These baked pita chips make a lovely accompaniment to any dip or spread.

12 pita bread pockets
½ cup olive oil
½ teaspoon ground black pepper
1 teaspoon garlic salt
½ teaspoon dried basil
1 teaspoon dried chervil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut each pita bread into 8 triangles. Place triangles on lined cookie sheet.
  • In a small bowl, combine the oil, pepper, salt, basil and chervil. Brush each triangle with oil mixture.
  • Bake in the preheated oven for about 7 minutes, or until lightly browned and crispy. Watch carefully, as they tend to burn easily!

Steps:

  • Preheat oven to 400 degrees. Spread pita wedges on baking sheet and brush with olive oil. Sprinkle with paprika and bake for 5 to 7 minutes until crisp.

Extra-virgin olive oil, for drizzling
2 tablespoons kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
Three 6-inch pita bread pockets, cut into small wedges

Steps:

  • Preheat the oven to 375 degrees F.
  • Drizzle a thin layer of olive oil on a baking sheet. Stir together the salt, cumin and paprika in a small bowl until combined. Sprinkle a little of the spice mixture over the surface of the oiled baking sheet.
  • Spread the pita wedges evenly on the baking sheet and rub them in the oil to coat the undersides. Drizzle more oil over the tops of the pita, and season lightly with the spice mixture.
  • Bake until light golden brown and crisp, 7 to 10 minutes. Serve warm or at room temperature.

1/4 cup vegetable oil
1/4 teaspoon salt
1/4 teaspoon paprika
3 pita bread, 7 inches split in half

Steps:

  • In a small bowl, mix oil, salt and paprika. Brush the rough sides of the pita with the oil mixture. Cut each circle in 8 points. Put the pita points side by side, oiled side on top, on a large baking sheet. Cook in the center of a preheated oven of 350 F for about 12 minutes or until pita chips are golden and crispy. Put the pita chips on a rack and let cool. (You can prepare the pita chips in advance and put them in an hermetic container. They will be good up to 3 days at room temperature.).
