8 egg yolks
1 cup white sugar
1 tablespoon orange zest
¾ cup matzo cake meal
¼ cup potato starch
8 egg whites
½ cup white sugar
1 ½ tablespoons fresh orange juice

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Cut parchment paper to line the bottom of a 10 inch tube pan. Do not grease the pan.
  • In a medium bowl, whip egg yolks until light. Gradually add 1 cup sugar and orange zest; continue whipping until thick and pale, about 7 minutes. Sift together the matzo cake meal and potato starch; set aside. In a large glass or metal mixing bowl, beat egg whites until foamy. Gradually add remaining 1/2 cup sugar, continuing to beat until whites form stiff peaks. Fold the dry ingredients into the yolk mixture alternately with the juice. Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain. Spread evenly into the prepared pan.
  • Bake for 1 hour and 10 minutes in the preheated oven, until cake springs back to the touch. Invert onto a wire rack to cool. Run a knife around the sides of the cake before removing from the pan.

Margarine, for pan
Matzo meal, for pan
4 large eggs, separated
1/2 cup sugar
1 pinch salt
Grated zest of 1 orange
1/2 cup potato starch

Steps:

  • Preheat the oven to 350 degrees. Grease a 9-by-9-inch baking pan with margarine. Dust pan with matzo meal; set aside.
  • In the bowl of an electric mixer fitted with the whisk attachment, beat egg yolks on medium-high speed with 1/4 cup sugar until thickened, about 4 minutes. Transfer to a large mixing bowl. Wash and dry the mixer bowl and the whisk attachment.
  • Place egg whites and salt in mixer bowl. Beat on medium speed with whisk attachment until soft peaks form. With machine running, slowly pour in the remaining 1/4 cup sugar; continue beating until stiff and glossy, about 3 minutes. Fold egg whites and orange zest into yolk mixture. Sift potato starch over the mixture, and fold in.
  • Transfer the batter to the prepared pan. Bake until a cake tester inserted into the middle of the cake comes out clean, 10 to 15 minutes. Transfer pan to a wire rack, and let cool 15 minutes.

¾ cup potato starch, sifted
10 eggs, separated
1 cup white sugar
½ cup unsweetened cocoa powder
½ cup white sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Spray a 10-inch tube pan with cooking spray.
  • Sift matzo cake meal with potato starch into a bowl; set aside.
  • Place egg yolks into a large mixing bowl and beat with an electric mixer on medium speed until light, about 3 minutes.
  • Slowly beat 1 cup sugar into the egg yolks; continue beating until mixture is thick and pale, about 5 more minutes. Beat cocoa powder into the egg yolk mixture until thoroughly combined.
  • Beat egg whites with an electric mixer fitted with clean beaters in a separate bowl until foamy. Gradually beat in 1/2 cup sugar and continue to beat until egg whites hold stiff peaks.
  • Lightly stir matzo cake meal mixture and coffee into egg yolk-cocoa mixture.
  • Gently fold 1/3 of the egg whites into the batter, retaining as much volume as possible. Fold in remaining egg whites, mixing just until no white streaks remain. Gently mix in chopped walnuts.
  • Spoon the batter evenly into the prepared tube pan.
  • Bake in the preheated oven until top of cake shows small cracks and springs back when lightly pressed, about 45 minutes.
  • Run a knife around the sides of cake to loosen from the pan. Invert cake onto a wire rack to cool.

This cake uses ground almonds to replace the wheat flour usually found in cakes. When preparing the almonds, a hand grinder is preferable to a food processor or blender because electric machines bring out the oil in nuts. If a blender or food processor is used, grate only 1/2 cup at a time. Do not pack down when measuring.

  • Melt chocolate in top of double boiler; set aside.

1 ½ cups white sugar
½ cup orange juice
zest from 1 lemon
zest from 1 orange
¼ cup potato flour

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 10-inch angel food cake pan.

5 egg yolks
1 1/2 cups sugar
2 lemons, zest of, grated
1/2 cup fresh lemon juice
1/2 cup poppy seed
1 cup matzah meal cake flour
3 tablespoons potato starch
10 egg whites
1 teaspoon cream of tartar
1/8 teaspoon salt
3 cups confectioners' sugar
7 tablespoons fresh lemon juice
2 teaspoons finely grated lemon zest

Steps:

  • For the cake:.
  • Preheat the oven to 325°F.
  • In the bowl of an electric mixer, combine the egg yolks and 1 cup of the sugar. Start the mixer on low speed and gradually increase to high speed. Beat until the mixture is thick, moussy and pale yellow, about 8 minutes. Beat in the lemon zest, lemon juice and poppy seeds.
  • Sift the matzah meal cake flour and potato starch over the yolk mixture, but don't mix.
  • Place the egg whites in a clean mixing bowl. Beat on low speed until frothy, about 2 minutes. Add the cream of tartar and salt. Increase the speed to medium and beat for 2 more minutes. Increase the speed to high and add the remaining sugar gradually over 4 minutes.
  • Whisk the egg yolk-matzah mixture just to mix. Gently fold the whites into the yolk mixture.
  • Spoon the batter into an ungreased 10" tube pan. Bake 50 to 60 minutes, until the cakeis browned and springy to the touch.
  • Immediately invert the pan on th eneck of a bottle until the cake is completely cool. Slide a knife around the pan and unmold the cake onto a round platter.
  • For the glaze:.
  • Sift the confectioner's sugar into a mixing bowl. Add the lemon juice and zest and whisk to mix. The glaze should be thick but pourable. Adjust the consistancy by adding lemon juice if it is too thick and confectioner's suger if it is too thin. Spoon the glaze over the cake. When you are ready to serve, use a serrated knife to cut the cake.

AUNT IDA'S PASSOVER SPONGE CAKE

Credit is given to Sandra Levine for her Aunt Ida's Sponge Cake. I came across this recipe that was posted on another site in March 2002 and it received great reviews. This cake is said to be good enough to be enjoyed all year long and I can hardly wait to bake it for seder #1. Now it can be said - since I made this cake for the 1st seder, I would not hesitate to make it again. The cake had a great light texture and tasted great; it was MOIST, it rose up quite high and everyone raved about it. Next time I make this, I will cut out and add a piece of parchment paper on the bottom of the pan, since it did stick ever so slightly. And also very important if you are making an additional 8" or 9" cake, only bake it for 25-30 minutes.

9 eggs, room temperature, separated
1 1/2 cups sugar
1/2 cup matzo cake meal
2 tablespoons potato starch
1/4 teaspoon salt
1 teaspoon grated lemon peel
1 teaspoon grated orange peel
1/2 cup finely chopped nuts

Steps:

  • Place egg yolks in bowl of stand mixer. Beat for 10 minutes. Combine orange and lemon peel with sugar and add gradually to egg yolks. Beat for 6 more minutes.
  • Sift dry ingredients. Set aside.
  • Beat egg whites until stiff but not dry.
  • Beginning and ending with flour, fold dry ingredients and egg whites alternately into egg yolk mixture. Mix nuts into last of flour before adding to cake.
  • Preheat oven to 300 degrees. Gently pour batter into 2 piece tube pan. Bake for 10 minutes.
  • Increase temperature to 325 degrees and bake for 40-45 minutes.

  • In a large mixing bowl, beat the egg whites at low speed for about 1 minute, until the whites are loose and have begun to foam. Increase speed of mixer to high; gradually add the sugar and continue beating for at least 5 minutes.

¼ cup potato starch
6 large eggs, separated
¾ cup sugar
1 teaspoon strained fresh lemon juice
1 teaspoon finely grated lemon zest
Pinch of salt
2 Golden Delicious apples (10 to 11 ounces), peeled, cored, and cut into 1/8-inch slices
2 teaspoons ground cinnamon mixed with 1 tablespoon sugar

Steps:

  • Preheat oven to 325°F. Have ready a 9-inch springform pan; do not grease it.
  • Sift cake meal with potato starch into a bowl. Beat egg yolks in a large bowl with an electric mixer. Beat in ½ cup sugar. Whip at high speed about 5 minutes or until mixture is pale and very thick. Stir in lemon juice and zest.
  • In another large clean bowl, beat egg whites and salt with a mixer until soft peaks form. Gradually beat in remaining ¼ cup sugar. Beat at high speed until whites are stiff and shiny but not dry.
  • Fold cake meal mixture into yolks. Lightly fold in whites in 3 batches, just until batter is blended.
  • Lightly spoon about one third of the batter in prepared pan. Gently cover with half the apples. Sprinkle them with 2½ teaspoons cinnamon mixture. Top with half the remaining batter, then with the remaining apples, and sprinkle them with the remaining cinnamon mixture. Spoon remaining batter over apples and spread gently.
  • Bake about 1 hour or until top is firm and a cake tester inserted in cake's center comes out clean. Cool in pan on a rack 10 minutes. Run a metal spatula carefully around cake. Remove sides of pan. Cool completely. (Cake can be kept, covered, 2 days in refrigerator.)

  • Beat whites with ½ shell of cold water and salt to egg whites until stiff but not dry. Put aside . In another bowl, beat yolks until thick and lemon colored. Add lemon juice and rind. Fold into whites. Sift cake meal and potato starch and fold into egg mixture. Then pour into angle food tube pan and bake 325 for one hour. When you think cake is done, open oven and listen to make sure cake is not "hissing." If it is, then leave another five minutes and test. Make sure to keep noise at a minimum while cake is baking or it will fall. When you remove cake from oven, invert and cover with a wet towel. Allow to cool completely prior to removing from pan.
