Plump tomatoes are dredged in flour, and Japenese breadcrumbs then baked until crisp.

2 large green tomatoes
3 tablespoons flour
3 egg whites
1 cup panko
1/2 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 cup mayo
1/4 cup yogurt
1 tablespoon ranch seasoning
1 tablespoon chipotle pepper in adobo

Steps:

  • Preheat the oven to 400 degrees.
  • Slice green tomatoes into even slices.
  • Place flour in a bowl. Lightly beat egg whites in a second bowl and place panko, paprika, cumin and salt in a third bowl.
  • Delicately press tomatoes into flour, then dredge in egg whites and finally cover in panko mixture. Place slices on a baking sheet that has been covered in non-stick spray.
  • Bake for 20 minutes, turning once until tomatoes are golden.
  • Meanwhile, combine dip ingredients in a bowl, stir.

2 tablespoons creole seasoning
1 cup buttermilk
1/2 cup milk
5 large green tomatoes
1 cup mayonnaise
1 tablespoon creole mustard
1 tablespoon horseradish
1 teaspoon minced jalapeno

Steps:

  • Combine flour and Creole seasoning in a large bag.
  • Combine buttermilk and milk in a bowl.
  • Add vegetable oil to a large heavy skillet to a dept of 1 inch.
  • Dredge tomato slices in flour mixture, dip in milk mixture and dredge again in flour mixture.
  • Fry 1 minute on each side and drain on a paper towel.
  • To make sauce, mix all ingredients together for dipping.

3/4 cup all-purpose flour
3 eggs, lightly beaten
2 cups panko bread crumbs
5 medium green tomatoes, cut into 1/4-inch slices
Oil for deep-fat frying
Salt

Steps:

  • In three separate shallow bowls, place the flour, eggs and bread crumbs. Dip tomatoes in flour, then in eggs; coat with bread crumbs., In an electric skillet or deep-fat fryer, heat oil to 375°. Fry tomatoes, a few at a time, for 2-3 minutes on each side or until golden brown. Drain on paper towels. Sprinkle with salt. Serve immediately.
