce
1 (14 ounce) can chicken broth
1/2 lb ditali pasta
1 tablespoon fennel seed
1 tablespoon rosemary
1/4 cup dried basil
1 teaspoon crushed red pepper flakes
salt and pepper, to taste
1/2 cup pecorino romano cheese, shredded

Steps:

  • Start boiling salted water in large pot. Cook pasta until al dente (slightly firm).
  • While pasta cooks, saute onion and garlic, and generous amount of salt and fresh ground black pepper, in olive oil until soft. Add tomato sauce and remaining spices, and simmer on medium-low heat for 20-minutes, stirring frequently.
  • When pasta is done cooking, drain the water and return the pasta to the pot. Add the hot tomato sauce (be careful), broth, beans, and season with more salt and pepper, if needed. Mix thoroughly, continuing to heat on medium-low heat until desired temperature.
  • Serve immediately, topping with generous amount of shredded cheese. Buon Appetito!

NEW YEAR'S "GOOD LUCK" PASTA FAZOOL



New Year's

It's a scientific fact that eating pork, beans, or greens at the beginning of a new year brings you great luck-just imagine if we put all three of those things together in a single dish. This is so satisfying and delicious that even if it brought me bad luck, I'd still make it. Best served with some crusty, toasted bread.

12 ounces bacon, sliced into 1-inch pieces
½ cup diced onion
½ cup diced celery
1 teaspoon salt, plus more to taste
½ teaspoon freshly ground black pepper
1 pinch cayenne pepper, or to taste
¼ teaspoon dried thyme
¼ teaspoon dried oregano
2 tablespoons tomato paste
4 cloves garlic, finely minced
4 cups chicken broth
1 cup water
1 large bunch Swiss chard
1 (15.5 ounce) can cannellini beans, drained
1 ¼ cups orecchiette pasta
1 tablespoon freshly grated Parmigiano-Reggiano, or to taste
1 drizzle olive oil
1 pinch red pepper flakes, or to taste

Steps:

  • Place a cold soup pot over medium heat. Add sliced bacon. Cook, stirring occasionally, until most of the fat has rendered out and the bacon begins to crisp up, about 5 minutes. Drain off most of the excess fat with a paper towel if desired, leaving about 1 tablespoon in the pot. Add onions, celery, and salt. Saute until and softened onions turn translucent, 5 to 7 minutes.
  • Stir in black pepper, cayenne, dried thyme, dried oregano, and tomato paste. Cook, stirring occasionally, until the tomato paste starts to caramelize onto the bottom of the pan, about 2 minutes. Add the minced garlic, and cook, stirring, for 1 to 2 more minutes. Stir in chicken broth and water and raise the heat to high. Bring to a simmer over high heat; reduce heat to medium and let simmer while you prep the Swiss chard.
  • Remove chard leaves from tough stems. Gather a handful of leaves and slice across in one direction; turn and slice across again. Repeat with remaining chard. Place into a bowl and fill with water. Swish around to remove dirt; transfer washed greens a handful at a time to another bowl to drain.
  • Stir the Swiss chard into the pot and simmer over medium heat until greens become tender, about 10 minutes. Season with salt.
  • Stir in the drained beans and raise the heat to high; bring to a boil. Stir in pasta and reduce heat to medium-high. Cook until the pasta is tender, stirring occasionally, 12 to 15 minutes.
  • Once the pasta is tender, check the seasoning. Serve immediately in large bowls. Garnish with Parmigiano-Reggiano cheese, a drizzle of olive oil, and red pepper flakes.

  • To serve, divide the pasta between the bowls and ladle some soup on top. Garnish with the remaining parmesan and basil. Finish with a crack of black pepper.

2 tablespoons olive oil
1/2 medium yellow onion, cut into small dice (about 2/3 to 3/4 cup`)
1 medium carrot, cut into small dice
1 celery rib, cut into small dice
2 large garlic cloves, minced
1/8 teaspoon crushed red pepper flakes
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground black pepper
48 ounces low sodium chicken broth (6 c.)
1 (14 ounce) can diced tomatoes
1 (6 ounce) can Hunts tomato sauce
1 (14 ounce) can cannellini beans (drained and rinsed)
1/2 lb pasta (elbow or tubetti)
1 head escarole (optional)

Steps:

  • Add olive oil to the pot, increase the heat to medium-high, and add the onion. Cook, stirring frequently, until fragrant and beginning to soften, about 2 minutes.
  • Add the carrot and celery and cook, stirring frequently, until they begin to soften and brown, about 2 minutes more. Be sure to scrape any brown bits from the bottom of the pan.
  • Stir in the garlic, pepper flakes, salt & black pepper and cook, stirring, until the garlic is fragrant, about 1 minute more.
  • Add the chicken broth, tomatoes and bring to a boil over high heat.
  • When the broth reaches a boil, reduce the heat to medium, add HALF of the beans.
  • Mash the remaining beans with a fork or wooden spoon and add them to the pot, stirring to distribute.
  • Stir in the optional escarole, adjust the heat as necessary to maintain a gentle simmer, and simmer until the escarole is tender, 15 to 20 minutes. (I cover the pot loosely during this step to prevent too much reduction in the broth.).
  • Meanwhile cook the pasta to al dente.
  • Stir in the cooked pasta just before serving. Note that the pasta will absorb a lot of the broth.
  • Top the dish with grated cheese to taste.
  • (It's even better the next day!).

This recipe is from the October 2004 issue of Bon Appétit but I've modified it a bit here to make it easier and better suit my family's tastes. It is really easy because it uses mostly canned food items and is incredibly tasty. This dish could easily be made vegetarian by omitting the sausage and adding some mushrooms. I prefer to make it with fresh pasta instead of dried in which case you simmer for about 28 minutes then add the spinach and about a minute or two later add the pasta. I wasn't sure there was still enough liquid for the pasta to cook properly but I just covered the pan and it turned out great.

1 large sweet onion, diced

1 1/4 lbs Italian turkey sausage links, casings removed

2 (15 ounce) cans cannellini, drained and rinsed (white kidney beans)
1 1/2 cups chopped fresh basil, divided

1 cup orecchiette or 1 1/2 cups fresh gemelli pasta
1 (6 ounce) bag baby spinach leaves

Steps:

  • Heat oil in heavy large pot over medium-high heat.
  • Add onion and garlic powder and sauté 6-10 minutes.
  • Add sausage and sauté until brown, breaking up large chunks with back of fork, about 5 minutes.
  • Add tomatoes with juice, broth, beans, 1 cup basil, oregano, and dried crushed red pepper.
  • Simmer/boil 15 minutes to blend flavors, stirring occasionally.
  • Add dried pasta and cook until tender but still firm to bite, about 15 more minutes.
  • Add spinach and cook just until wilted, stirring occasionally, about 4 minutes.
  • Mix in 1/3 cup cheese and remaining 1/2 cup basil.
  • Season ragout with salt and pepper; ladle into bowls. Serve, passing additional cheese separately.

My Grandma's recipe that has been passed down for many years. It is a tomato based soup with Ditalini pasta, tiny meatballs, and great northern beans. I make several gallons for a church election supper once a year, and very seldom is there any left! My grandma could cook an old shoe and make it taste super.

10 tablespoons extra virgin olive oil
1/2 cup onion, Finely chopped
3 garlic cloves, Minced
1 carrot, Finely chopped
1 celery rib, Finely chopped

1 (6 ounce) can tomato paste
2 (14 ounce) cans beef broth
water, as needed
2 (15 ounce) cans great northern beans (Drained)
1 cup parmesan cheese
6 tablespoons parsley
3 1/2 tablespoons dried basil
2 teaspoons dried oregano
1/2 teaspoon dried rosemary
1 dried bay leaf
1 teaspoon sugar
2 teaspoons baking soda
8 ounces ditalini
1 lb ground beef round
1/2 cup unseasoned breadcrumbs
2 eggs, beaten
1 teaspoon onion powder
1 teaspoon garlic powder
1 tablespoon parsley flakes
salt and pepper

Steps:

  • Add the EVO, onion, garlic, carrot and celery to a 1-2 gal. cooking pot.
  • Cook on medium low heat until they are soft and the onions transparent (Appr. 15-20 mins).
  • While the vegetables are cooking, mix the beef, egg, onion powder, garlic powder, 2 TBS. parsley flakes, 1/2 tbs. basil, bread crumbs, 2 Tbs. parseman cheese, S & P. Shape into tiny meatballs (Appr. 1/2 " in diameter) are fry until done. You may need to cook several batches, depending on the size of your skillet.
  • After the vegetables have cooked, add the tomatoes, tomato paste, beef broth, and the rest of the parmesan cheese, parsley, basil, oregano, rosemary, bay leaf, sugar, & baking soda. Stir occasionally until foam disappears from the baking soda.
  • Cook until well mixed and add the meatballs.
  • Simmer for 1 to 1-1/2 hours and then add the beans. Simmer for another 30 to 45 minutes. Add water to the soup if it seems to get too thick.
  • While the soup is simmering, Cook the ditalini noodles until they are a-denti. DO NOT OVERCOOK!
  • Add the pasta to the soup just before serving. Do not add the pasta to the soup too soon! The longer the soup cooks with the noodles, the larger the noodles get.
  • Serve with a crusty bread, green salad, and extra Parmesan cheese.

This is my version of Pasta Fagioli that I came up with by taking bits of recipes and putting them together to make what pleased my palate. I'm quite pleased with the result. This is a very thick soup. You could easily add more stock if you want a thinner soup. Feel free to substitute the beans you like best.

6 cups chicken stock
1 cup uncooked ditalini (or other small pasta)
1 (14 1/2 ounce) can kidney beans

2 carrots, diced
2 celery ribs, diced

1 lb hot Italian sausage or 1 lb sweet Italian sausage link, casings removed
1 lb ground beef
1 large onion, chopped
4 cloves garlic, chopped
1 teaspoon dried oregano, crumbled
1/2 teaspoon dried thyme, crumbled
1 (28 ounce) can Italian plum tomatoes, drained,chopped
2 tablespoons tomato paste
1/4 teaspoon cayenne pepper
1 (15 ounce) can kidney beans, rinsed,drained
salt and pepper
1 lb mostaccioli pasta, freshly cooked
1/2 cup grated parmesan cheese
1/4 cup chopped fresh Italian parsley
12 ounces fontina or 12 ounces provolone cheese, grated

Steps:

  • Preheat oven to 400°F Sauté first 6 ingredients in heavy large saucepan over medium-high heat until sausage and beef are brown, crumbling with fork, about 5 minutes.
  • Add tomatoes, tomato paste and cayenne and simmer 5 minutes, breaking up tomatoes with back of spoon.
  • Add kidney beans and heat through.
  • Season with salt and pepper.
  • Add mostaccioli, Parmesan and parsley and toss to combine.
  • Transfer to 9x13-inch baking dish.
  • Sprinkle with cheese.
  • Bake until cheese melts, about 30 minutes.

I made this dish last year on a snowy day with what I had in my pantry. I wasn't about to go to the market with a foot of snow on the ground and abominable road conditions to try and find pancetta and fresh herbs. I knew I could make this work with what I had at home. And I do believe I achieved my goal.

1 Tbsp canola oil
2 bay leaves
1 c chopped onion
1 rib celery chopped
1 carrot chopped
3 cloves garlic minced
1/2 tsp kosher salt
1/4 tsp black pepper
1/2 tsp old bay seasoning
1/2 tsp crushed red pepper flakes
2 can(s) (15 oz each) cannelini beans drained and rinsed
1 can(s) (15 oz) tomato sauce with italian herbs
1-1/2 c water
2 can(s) (14.5 oz each) fat free chicken broth
1 c linguini or spaghetti broken into 1 inch pieces
5 oz baby spinach
grated parmesan or romano cheese for garnish

Steps:

  • 1. In large soup pot on medium to low heat, add oil. Then add onions, carrots and celery. After a minute or two add bay leaves, salt, pepper, Old Bay, crushed red pepper and garlic. Cook on low, covered, until vegetables are soft (about 6-8 minutes). Don't brown the mixture, you just want them to sweat.
  • 2. Add beans, tomato sauce, chicken broth and water. Increase heat and bring to a rapid boil. Add pasta, reduce heat to medium, simmer uncovered and cook 6-8 minutes, stirring occasionally. Add spinach and cook another 3 minutes.
  • 3. Fish out the bay leaves and serve with a dusting of cheese and a crusty loaf of bread.

1 lb Ground Beef

4 garlic cloves chopped
1 teaspoon dried oregano, crumbled
1 28oz can Italian plum tomatoes, drained, chopped
2 tablespoons tomato paster
1/4 teaspoon cayenne pepper
1 15 oz can kidney beans, rinsed, drained
Salt and Pepper
1 lb motaccioli pasta freshly cooked
1/2 cup grated Parmesan
1/4 cup chopped fresh Italian parsley
12 oz Fontina or aged provolone, grated

Steps:

  • Preheat oven to 400 degrees F. Saute first 6 ingredients in heavy saucepan over medium high heat until sausage and beef are brown, crumbling with fork, about 5 minutes. Add tomatoes, tomato paste and cayenne and simmer 5 minutes, breaking up tomatoes with back of spoon. Add kidney beans and heat through. Season with salt and peppers. Add mostaccioli, Parmesan and parsley and toss to combine. Transfer to 9 x 13 inch baking dish. Sprinkle with chesse. Bake until cheese melts, about 30 minutes. A little crust on top makes it tast great!

1 lb bob evans bulk Italian sausage, browned and drained
1 (1 1/4 ounce) package mccormick's mild chili seasoning mix
1 (8 ounce) can tomato sauce
1 (8 ounce) can pizza sauce
1/4 teaspoon italian seasoning
1/4 teaspoon black pepper
2 garlic cloves, minced
1 (15 ounce) can red kidney beans
1 (15 ounce) can white cannellini beans (or pinto beans)
1 cup water
1 cup ditali pasta, cooked and drained (or another small pasta)
1/4 cup shredded parmesan cheese (or Asiago Cheese(optional)

Steps:

  • Brown Italian sausage, rinse and drain.
  • Place sausage in a soup pot.
  • Add garlic, Chili mix and Italian seasoning and stir.
  • Add tomato paste, pizza sauce, water and beans (do not drain).
  • Boil 10 minutes while you cook the pasta in separate pot.
  • Drain pasta, add to soup.
  • Simmer 5 minutes.
  • Garnish with cheese.

6 Italian sausages (about 1 1/2 lb.)
2 tablespoons extra virgin olive oil
1 large onion, finely chopped (about 1 1/2 cups)
2 -3 large garlic cloves, minced
1 teaspoon fresh rosemary leaf
10 ounces mushrooms, sliced through the stem
6 cups water
2 cups canned crushed tomatoes
1 teaspoon coase sea salt
1/2 teaspoon fresh ground black pepper
4 cups cooked chickpeas (or two 16 oz. cans, drained)
6 cups cooked small macaroni noodles or 6 cups rice

Steps:

  • In large pot, combine the sausages and oil; brown the sausage on all sides over low to medium heat, turning often.
  • Remove sausages and set aside; pour off all but 1 tablespoon fat.
  • Saute the onion in the same pot, over medium heat, until wilted and the browned bits on the bottom of the pot have become syrupy, 3-5minutes.
  • Stir in the garlic and rosemary; stir/saute for another minute, until both smell profusely.
  • Stir in the mushrooms and saute until mushrooms have exuded their liquid and have become limp and tender.
  • Add in water, crushed tomatoes, salt, and pepper; stir well, cover, and bring to a boil over medium heat.
  • Whil waiting for soup to boil, cut the sausages into 1/4-inch thick slices.
  • When the soup boils, decrease heat, uncover, and let simmer gently for 5 minutes.
  • Stir in the drained chickpeas; return to a simmer.
  • Stir in the sliced sausages and turn off the heat; serve piping hot in flat bowls over macaroni or rice.
  • Can be refrigerated for several days; can be frozen for up to six months.

2 cups cannellini beans
12 ounces stewed tomatoes
3 cups vegetable broth (or beef broth if not needing it to be vegetarian)
1/2 onion, diced
1/2 cup carrot, diced
2 tablespoons garlic, minced
1 teaspoon rosemary
1 tablespoon parsley
1 teaspoon thyme
2 cups fresh spinach
shell pasta

Steps:

  • Combine the cannellini beans and tomatoes in a greased slow cooker insert. Add the broth, onion, carrots, garlic, rosemary, parsley and thyme to the insert. Cover and cook for four hours on high.
  • Add the spinach; continue cooking for 10 minutes. Boil the small shell pasta until shells are al dente.
  • Add pasta to serving dish, pour soup over.

OLIVE GARDEN PASTA FAZOOL

Number Of Ingredients 13

2 teaspoons olive oil
1 pound ground beef
2 cups each, diced: carrots and celery
1 cup hot water
1/2 cup instant bouillon granules
2 teaspoons dried oregano
1 teaspoon black pepper
1 1/2 tablespoon fresh chopped parsley (more if desired)
1 teaspoon hot red pepper sauce (like Tabasco)
6 cups chunky pasta sauce
1 can (15-to 16-ounce size) drained and rinsed; red kidney beans
1 can (15-to 16-ounce size) drained and rinsed; white kidney beans
2 cups cooked pasta (macaroni or small shells)

Steps:

  • Heat oil in stockpot over medium-high heat. Add beef and saute, stirring to break up, 5 minutes or until beef loses its pink color. Add onion, carrots and celery; simmer 10 minutes. Place hot water in small bowl and add bouillon granules to dissolve. Stir bouillon mixture, oregano, black pepper, parsley, pepper sauce and pasta sauce into stockpot. Simmer 10 minutes. Add 1 quart water or enough to reach desired consistency; stir and simmer about 30 minutes. Stir in beans. Stir in pasta just before serving. I have made this recipe many times and it is very good; however, I have changed a few things. First, I thought the 1/2 cup of bouillon granules sounded too much and so I just take one Knorr beef bouillon cube and put in into 2 cups of boiling water and use that instead. Second, I use one large can of crushed canned tomatoes with 4 cups of chunky pasta sauce.
