HOW TO MAKE A TUNA MELT
This is dedicated to all those chefs who tell you to never, ever mix fish and cheese together; and yet there they are, at the diner at 2:00 in the morning. And you know what they eat? Tuna melts. And the reason they do is because it is delicious.

Steps:
- Place tuna into a mixing bowl and lightly break apart with a fork. Add green onion, celery, capers, chile paste, and mayonnaise. Pinch small pieces from mozzarella cheese into the tuna salad and stir to mix. Season with salt and black pepper; refrigerate tuna salad until needed.
- Heat oven's broiler. Line a baking sheet with aluminum foil.
- Spread butter generously on both sides of French bread slices.
- Broil buttered bread until golden brown on top, 2 to 3 minutes. Flip bread slices and broil other side until toasted, 2 to 3 more minutes. Remove from oven and turn bread slices over on the baking sheet so the darkest sides are on the bottom.
- Gently spread tuna salad onto bread slices using 2 forks. Press the salad onto the bread and spread tuna all the way to the edges of the bread. Spread shredded sharp Cheddar over each sandwich. Dust tops with cayenne pepper.
- Place sandwiches under broiler and cook until cheese is melted and bubbling, 5 to 6 minutes.

- Preheat oven to 350°. In a bowl, combine the first six ingredients; set aside. Spread butter over cut sides of buns. Spread tuna mixture on bun bottoms; replace tops. Wrap in foil. , Bake until the cheese is melted, 15 minutes.

- Rub tuna with Cajun seasoning and set aside. In small bowl mix cheese and basil. Place tablespoons of the cheese mixture on a baking sheet lined with a silicon baking mat or wax paper sprayed with nonstick spray. Bake in a 350-degree oven for 6 minutes or until cheese is melted and golden. Set aside to cool. Heat oil in a medium pan and cook tuna 2 min per side for medium rare. Thinly slice tuna place it on top of the Parmesan crisps along with a dollop of apricot jam.

- Preheat oven to 350.
- Mix tuna, miracle whip, mustard, green onion, celery and spices.
- Let stand 5 minutes.
- Spread tuna mixture on 2 slices of bread, top with 1/4 cup of cheese each.
- Bake for 5 minutes, turn oven to broil and melt the cheese.

- 1. Mix up your tuna, pickle relish, horsey sauce, spices, onion and green onion, lime or lemon juice....taste and see if you need more salt and pepper. ---- I wanted this spicy so I added 4 tbsp of horsey at least. This is all estimate cause I made it for the first time tonight. I LOVE horseradish! It's good for you too.
- 2. Butter your bread and then sprinkle on your Parmesan and pat it down into the butter. Assemble your sandwich with a little sharp cheddar first, then your tuna mix and then more cheddar...top with other slice of bread.
- 3. I cooked this up in my Ninja Cooking System but it could easily be pan fried or on the griddle too. The Parmesan give this an incredible crunchy crust...so good.
- 4. Cook 3 - 5 minutes on each side with a medium heat. If you want add a little oil to pan if you think that the butter isn't enough.
- 5. Slice up and serve with a yummy salad or some yummy fresh veggies, salad, chips or dill pickles....just delish.
