Sooo good !! I could not add 1 package of Knorr Parma Rosa sauce mix to the ingredients but that's what we used as Rose sauce.

3 Italian sausages
2 garlic cloves, crushed
1 teaspoon basil
1 tablespoon tomato paste
1 tablespoon olive oil

Steps:

  • Remove case from the sausages before cooking so to make smaller pieces.
  • Brown sausages et drain liquid.
  • Add all other ingredients.
  • Prepare Parma Rosa sauce and add sausages.
  • Serve on pasta or rice.

1/2 lb bulk sweet Italian sausage
1 large onion, sliced thinly
1 pepper, thinly sliced, any color
2 garlic cloves, minced
1 (1 1/3 ounce) package Knorr parma rosa sauce mix
1 1/2 cups milk
8 ounces pasta, cooked and well drained
freshly grated parmesan cheese
chopped fresh parsley
fresh ground black pepper

Steps:

  • In a large skillet, brown sausage, breaking it up well for approximately 5 minutes.
  • Add onion and red pepper, cooking an additional 4 minutes or until vegetables are tender.
  • Add garlic and cook 1 minute more.
  • Blend sauce mix and milk.
  • Add to meat and vegetable mixture, bringing to a boil, stirring constantly.
  • Reduce heat to low and simmer for 3 minutes, while continuing to stir.
  • In a large serving bowl, toss hot pasta with the sauce and your desired amount of cheese. Garnish with parsley and freshly ground pepper.

2 tablespoons extra-virgin olive oil
12 fresh Italian sausages, hot or sweet (about 1- 3/4 to 2 pounds)
1 large Spanish onion, cut in halved, and cut into 1/4 inch slices
1 tablespoon tomato paste
2 large red peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
2 large yellow peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
2 poblano peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
4 large cloves garlic, minced
Kosher salt and freshly ground black pepper
1 tablespoon balsamic vinegar
6 crusty sandwich rolls, toasted

Steps:

  • Heat the oil in a large skillet over medium high heat. Add the sausages and cook until well browned on all sides, about 10 minutes. Remove the sausages from the pan and set aside. Pour off all but 1 tablespoon of oil. Add the onions and cook, stirring, until golden, about 5 minutes. Stir in the tomato paste and cook for 1 minute more. Add the peppers, garlic, and season with salt and pepper to taste. Cook until the peppers are wilted, about 5 minutes. Return the sausages to the pan, cover, and cook over medium heat, stirring frequently, until the sausages are cooked through, about 12 minutes more. Stir in the vinegar. Divide the sausage and peppers evenly amongst the crusty rolls and serve.

1 medium green bell pepper, chopped
1 medium red bell pepper, chopped
1 cup chopped onion
2 cloves garlic, minced
1 1/4 cups light cream
1/4 cup snipped fresh parsley
1 teaspoon dried marjoram, crushed
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup grated parmesan cheese
10 ounces cooked hot pasta, your choice

Steps:

  • In large skillet, cook sausage, peppers, onion and garlic until meat is browned and vegetables are tender.
  • Drain off fat, if necessary.
  • Stir in cream, parsley, marjoram, salt and pepper.
  • Bring to boiling, reduce heat.

This is a variation of my Grandmother's sausage and peppers recipe which my family affectionally calls "Junk". This is great served with a loaf of Italian bread.

1 -2 lb Italian sausage (hot or sweet, a good alternative is turkey sausage)
3 -4 bell peppers (any color or a combination of colors)
1 lb mushroom
2 onions
4 potatoes
3 garlic cloves
1/2 cup olive oil (vary amount based on preference)
3 tablespoons balsamic vinegar
fresh oregano or dried oregano
fresh parsley or dried parsley
fresh basil or dried basil

Steps:

  • Cut up the italian sausage in 1 inch pieces.
  • Mince garlic.
  • Wash and peel potatoes.
  • Cut up the peppers, onions, mushrooms and potatoes in large chunks.
  • Mix together the olive oil, balsamic vinegar and herbs.
  • Combine everything in a roasting pan or large casserole dish.
  • Stir well to coat the vegetables and sausage.
  • Bake uncovered at 350 for at least an hour.

1 onion, cut into small wedges
1 cup water

  • In large skillet, brown sausage in oil over med high heat.
  • Remove with slotted spoon and keep warm.
  • In drippings, saute peppers and onion until crisp tender.
  • In a bowl, combine the water and one soup mix envelope.
  • Add soup mixture, hot pepper sauce and sausage to the vegetables.
  • Reduce heat.
  • Cover and simmer for 5 minutes or until thickened.
  • Serve over hot, cooked rice.
