This dip/salsa is fresh, delicious and nutritious. Everyone loves it, except my SIL who has an strange bean phobia. It's one of my most requested recipes.

2 cans Rotel tomatoes & chilies, mild,original or hot,your choice,drained well
2 cans black-eyed peas, drained and rinsed
2 -3 large green peppers, diced small
2 cups sweet onions, diced small
1 bunch cilantro, finely chopped
1 (8 ounce) bottle kraft zesty Italian dressing
your favorite tortilla chips, for dipping

Steps:

  • Place all ingredients in a large bowl and mix well.
  • Cover and place in refrigerator to marinate for a minimum of 2 hours.
  • It's best made the day before, but my DH has been know to eat a big bowl full right away.

This recipe is one I created this evening after going to the local market. Wild cod was on sale and my husband was craving it. I thought the delicate flavor of cod would work perfectly with a tangy salsa. This recipe was super easy to make and perfect for a hot summer night!

1 mango - peeled, seeded, and diced
4 tomatoes, chopped
2 Persian cucumbers, finely chopped
1 (15.5 ounce) can garbanzo beans (chickpeas), rinsed and drained
1 lime, juiced
1 lemon, juiced
1 tablespoon minced pickled jalapeno pepper
2 teaspoons red pepper flakes
2 tablespoons chopped fresh lemon basil
kosher salt to taste
2 pounds cod fillets
2 teaspoons paprika, or to taste
kosher salt and freshly ground black pepper, to taste
¼ cup canola oil, or as needed
4 flour tortillas

Steps:

  • Stir the mango, tomato, cucumber, garbanzo beans, lime juice, lemon juice, jalapeno pepper, red pepper flakes, and lemon basil in a bowl; season with kosher salt. Set aside.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Season the cod with the paprika, salt, and pepper; brush with the canola oil.
  • Cook the cod on the preheated grill until the fish flakes easily with a fork, about 3 minutes per side. Quickly warm the tortillas on the grill just before the cod is finished. Serve the cod in the warm tortillas topped with the mango salsa.

1 (10 ounce) can white shoepeg corn, drained and rinsed

Steps:

  • Drain all canned ingredients.
  • Mix vegetables together in bowl.
  • Coat with the Italian dressing.
  • You may not need the entire bottle.
  • Cover and chill overnight.

2 tablespoons lime juice

1 teaspoon freshly ground cumin seed
salt, to taste
corn tortilla chips

Steps:

  • Mix together the cilantro, tomatoes, red onion, jalapeno, tomatillos, lime juice, hot chili sauce and cumin seed in a large bowl. Season with salt to taste.

1 14 1/2-to 16-ounce can stewed tomatoes, well drained
1 medium onion, quartered
10 large garlic cloves
3 jalapeño chilies, stemmed, seeded
1 bunch cilantro, stems trimmed
4 large tomatoes, seeded, quartered
1 4-ounce can diced green chilies
6 large green onions, chopped
1 tablespoon ground cumin
3 tablespoons fresh lemon juice
4 teaspoons fresh lime juice
Tortilla chips

Steps:

  • Process stewed tomatoes, onion, garlic cloves, jalapeños and half of cilantro in processor to chunky puree. Transfer mixture to large bowl. Place fresh tomatoes, diced green chilies and remaining cilantro in processor and blend until tomatoes are finely chopped. Add to mixture in large bowl. Mix in green onions, cumin, and lemon and lime juices. Season salsa to taste with salt and pepper. Cover and chill until cold, at least 1 hour and up to 4 hours. Serve with tortilla chips.

Such pretty colors freckling the buffet or picnic table, with this salsa in the starring role! An easy-to-put-together QUICK little number that will tingle the taste buds with its perky piquant flavor combination. My mother didn't know my four brothers and I were throwing her a surprise party to celebrate her 75th birthday on December 25th (2009), but she had a slew of stuff already prepared for what she thought was a smaller Christmas party. My sis-in-law (Kim) shared this recipe with Ma, and she passed it along to me, so this is truly a family favorite--and my Dear Hubby (who usually doesn't like bean salads with vinegary-oil dressings) loved this concoction...AND my Dear Son-the-onion-hater actually thought this was pretty decent, too (even if he "had" to pick out the onjens/onions!). PREP time includes cooling time for the dressing and a 24 hour marinating period for the beans. PLAN AHEAD!!! Ma tells me that this "lasts forever" with the vinegar in there, and she added salt; I also thought it might be good to add some cilantro or a pinch of red pepper flakes.

1/2 cup cider vinegar
1/2 cup sugar

  • Prepare dressing: mix Dressing Ingredients in a saucepan and bring to a boil, remove from heart. Cool to room temperature.
  • Dump all the "Bean Part" ingredients into a large plastic bowl, pour the cooled dressing over, stir and cover.
  • Allow mixture to marinate for 24 hours, stir every so often OR gently shake the covered bowl.
  • Drain, spoon into a serving dish, and serve with tortilla chips.
  • BRILLIANT IDEA: this is good with the tortilla chips, but it also makes a delightful serving of "beans" for a picnic or for someone's lunch.

My husband's mom, Connie Swanson, prepared a big batch of this pretty and zippy salsa to serve at our wedding reception. It's very special and fresh-tasting. There's no need to peel the tomatoes since they're so finely chopped.

16 medium ripe tomatoes, chopped
2 large onions, finely chopped
1 medium green pepper, finely chopped
1/2 cup minced fresh parsley
2 to 4 jalapeno peppers, seeded and finely chopped, optional
2 cans (6 ounces each) tomato paste
3 garlic cloves, minced
1 can (4 ounces) chopped green chilies
3/4 cup white vinegar
2 tablespoons lemon juice
2 teaspoons salt
1 teaspoon pepper
3 tablespoons cornstarch
1/3 cup cold water

Steps:

  • In a large Dutch oven or soup kettle, combine the first 12 ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Combine cornstarch and water until smooth; stir into salsa. Bring to a boil. Cook and stir for 2 minutes; cool.

1 red pepper
1/2 red onion

Steps:

  • Chop pineapple into small pieces to measure a total of 2 cups.
