Strawberry Pancakes With Mamma Callie's Syrup image

Number Of Ingredients 12

1 cup packed light brown sugar
Small pinch of salt
2 cups all-purpose flour
3 tablespoons granulated sugar
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
2 cups well-shaken buttermilk
2 large eggs
4 tablespoons unsalted butter, melted and cooled, plus more for greasing
Vegetable oil, for greasing
1 cup sliced strawberries

Steps:

  • Make the syrup: Add 3/4 cup water, the brown sugar and salt to a medium saucepan over medium heat. Bring the mixture to a simmer and stir until the sugar dissolves. Let simmer for 25 to 30 minutes, stirring occasionally. Let cool before serving.
  • Make the pancakes: Preheat the oven to 200 degrees F. Whisk the flour, granulated sugar, salt, baking powder and baking soda in a large bowl. Add the buttermilk, eggs and cooled melted butter to a second bowl and whisk to combine.
  • Make a well in the center of the dry ingredients and add the wet mixture. Stir with a rubber spatula until just combined. Do not over mix or you'll end up with tough and chewy pancakes!
  • Heat a large electric griddle or nonstick frying pan over medium heat. Add a few drops of vegetable oil and a pat of butter. Once the butter melts, wipe the skillet with a paper towel. Ladle about 1/4 cup batter onto the griddle for each pancake. Place a small handful of sliced strawberries on top of the pancakes. Cook until the bubbles begin to burst on the surface, about 3 minutes, then flip and cook until the second side is a nice golden brown, about 2 more minutes. Repeat with the remaining batter; put the finished pancakes on a sheet tray and keep warm in the oven as you finish.
  • Arrange the pancakes on individual plates and serve with the syrup.

3 ½ teaspoons baking powder
½ teaspoon salt
1 tablespoon sugar
1 ¼ cups milk
1 egg
3 tablespoons butter, melted
1 cup diced strawberries, fresh or frozen (defrosted if using frozen)

Steps:

  • In a large bowl, sift together the flour, baking powder, salt, and sugar.
  • Make a well in the middle and pour in the milk, egg, and butter. Mix with a whisk or fork until smooth.
  • Add the strawberries to the batter, and using a spatula, gently fold them into the batter until just combined.
  • Heat a non-stick griddle or large pan over medium-high heat, I set my griddle at 300-350 F. Grease or spray your surface.
  • Pour or scoop ¼ cup of strawberry batter for each pancake. Wait until bubbles form to flip. Continue cooking for an additional minute to cook through, flip and brown on the other side. Remove from the pan or griddle and serve.

6 ounces cream cheese, softened
1 tablespoon sugar
1/2 cup crushed strawberries
PANCAKES:
2 cups all-purpose flour
1/4 cup sugar
4 teaspoons baking powder
1/2 teaspoon salt
2 large eggs, room temperature
1-1/2 cups 2% milk
1 cup sour cream
1/3 cup butter, melted
1 cup chopped fresh strawberries
SAUCE:
3 cups crushed strawberries
1/4 cup seedless strawberry jam
1/4 cup water

Steps:

  • In a small bowl, beat cream cheese and sugar until smooth; stir in strawberries. Chill until serving., In a large bowl, combine the flour, sugar, baking powder and salt. Combine the eggs, milk, sour cream and butter. Stir into dry ingredients just until moistened. Fold in strawberries., Pour batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top. Cook until the second side is golden brown., For sauce, in a small saucepan, combine the strawberries, jam and water; heat through. Spread cream cheese mixture over pancakes; top with sauce. 32 ounces buttermilk pancake mix
1 cup strawberry
4 cups strawberries
1 cup water
1 cup sugar
2 large fresh strawberries
1 tablespoon Cool Whip

  • poor the water and strawberries in a deep big pan and bring to a boil.

3 cups sliced strawberries
1/4 cup sugar
2 cups Original Bisquick™ mix
1 cup milk
2 tablespoons sugar
1 teaspoon vanilla
2 eggs
1 1/2 cups whipping (heavy) cream, whipped

Steps:

  • Mix strawberries and 1/4 cup sugar; set aside. Heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease with cooking spray, vegetable oil or shortening. (Surface is ready when a few drops of water sprinkled on it dance and disappear.)
  • Stir Bisquick, milk, 2 tablespoons sugar, the vanilla and eggs until blended. Pour by slightly less than 1/4 cupfuls onto hot griddle.

Steps:

  • PANCAKES: Mix dry ingredients in a bowl and mix wet ingredients in another bowl.
  • Make a well in the dry ingredients, pour in the wet and stir until it is well mixed
  • Stir until completely smooth
  • Put approximately a tablespoon of butter into a non stick pan. Ladle in to the pan a nice big pancake.
  • Let cook a few minutes till you see bubbles that do not close up, then flip.
  • SWEET CREAM CHEESE: Mix powder sugar, vanilla and cream well, until blended and set aside.
  • SYRUP: put all in sauce or saute pan, let cook until sugar is melted and no longer grainy and slightly syrupy looking. That's it you have syrup!
  • Then Spread the Sweet Cream Cheese over the pancake then top with Strawberry Syrup.
