PARMESAN CRUSTED CHICKEN
Parmesan crusted chicken is easy enough to make for a busy weeknight but also special enough for company.

Steps:
- Set up three large shallow bowls in an assembly line. Put the flour in the first bowl; beat the eggs in the second bowl; and mix the bread crumbs, Parmesan cheese, salt, pepper, and chopped fresh herbs in the third bowl.
- Season chicken breasts with salt and pepper. Dredge the first chicken breast in the flour and shake off the excess until just a light coating remains. Next, dip the chicken in the egg mixture and turn to coat evenly, letting any excess egg drip off. Finally, dredge the chicken in the bread crumb mixture, turning a few times to coat well. Set breaded chicken on a plate and repeat until all of the chicken breasts are breaded.
- Heat the oil in a large sauté pan over medium heat. When the oil is hot, add the chicken breasts to the pan and cook for 2 to 3 minutes until the first side is golden brown. Flip and continue cooking until done, 2 to 3 minutes longer. Serve immediately with lemon wedges.
- Note: If chicken breasts are large (8 or more ounces), it's best to cut them in half once they are pounded out. Alternatively, you can cut them in half horizontally before pounding.

PARMESAN CRUSTED CHICKEN WITH WHITE BEAN PUREE AND TOMATO RELISH

- For Tomato Relish, Put all ingredients in a small bowl and season with salt and pepper. set aside to allow flavors to combine. To make puree Heat olive oil on medium heat in a medium pan. Add onion and sautee about 5 minutes or until tender. Add garlic and cook another 2 minutes. Add white beans and stock to pan. Simmer for 5 minutes. Transfer bean mixture to food processor and pulse until mixture is smooth and creamy. For Chicken, Place beaten egg in a shallow dish and set aside. In another dish, mix the bread crumbs and grated parmesan cheese. Season chicken breast with salt and pepper. Heat 1/2 inch olive oil in a large skillet. Dredge chicken in egg. shake off excess egg and coat chicken in parmesan and bread crumb chicken. Place chicken in oil and cook approximately 3 to 4 minutes on each side depending on thickness of chicken breast. Drain on paper towel. To assemble, spoon 2 heaping tablespoons of white bean puree on plates, top with chicken breast and garnish with tomato relish.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt the butter with the garlic in a saucepan over medium heat. When the butter starts to bubble, remove from the heat and allow to cool slightly. Stir the breadcrumbs together with the Parmesan cheese, thyme, basil, oregano, pepper, and salt in a bowl. Dip the chicken breasts in the butter, then press into the seasoned bread crumbs. - In a food processor, pulse bread, Parmesan, parsley, and 1/4 teaspoon each salt and pepper until fine crumbs form. Transfer mixture to one shallow bowl; place egg in another.
- One at a time, dip each chicken cutlet into egg; let excess drip off, then dip into breadcrumb mixture. Press on crumbs firmly.
- Heat 1 tablespoon oil in a large nonstick skillet over medium heat. Cook cutlets, two at a time, adding remaining tablespoon oil for second batch, until cooked through, 2 to 3 minutes per side.
- Wipe skillet clean. Add lemon juice and 1/4 cup water; cook over low until steaming, 1 minute. Add mustard. Remove pan from heat, and stir in butter until combined. Serve cutlets with sauce.

- Preheat oven to 375 degrees F (190 degrees C).
- Pour beaten eggs into a shallow dish or bowl. In another shallow dish or bowl, mix together the grated Parmesan cheese and bread crumbs. Dip chicken breasts into beaten egg, then into bread crumb mixture to coat.
