1 cup plus 2 tablespoons shredded Parmesan cheese
2 tablespoons finely chopped walnuts
SALAD:
4 cups fresh arugula or spring mix salad greens
1/2 cup green grapes, halved
2 tablespoons chopped walnuts
2 tablespoons olive oil
1 tablespoon raspberry vinegar
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Heat a small nonstick skillet over medium-high heat. Sprinkle 3 tablespoons cheese and 1 teaspoon walnuts over the bottom of the skillet. Cook for 1-2 minutes or until edges are golden brown and cheese is bubbly. Remove from the heat and let stand for 30 seconds. , Using a spatula, carefully remove cheese mixture and immediately drape over an inverted glass with a 2-in.-diameter bottom; cool completely. Repeat with remaining cheese and walnuts, forming five more baskets., For salad, in a large bowl, combine the arugula, grapes and walnuts. Whisk the oil, vinegar, salt and pepper. Pour over arugula mixture; toss to coat. Place 1/2 cup salad in each basket.

These little baskets make a neat presentation for salads, according to the magazine I got the recipe from (Cuisine at Home), but I think you could put other things in there too. I hope some of you post your ideas for these!

2 cups parmesan cheese, shredded
cooking spray

Steps:

  • Sprinkle Parmesan into a large circle in 10 inch non-stick skillet.
  • When cheese is slightly golden underneath, carefully remove it with a spatula.
  • Quickly drape over a drinking glass, golden side up, and press to form the bowl shape.
  • Let cool.
  • These can sit for several hours at room temperature.

8 oz freshly grated parmesan-reggiano, or asiago cheese
1/4 tsp black pepper

Steps:

  • Preheat oven to 350F. Place oven rack in middle. Line a lightly greased baking sheet with parchment paper or a non stick liner such as a silpat. Spoon level tablespoon size mounds 4 inches apart on baking sheet; spread or pat mounds into 3 1/2" ovals in an even thickness with your fingers. Bake approximately 4 to 5 minutes or until cheese is melted and any bubbles that form turn into a crunchy light golden crust. Remove from oven and let crisps cool slighly, approx 1 minute or until still warm and pliable. While still warm, press each of these rounds over an upturned egg carton cup, shot glass, wine cork, orminiature muffin tin to form tulip shapes. Remove from mold when cool. Petite Parmesan Baskets With Goat Cheese Mousse image

This is a very flavorful appetizer, the presentation is beautiful to behold. Can be made ahead. This is an adopted recipe!

8 ounces parmigiano-reggiano cheese, coarsely grated
6 ounces goat cheese
1/4 cup whipping cream
1/2 teaspoon fresh thyme, chopped fine
2 1/2 teaspoons fresh flat-leaf Italian parsley, chopped fine
kosher salt
freshly cracked black peppercorns

Steps:

  • PARMESAN BASKETS:.
  • Preheat oven to 325° degrees F.
  • Place a mounded tablespoon of grated cheese onto a non-stick cookie sheet or Silpat; pat gently into a 2-inch circle.
  • Repeat with remaining cheese, allowing 1 - 2 inches between circles. Bake one cookie sheet at a time in the oven for 4 to 5 minutes or until bubbly and lightly golden.
  • Cool on cookie sheet about 1 minute. Remove with a spatula and gently drape over inverted 1-3/4-inch muffin tins or press each one into the hollow of a clean empty egg carton.
  • They may be made ahead of time and covered at room temperature.
  • GOAT CHEESE MOUSSE:.
  • Blend all ingredients together until smooth. This may be refrigerated up to 2 days before serving.
  • To serve, carefully spoon the mousse into the parmesan baskets or fill a pastry bag with the mousse and pipe it into the baskets.
  • Garnish with minced thyme.

8 ounces freshly grated Parmesan cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place about 2 teaspoons of Parmesan cheese onto a silicone sheet or baking sheet lined with parchment paper, and gently spread the cheese out into a circle about 2 inches in diameter. Spread more circles of cheese onto the baking sheet, keeping them at least 1 inch apart.
  • Bake in the preheated oven until golden brown, 4 to 5 minutes. Watch carefully to avoid burning. Remove from the oven, and let cool on the sheets until warm; while still warm, drape the wafers over a small bowl or other container. Let cool. Store at room temperature in an airtight container.

BASKETS:
1 cup - + 2 tbl. shredded parmesan cheese
2 Tbl. - finely chopped pecans
SALAD:
4 cups - fresh mixed baby lettuces and spring greens
1 cup - halved red and/or green grapes, seedless
2/3 Tbl. - chopped pecans
5-6 Tbl. - raspberry vinaigrette dressing, or to taste
1 - apple, thinly sliced or diced
1 - pear, thinly sliced or diced
1/4 tsp. - salt, or to taste
1/8 tsp. - pepper, or to taste
5-6 tsp. - shredded parmesan cheese for garnish

Steps:

  • Heat a small non-stick frying pan over medium-high heat. Sprinkle 3 Tbl. cheese and 1 teaspoons chopped pecans over the bottom of the frying pan in the center, but a thin layer. Cook for 1-2 minutes or til the edges are golden brown and cheese is bubbly. Lift out of pan with spatula, invert hot cheese disk over inverted drinking glass or small custard cups. Cool completely. Repeat making 5-6 baskets. For salad: Just toss ingredients in large bowl, drizzle with salad dressing and season with S&P if needed or desired. Toss to coat. Pile salad into cooled, firm parmesan baskets, sprinkle each with 1 teaspoon shredded parmesan cheese and serve immediately. *Baskets can be made ahead and stored between sheets of waxed paper in airtight container at room temperature for up to a week. And mini ones can be made for appies!
