HIDDEN SURPRISE MUFFINS

Steps:
- Grease the bottom ONLY of a 12-cup muffin tin.
- Preheat the oven to 400 degrees F.
- In a medium mixing bowl, stir together the flour, sugar, baking powder and salt.
- In a second medium sized bowl, combine the egg, milk, vanilla and vegetable oil.
- Make a "well" in the dry ingredients and add the wet ingredients to the well.
- Stir until the mixture is moist.
- Don't overmix - the batter should be lumpy.
- Fill the muffin tins half full.
- Now, here is the surprise - drop a teaspoon of jelly into the center of each muffin.
- Add more batter on top of the jelly so that each cup is 2/3 full.
- Bake for 20-25 minutes, or until golden brown.
- When the muffins are baked there will be a jelly surprise in the middle.
PUFFY SURPRISE OVEN PANCAKES
These popover-like pancakes have a delectable fruit topping!Serve with your favorite fresh fruit.Get these on the table while they still have their puff!

Steps:
- Heat oven to 425*.
- In medium bowl, beat eggs slightly.
- Add flour and milk; beat with rotary beater until combined.
- In oven, melt 1 tbls.
- margarine in each of two 9-inch glass pie plates; spread to cover bottom.
- Pour batter over margarine in pie plates.
- Bake at 425* for 10 to 15 minutes or until golden brown.
- (Pancakes will form a well in the center and edges will puff up.) Spoon fruit into center of pancakes.
- Sprinkle with brown sugar and top with sour cream.
- Serve immediately.
- Yield: 4 servings.
PANCAKE MUFFIN SURPRISES
My kids love bananas and maple syrup together. These muffins are one of their favorites. Never fails to get squeals of delight from them.

Steps:
- In a large mixing bowl, add the Bisquick, milk, eggs, and 1/2 cup maple syrup; stir to combine.
- Pour approximately 1/4 cup of batter into 12 muffin cups that have been sprayed with non-stick cooking spray.
- Put a piece of banana in the center of each.
- Bake in a 350° oven for 20-25 minutes or until pick comes out clean.
- Serve warm with a little maple syrup drizzled on top.
