2 large eggs
Kosher salt
Freshly ground black pepper
1 teaspoon olive oil
3 cups baby spinach
1-2 tablespoons grated Parmesan
Crushed red pepper flakes

Steps:

  • Whisk 2 large eggs in a small bowl; season with kosher salt and freshly ground black pepper and set aside. Heat 1 teaspoon olive oil in a medium nonstick skillet over medium heat. Add 3 cups baby spinach and cook, tossing, until wilted, about 1 minute. Add eggs; cook, stirring occasionally, until just set, about 1 minute. Stir in 1-2 tablespoons grated Parmesan. Sprinkle with crushed red pepper flakes.

I'm not sure if I came up with this on my own or if it's a common recipe but I had a craving for eggs with cheese and mushrooms last night, when I started to make it and get the ingredients, I discovered to my dismay that we were totally out of cheese which is quite unusal in my house, anyway, I sauted some sliced fresh muchrooms and chopped onions in butter, added some parmesan cheese, let it saute for about 15 minutes, then scrambled eggs and added it to the other ingredients....was pleasantly surprised, it came out very tasty and I will be making it again, DH an DS loved it.

3 large sliced mushrooms
1 tablespoon onion, chopped
1 tablespoon parmesan cheese
2 eggs
1 1/2 tablespoons butter or 1 1/2 tablespoons margarine
1 -2 tablespoon milk

Steps:

  • Heat saucepan, Add butter till it's melted.
  • Add mushrooms and onions, stir well.
  • Add Parmesan cheese.
  • Saute on low heat for about 15 minutes.
  • In a separate bowl, scramble egg and milk.
  • Add egg and milk mixture to other ingredients.
  • Scramble as you would if you were making plain scrambled eggs.
  • Cood over medium heat, stirring constantly --.
  • When eggs are not wet anymore, serve with toast or bagels -- .

butter
1 tbsp grated parmesan (or vegetarian alternative)
2 large free range eggs
cream
toasted ciabatta , to serve
a few torn basil leaves

Steps:

  • Cut a plum tomato into wedges and cook in the butter for about a minute. Stir 1 tbsp of grated Parmesan into the eggs with the cream then add to the pan and scramble (see Bill Granger's perfect scrambled eggs for how best to do this). Spoon the eggs onto a serving plate. Scatter over a few torn basil leaves, some extra Parmesan and serve with toasted ciabatta on the side.

I am constantly trying to find ways to make egg's taste less like eggs, since I have a very picky 7 year old eater who despises eggs. This recipe is very easy and uses things that I always have on hand so that's very important to me. My 'non-egg eater' even ate them!

4 large eggs
1/4 cup grated parmesan cheese
2 tablespoons half-and-half
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/4 teaspoon chives
1/8 teaspoon parsley
1/2 teaspoon I Can't Believe It's Not Butter® Spread
2 tablespoons Smart Balance butter spread
1/4 cup of shredded colby-monterey jack cheese

Steps:

  • Put Smart Balance in a small saute pan on medium heat to melt.
  • Put eggs, Parmesan, half-and-half, salt, pepper, chives, parsley and liquid butter into a blender (I use my magic bullet) or you can use a mixer, and mix shortly just until well blended (if you blend too long it will get foamy).
  • Pour mixture into your pan with the melted butter and start whisking with a rubber whisk. Whisk constantly or the eggs will start to stick to the pan and you will not get the same taste.
  • When the eggs are starting to get thicker add the shredded cheese and continue whisking until mixture is well cooked (you don't want them totally dry, just a bit moist).
  • Take out of pan and serve while still warm.

1 1/2 cups coarsely torn French bread
3 tablespoons olive oil
Fine sea salt
1 cup peeled fresh fava beans or frozen (double-peeled)
12 large eggs (preferably organic)
1/2 cup crème fraîche or sour cream
1/2 teaspoon fine sea salt
2 tablespoons (1/4 stick) butter
2 cups chopped leeks (white and pale green parts only; from 2 large)
Wedge of Parmesan cheese

Steps:

  • Preheat oven to 400°F. Place bread in medium bowl. Drizzle oil over, tossing to coat. Scatter bread pieces on small rimmed baking sheet. Sprinkle lightly with sea salt. Bake until bread is golden brown, stirring often, 10 to 12 minutes. Cool on sheet. DO AHEAD: Can be made 2 hours ahead. Let stand at room temperature. Rewarm 3 minutes in 350°F oven before using.
  • Cook fava beans in medium saucepan of boiling salted water until tender, about 14 minutes. Drain. Whisk eggs, crème fraîche, and 1/2 teaspoon sea salt in large bowl to blend.
  • Melt butter in heavy large skillet over low heat. Add leeks. Sauté until tender but not brown, about 10 minutes. Sprinkle lightly with sea salt. Mix in fava beans. Increase heat to medium-high. Add egg mixture. Stir with heatproof spatula until eggs are almost set but still creamy, 3 to 4 minutes. Season with pepper.
  • Transfer egg mixture to platter. Sprinkle with crispy breadcrumbs. Grate Parmesan cheese over and serve.

This was my dinner last night. Shirataki cooked along with eggs. First time I made it, and it was delicious.

1 (8 ounce) package tofu, shirataki (or without tofu. I used Angel Hair)
3 large eggs
fresh parmesan cheese, shredded
salt
pepper

Steps:

  • After preparing the Shirataki by running it under very hot water, Drying it off best I could, cutting it into smaller pieces with scissors, I turned it onto a plate, spread it out, covered with paper towel, and microwaved it for two minutes.
  • I then let it cool off a bit. While cooling, I mixed up three large eggs. I sprayed Organic Olive Oil Pam in the frying pan, added the Shirataki and eggs, and kept stirring to scramble the eggs into all of the noodle.
  • When done to how you like your scrambled eggs, plate it. I then added salt and pepper and sprinkled it with fresh shredded parmesan cheese.
  • Just delicious.

3 tablespoons extra virgin olive oil or 3 tablespoons butter
4 garlic cloves, sliced thickly
1/2 white onion, chopped medium
8 eggs
3/4 cup whipping cream
1 pinch salt
1 pinch black pepper
1/2 cup grated parmesan cheese
chopped parsley, for garnish
1 cup whipping cream
1/2 cup grated parmesan cheese

Steps:

  • FOR THE EGGS:.
  • In a non-stick sauté pan, cook the butter (or olive oil), garlic, and onion over medium heat. Cook until the onion is soft and the garlic is starting to brown, which will take about three to four minutes.
  • Transfer the onion and garlic to a large bowl. Add to this bowl the eggs, cream, salt, pepper, and parmesan cheese. Mix well.
  • Then add the egg mixture to the pan, stirring well, until the eggs are scrambled soft, which will take about three minutes using medium-high heat.
  • FOR THE SAUCE:.
  • In a small non-stick saucepan, cook the cream over medium heat until the cream is reduced by a third. This will require about five minutes. Add the grated parmesan cheese and stir well until the cheese is completely melted. The sauce is now ready to be used. Keep warm over low heat.
  • Serve the sauce spooned over the scrambled eggs and garnish with a sprinkling of chopped parsley.
