HOT DOGS WITH HOMEMADE TOMATO RELISH
I haven't tried this recipe yet from Publix Supermarkets but it looks really good, especially for summertime picnics. Bratwurst can be substituted for the hot dogs, if desired.

- For the tomato relish, fold a 36x18-inch piece of heavy foil in half to make an 18x18-inch square. In a medium bowl combine 2 cups of the tomatoes, the onion, garlic, oregano, mustard, water, salt, brown sugar and pepper. Place mixture in center of the foil. Bring up two opposite edges of the foil; seal with a double fold. Fold the remaining edges to enclose the mixture, leaving space for steam to build.
- For a charcoal grill, place the foil packet on a grill rack directly over medium coals. Grill for 10 minutes; turn packet. Grill about 10 minutes more or until onion is tender. (For a gas grill, preheat grill. Reduce heat to medium. Place foil packet on grill rack directly over heat. Cover and grill as above.).
- Meanwhile, place hot dogs on grill rack around foil packet; grill for 5 to 7 minutes or until heated through, turning occasionally.
- Carefully open rellish packet and stir remaining 1 cut tomato halves and the grapes into hot relish mixture. Place hot dogs in toasted buns; serve tomato relish with the hot dogs.
THE BEST RELISH I'VE EVER HAD
This is the relish recipe I remember from my childhood. Light green in color, and unbelievably good on hot dogs, you won't be disappointed. It's an easy recipe for beginners, even if you have never canned a thing in your life.

- Grate the cucumbers and onions into a large bowl using the large holes of a box grater. Sprinkle the pickling salt over the top. Cover tightly, and allow to rest at room temperature overnight.
- Squeeze as much liquid as possible out of the cucumber mixture; set aside. Whisk together the sugar, flour, turmeric, ginger, and celery seed. Heat the vinegar and water in a large, heavy pot over medium-high heat. Whisk in the sugar mixture until smooth. Stir in the cucumber mixture. Bring to a boil and cook, stirring frequently, until thickened, about 15 minutes.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the relish into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process pint jars for 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

This is a great salsa. I use this to top hot dogs, grilled brats and sausages. Great also on chicken or fish. This takes a hot dog and makes it GOURMET!

CHICAGO-STYLE HOT DOG WITH HOMEMADE RELISH

- Set up a large pot with a steamer insert and steam the franks until warm, about 5 minutes. When the franks are almost done, place the buns on top of the franks to steam, 1 to 2 minutes. Place the franks in the buns and top each with some of the onions, 2 peppers, some Homemade Bread and Butter Relish and slather with mustard. To serve, top the franks with a handful of Hand Cut Fries with Celery Salt, wrap each frank in foil and let steam, 2 to 3 minutes, before eating. Eat on the towel-lined trunk of a car.
- Combine the pickles, peppers and sugar in a bowl and mix well. Serve.
- Fill a 6-quart heavy pot or Dutch oven two-thirds of the way full with oil. Heat the oil over medium-high heat until a deep-fat thermometer registers 375 degrees F.
- Cut the potatoes lengthwise into 1/4-inch-thick sticks. Fry the potatoes in batches, until golden brown, 8 minutes per batch. Transfer the potatoes with a slotted spoon to a paper-towel-lined baking sheet. Sprinkle with celery salt and serve immediately.
CABBAGE DOGS (HOT DOGS)
I "invented" this one just today (2-18-10) when I got really hungry for something that would be both hearty and easy to prepare. It sort of looks like the devil in the skillet but the eye appeal is much better on the bun and it tastes great. Use a decent brand of weiners for this -- I use Oscar Meyer bun-length weiners which I buy only when they are on sale at two dollars a package (of eight weiners) instead of the normal price of four -- they freeze pretty good. These dogs are mildly spicy and sweet. Serve this dish either for lunch or for a quick informal supper since the meat, the vegetables, and the bread are all included in this entree.

- In a large no-stick skillet, over medium heat, pour in the olive oil and after it begins to shimmer (about 2 minutes), add all other ingredients except for the water. Carefully blend the ingredients with a large spoon.
- Saute for five minutes uncopvered. Reduce heat to medium-low, cover, and allow the blend to continue cooking until the cabbage and onions are tender. Stir occassionally. (Five minutes after the skillet is first covered, add the water and continue cooking until the vegetables tenderize and until most of the water evaporates -- you can crack the lid just a bit to make this happen faster.)
- The total cooking time covered is about 10-15 minutes.
- Place weiner pieces on a bun and top with the cooked cabbage and onions. Add a little mustard to the hot dog if you wish, and serve.
- NOTE: You can actually double or triple the number of hot dog pieces in this mix if you're feeding a crowd. There will be plenty of cabbage for the toppings. Also adjust the hot pepper sauce, adding more or less, to meet your family's personal tastes. Using Tabasco instead of Frank's brand pepper sauce will make it twice as hot.

HOT DOG RELISH
I have tried a lot of relishes and this one is one that has been my all time favorite. Cucumbers, apples, cabbage, peppers and cauliflower.

Steps:
- In a food processor or blender, add all prepared vegetables. You want your vegetables to be very fine.
- In a large stainless steel bowl sprinkle salt over vegetables, top with water, let soak for 4 hours.
- Drain well, using a large strainer and the back of a large spoon, press out as much liquid as possible.
- Transfer to large stainless steel pot.
- In bowl mix together dry mustard, flour, celery seed, sugar, turmeric, mustard seed and vinegar, mix well. Add to vegetables.
- Cook on medium heat, stirring often, for 15 minutes.
- Process pints.

FLO'S SPECIAL HOT DOG RELISH
Flo's Hot Dogs, is located on Rte. 1 in the seacoast area of Maine, in Capeneddick. This little shack has "THE BEST" hot dogs in the world, and has been serving these hot dogs for years... Standing room only inside where the line goes out the door from the time they open, till the time they close... People order 5-6 hot dogs a piece, if that says anything!!! They serve their hot dogs with this sweet and slightly hot relish along with mustard, or with mayonnaise, or with "The Works" which is all three plus celery salt over the top. I have had the pleasure of eating a few of these dogs in my time, and all I can say is MMM m mmm MMMMMM M! The secret to these FABULOUS Hot Dogs is the relish or "sauce" as some call it... - Put onions, and crushed red peppers in food processor or blender. Chop fine.
- Put all ingredients in a big kettle, and heat until it gets hot, stirring as you go.
- Simmer for 8 hours.
- Put in glass jars, and store in fridge, or process in canning jars, following canning procedures.
