6 large potatoes, cooked & peeled
2 tablespoons olive oil
1 medium onion, chopped
2 large tomatoes, chopped
salt
pepper, to taste
1/2 cup cream
1 cup muenster cheese, grated

Steps:

  • Saute onion in oil until soft, about 10 minutes.
  • Add tomatoes, salt and pepper. Saute 5 minutes.
  • Stir in cream & cheese until cheese begins to melt.
  • Arrange potatoes on serving platter and top with sauce.
  • Enjoy!
  • Serves 6.

6 medium red potatoes, scrubbed but not peeled
1 tablespoon vegetable oil
1 medium white onion, thinly sliced
1 tomatoes, peeled, seeded, chopped
1 teaspoon paprika
1/4 lb queso blanco, crumbled
salt & freshly ground black pepper

Steps:

  • Boil the whole potatoes in lightly salted water for about twenty minutes.
  • Meanwhile, heat the oil in a skillet over medium high heat and saute the onion and tomato, stirring often, for about 15 minutes or until the onion is very soft.
  • Season with paprika and pepper.
  • Remove from heat; add cheese, stir well.
  • Halve the potatoes and serve with the onion/cheese sauce.

1 lb red potatoes
2 medium tomatoes
1 cup milk
1 bunch fresh cilantro
1 bunch scallion
1/2 cup queso blanco
salt

Steps:

  • Peel the potatoes partially leaving some skin on. Boil the potatoes until tender.
  • Chop onions, cilantro and tomato finely; saute. Add the milk, cheese, and salt to taste. Turn heat to low, and let it simmer until thickened.
  • Serve the potatoes on a plate, topped with sauce.

1 chicken bouillon cube
salt and freshly ground black pepper
1 tablespoon olive oil
1/2 cup sweet onions or 1/2 cup green onion, chopped fine
2 tomatoes, chopped fine
1/4 cup fresh parsley or 1/4 cup fresh cilantro, chopped
1 teaspoon ground cumin
sazon goya con culantro y achiote (optional)
1/4 cup queso fresco (to taste)
sliced green onion, for garnish

Steps:

  • Place potatoes in a saucepan, cover with water, drop in chicken bouillon, and a little salt; boil until tender.
  • Meanwhile, heat oil in a skillet, over medium heat, and cook onions, tomatoes, and parsley until onions are softened; season with cumin, sazon, salt and pepper.
  • Place cooked potatoes into a serving bowl, pour tomato sauce over, covering potatoes, crumble cheese over top, and garnish with green onions, if desired.
